1 can (20 ounces) reduced-sugar cherry pie filling
1/4 teaspoon almond extract
2 cups reduced-fat biscuit/baking mix
2 tablespoons plus 1 teaspoon sugar, divided
1/2 cup fat-free milk
2 tablespoons reduced-fat margarine, melted

Steps:

  • In a large bowl, combine pie filling and extract; spread into a 9-in. deep-dish pie plate. Bake, uncovered, at 400° for 10 minutes., Meanwhile, in a bowl, combine the baking mix and 2 tablespoons sugar. In another bowl, combine the milk and margarine. Stir milk mixture into dry ingredients until a soft dough forms. , Drop dough by spoonfuls over warmed pie filling. Sprinkle with remaining sugar. Bake, uncovered, at 400° for 20-25 minutes until topping is golden brown. Serve warm.

4 tbsp. salted butter, melted, plus more for the pan
1 1/4 c. plus 2 teaspoons sugar
1 c. self-rising flour
1 c. whole milk, at room temperature
2 c. fresh Bing or other sweet cherries, pitted (about 12 ounces)
Whipped cream and/or ice cream, for serving

Steps:

  • Preheat the oven to 350 ̊. Butter a 12-inch cast-iron skillet.
  • Whisk 1 cup sugar, the flour and milk in a medium bowl. Whisk in the melted butter. Pour the batter into the skillet and sprinkle the cherries evenly over the top. Sprinkle 1/4 cup sugar over the cherries.
  • Bake until golden brown on top and a knife inserted into the center comes out clean, about 50 minutes, sprinkling the remaining 2 teaspoons sugar over the top during the last 10 minutes. Let cool 20 minutes. Serve warm, topped with whipped cream or ice cream...or both!

Steps:

  • Heat a 10-inch cast iron skillet over medium heat and preheat the oven to 350 degrees F.

½ teaspoon sea salt, divided
1 cup unsalted butter, well chilled and cut into cubes
½ cup ice water
1 ¾ pounds fresh cherries, stemmed and pitted (or frozen cherries, partially thawed)
½ cup Stevia In The Raw®
¼ cup cornstarch
2 tablespoons fresh lemon juice
2 tablespoons 2% milk
1 tablespoon Stevia In The Raw®

Steps:

  • In a food processor, pulse flour and salt to combine. Add butter and pulse until the size of small peas. Add 6 tablespoons water and pulse 15 times. (If dough is still dry, add more water, 1 tablespoon at a time, until dough just comes together.)
  • Divide dough in half, shape into discs, wrap in plastic wrap, and refrigerate at least 1 hour.
  • Preheat oven to 425 degrees F.
  • In a large bowl, combine cherries, stevia, cornstarch, and lemon juice.
  • On a lightly floured surface, roll half the dough into a 12-inch circle.
  • Transfer to a 9-inch pie pan, pressing gently into the corners. Trim edges so the dough hangs 1/4 inch over the sides. Refrigerate.
  • Roll out the rest of the dough as above, and cut into 3/4-inch wide strips.
  • On a lightly floured cookie sheet, place half the dough strips 1/2-inch apart, then weave the remaining strips through them in a perpendicular, alternating over, under pattern.
  • Remove crust from refrigerator and pour filling into it.
  • Slide lattice off the cookie sheet directly on top of the pie.
  • Trim lattice strips, leaving a 1/4-inch overhang.
  • Tuck ends of the strips under the edge of the bottom crust, then crimp the edge.
  • Brush top of the pie with milk and sprinkle with Sugar In The Raw, if desired.
  • Bake 30 minutes, then lower heat to 350 degrees F and bake until the juices are thick and bubbling, about 25 to 30 minutes.
  • Cool on a rack.

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Butter a 9-inch springform pan and line with parchment paper. Set aside.
  • Combine the flour, polenta, powdered sugar, cinnamon, baking powder and salt in a medium bowl and stir together with a rubber spatula. Pour in the butter and stir until combined. 1 1/2 tablespoons cornstarch
1 tablespoon quick-cooking tapioca
1 1/2 lbs sour cherries, pitted
1 teaspoon almond extract
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
4 ounces cold butter, cut into ½ inch dice
3/4 cup cold milk
1 tablespoon butter, melted

Steps:

  • First prepare the biscuit dough: Sift the flour with the baking powder and salt.
  • Cut in the butter until the mixture resembles coarse meal (with some lumps the size of peas).
  • Drizzle the milk evenly over the dry ingredients and work in with fork just until incorporated and the dough forms small clumps.
  • Turn out the dough onto a work surface and knead once or twice to gather it into a mass – DO NOT OVERWORK THE DOUGH – pat into a rectangle.
  • The dough can be made up to 2 hour ahead; wrap tightly and refrigerate.
  • Preheat the oven to 450F and line the oven floor with foil to catch any drips.
  • In a large bowl, whisk ¾ cup of the sugar with the cornstarch and tapioca.
  • Add the cherries and almond extract and fold gently with a rubber spatula to incorporate.
  • Choose a 6-cup ovenproof glass or ceramic baking dish or a 10 inch glass pie plate.
  • On a lightly-floured surface, roll out the Biscuit Dough 1/8 inch thick and atleast as large as the baking dish you are using.
  • Lift the dough frequently as you roll and lightly reflour the surface to prevent the dough from sticking.
  • Using a fluted pastry wheel, cut the dough into 1 ½ inch wide strips.
  • Gently stir the cherries.
  • Spoon them and their juice into the dish and spread the fruit evenly.
  • Lay about half the strips of dough, spaced evenly apart, across the pie without stretching.
  • Fold back every other strip to its midway point.
  • Weave in the remaining strips.
  • Starting at the fold, place a new strip at a 90 degree angle over the unfolded strips.
  • Unfold the folded strips, crossing the new one.
  • Now fold back the strips that alternate with the first ones you folded.
  • Place another new strip parallel to and evenly spaced from the first.
  • Continue in this manner until you reach the end of the pie, half of which is now latticed.
  • Then repeat the process on the other half of the pie.
  • Cut off any overhanging dough flush with a sharp knife in a quick downward motion.
  • Brush the lattice top with the melted butter and sprinkle with the remaining 1 tblsp of sugar.
  • Bake for 20 minutes, or until the top is beginning to brown.
  • Lower the oven temperature to 350F and bake for 30 minutes more.
  • If the edge is browning too quickly, cover it with foil.
  • Transfer the cobbler to a rack and cool for atleast 30 minutes.
  • Serve warm or at room temperature.

2 quarts (4 lbs, 1.8 kg) fresh sour cherries, pitted (about 3 pounds pitted frozen or jarred cherries), save the juice
2 cups (16 oz, 448g) granulated sugar
1/4 cup (1.5 oz, 42g) corn starch
1/4 teaspoon table salt
1 cup (5 oz, 140g) all-purpose flour
3/4 cup (3.5 oz, 195g) cake flour
1/2 teaspoon table salt
2 teaspoons baking powder
1/4 cup (2 oz, 56g) granulated sugar
1 stick unsalted butter (4 oz, 112g), cold, cut into 1/4" slices
1 large egg
1/2 teaspoon almond extract
1 cup (8 oz, 240 ml) heavy cream

Steps:

  • Toss the pitted cherries with the sugar and allow to macerate for 30 minutes. After 30 minutes drain the cherries, reserving the juice. Transfer the cherries to a large bowl and set aside.
  • Preheat the oven to 375°F. Place a 12" cast iron skillet into the oven to preheat (if using a 13"x9" baking pan you don't need to preheat the pan).
  • Whisk a 1/2 cup of the cherry juice with the corn starch until smooth.
  • Place the remaining juice and the salt in a saucepan over high heat. Bring the juice to a boil. Reduce the heat to medium low. Whisk the cornstarch mixture into the boiling juice in a steady stream. Cook the mixture, stirring constantly, until it returns to a boil and thickens.
  • Remove the thickened juice from the heat and immediately pour it over the pitted cherries. Toss to combine. Set the bowl aside while you make the topping.
  • Whisk together the all purpose flour, cake flour, salt, baking powder and sugar. Toss the butter slices into the flour. Use your fingers to work the butter into the flour until the pieces are no larger than a pea.
  • Whisk the egg and almond extract into the cream. Pour the cream into flour mixture. Toss the mixture with a spoon or spatula until it begins for form a wet dough.
  • Pour the cherries into the preheated 12" cast iron skillet or a 9"x13" baking pan.
  • Use an ice cream scoop or large spoon to drop dollops of batter over the cherries. Generously sprinkle the top of the biscuits with granulated sugar.
  • Slide the pan into the oven. Place a sheet of foil on the shelf beneath the cobbler in the oven to catch any cherry juice boil over.
  • Bake until the topping is golden brown and baked in the middle and the juices are bubbling, about 35-40 minutes.
  • Serve warm or room temperature.

4 teaspoons all-purpose flour
4 teaspoons cornstarch
1/4 teaspoon ground nutmeg
5 -7 drops red food coloring
2 1/2 cups all-purpose flour
1/2 teaspoon salt
8 tablespoons cold margarine, cut into pieces
10 -11 tablespoons ice water

Steps:

  • For Crust: Combine flour and salt in medium bowl; cut in margarine with pastry blender until mixture resembles coarse crumbs.
  • Mix in water, 1 tablespoon at a time, stirring lightly with fork after each addition until dough is formed.
  • Wrap and refrigerate until ready to use.
