CHERRY TOMATOES WITH BUTTERMILK BLUE CHEESE DRESSING



Cherry Tomatoes with Buttermilk Blue Cheese Dressing image

1/2 cup crumbled blue cheese
1/2 cup buttermilk
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
Kosher salt and freshly ground black pepper
1 bunch fresh chives, minced
2 pints yellow cherry tomatoes, or red grape tomatoes, or both

Steps:

  • To prepare the dressing, place the blue cheese, buttermilk, and olive oil in a medium bowl and stir together with a fork, mashing a little to break up the cheese. Season with the lemon juice, salt, pepper, and chives. Set aside.
  • Wash the tomatoes, and pat dry with a paper towel. Slice each tomato in half lengthwise and season with a pinch of salt. Add the tomatoes to the dressing mixture and toss to combine then garnish with freshly ground pepper, to taste.

12 sandwich-size slices soppressata, sliced in half
24 small fresh basil leaves or 12 large leaves, sliced in half from tip to stem
1/3 pound blue cheese or gorgonzola, cut into 24 small cubes
24 sweet piquante peppers, such as Peppadews®

Steps:

  • Lay a slice of soppressata on a cutting board. Place a basil leaf in the center with the curved part of the leaf aligned with the curved part of the soppressata. Place a cube of blue cheese on top of the basil. Roll up the soppressata around the basil and cheese and stuff into a pepper. Repeat with the remaining ingredients.

1 pint grape tomatoes
Kosher salt and freshly cracked black pepper
2 ounces cream cheese, at room temperature
1/2 cup blue cheese
2 tablespoons finely chopped fresh chives
4 slices crispy cooked bacon, finely chopped
1 tablespoon hot honey (or 1 tablespoon honey mixed with a dash of hot sauce)

Steps:

  • Slice the top third (stem side) off each tomato. Cut a small slice off each bottom so that the tomatoes are flat and able to stand up. Using a melon baller or small spoon, remove the inside of each tomato to hollow out the center. Place the tomatoes on a plate or platter. Sprinkle the tomatoes with 1/4 teaspoon salt.
  • Mash the cream cheese in a bowl with a rubber spatula until it is soft and malleable. Gently fold in the blue cheese, being careful not to overmix and break the blue clumps. Season with pepper. Use two small spoons to fill the tomatoes with the blue cheese mixture. (How much will depend on the size of the tomato; small tomatoes should get about 1 teaspoon of the mixture. You can also transfer the mixture to a pastry bag or resealable plastic bag with the corner cut off and pipe the cheese mixture into each tomato.)
  • Toss the chives and bacon together in a small bowl. Top each tomato with the mixture. Drizzle hot honey over the entire plate. Serve.

8 (1/2-inch) cubes pepperoncino, crushed red pepper Italian table cheese, available in specialty cheese case, Asiago or pepato may be substituted
4 slices cappicola (hot Italian ham) cut in half
8 hot cherry peppers, tops cut off and seeds removed
2 slices Prosciutto di Parma
3 ounces herb and garlic spreadable cheese or goat cheese
1 rib celery, cut into 1/2-inch pieces
8 sweet peppers, tops removed and seeded

Steps:

  • For hot peppers: Wrap cheese cubes in half of one slice of hot ham. Stuff ham wrapped cheese cubes inside the cherry peppers and reset caps with a toothpick.
  • For sweet cherry peppers: Spread each slice of prosciutto with a thin layer of herb and garlic cheese. Cut each slice of ham in four pieces, then wrap a piece of celery inside each strip of ham. Stuff the meat and cheese wrapped celery into each cherry pepper.

20 cherry tomatoes
4 ounces blue cheese
1/4 cup Italian seasoned breadcrumbs
2 teaspoons olive oil
wooden toothpick (soaked in water for at least 30 min)

Steps:

  • Preheat the grill for direct low heat.
  • Using a pairing knife, remove top and seed the cherry tomatoes.
  • Stuff each tomato with 1/2 tsp blue cheese.
  • In a small bowl combine bread crumbs and olive oil. Mix until crumbs are evenly moist. Top each tomato with 1/4 tsp of crumbs, lightly packing the bread crumbs in place.
  • Using 2 toothpicks, skewer 2 tomatoes. Grill the tomatoes over direct ;ow heat until the tomatoes start to bubble.around the base, about 5-6 minute
  • Remove the tomatoes from the grill with tongs and serve warm.

3/4 cup ice water
1 cup tempura batter mix (recommended: Hime)
1/4 teaspoon cayenne pepper
3 tablespoons sour cream (recommended: Knudsen)
2 tablespoons ranch salad dressing (recommended: Hidden Valley)
1/2 teaspoon hot sauce (recommended: Tabasco)
16 large bleu cheese stuffed olives (recommended: Santa Barbara) - can substitute other large stuffed olives)
Oil, for frying

Steps:

  • In a medium mixing bowl, whisk together ice water, tempura batter mix, and cayenne pepper just until large lumps disappear. Batter will be lumpy; set aside.
  • In a small bowl, combine sour cream, ranch dressing, and hot sauce; set aside.
  • Heat oil in saucepan to 375 degrees F.
  • Pat dry olives with paper towels. Dip olives into tempura batter, slightly shake off excess, and carefully slide into oil. Do not crowd the pan. Fry for 3 to 5 minutes, until golden. Remove with slotted spoon and drain on paper towels. Skim batter pieces from oil between batches.
  • Serve with dipping sauce.

Lacking the cult status of ripe summer tomatoes or the esoteric cachet of watermelon radishes and purslane, peppers may be one of the season's least celebrated vegetables. Though their charms are many, my favorite is their stuffable shape. The heat of the cherry pepper varies from fiery to mellow, though the riper red ones tend to be sweeter and none are as spicy as the jalapeño. Arrange them on a platter for the cocktail hour. They are supple and jewel-like, and incredibly easy to make.

12 cherry peppers, a mix of red and green is nice
2 tablespoons balsamic vinegar
2 tablespoons red or white wine vinegar
1 teaspoon kosher salt
1 cup extra virgin olive oil, more if needed
2 sprigs basil
2 sprigs rosemary
2 garlic cloves, smashed
1/2 pound cheese such as provolone, fresh mozzarella or Gorgonzola, or a combination
1/2 pound thinly sliced prosciutto

Steps:

  • Using a paring knife, trim tops off peppers and cut out their centers, including seeds and veins.
  • In a quart jar (or one just large enough to hold the peppers), combine vinegars and salt, and stir well to dissolve salt. Add oil, herbs and garlic.
  • Cut cheese into cubes just large enough to fit into peppers. Wrap cheese cubes in prosciutto and stuff into peppers. Drop stuffed peppers into jar. If dressing does not cover peppers, top off with more oil. Cover jar, shake well and refrigerate overnight before serving. Poppers will last about a week in refrigerator.

Steps:

  • Cut off tomato tops to make caps.
  • Scoop out pulp from caps and bottoms.
