CHERRY GELATIN SUPREME

- In a large saucepan, bring 1 cup water to a boil. Stir in cherry gelatin until dissolved. Stir in pie filling. Pour into an 11x7-in. dish. Cover and refrigerate for 2 hours or until set., In a small saucepan, bring remaining water to a boil. Stir in lemon gelatin until dissolved. In a small bowl, beat the cream cheese and mayonnaise until smooth. Beat in lemon gelatin and pineapple. Cover and refrigerate for 45 minutes. , Fold in the marshmallows and whipped cream. Spoon over cherry layer; sprinkle with pecans. Cover and refrigerate for 2 hours or until set.

- Dissolve the raspberry gelatin in 1 cup of boiling water.
- Stir in the tart cherry pie filling.
- Pour into a 9 X 13-inch pan and let set until firm.
- Dissolve the lemon gelatin in 1 cup of boiling water.
- Beat the cream cheese and mayonnaise together until well blended.
- Gradually add the lemon gelatin.
- Stir in the pineapple and juice then add the whipped cream and marshmallows to the gelatin mixture.
- Spread on top of the cherry gelatin mixture.
- When set, sprinkle with the nuts and serve.
- Use a lettuce leaf if serving as a salad.

FREDA'S CHERRY SUPREME SALAD
This was my grandmother Freda's 'famous' cherry salad. It was a huge hit at family gatherings. My mom mixes the lemon Jello, lemon juice, cream cheese and mayo in the blender. But here's the original recipe. Enjoy!

- Dissolve the strawberry gelatin in 1 cup of boiling water. Stir in the cherry pie filling, then spread the mixture into a 7x11 inch pan, and refrigerate until nearly set, about 45 minutes.
- Dissolve the lemon gelatin in 3/4 cup boiling water; stir in the lemon juice, and set aside. Mash the cream cheese in a separate bowl until soft, then stir in the mayonnaise. Pour the lemon gelatin into the cream cheese mixture and stir until smooth. Next, stir in the undrained pineapple. Finally, fold in the marshmallows and whipped cream. Spread the pineapple mixture over the chilled cherry layer, and sprinkle with chopped walnuts. Chill in the refrigerator until fully set, about 2 hours.
