Pretty slices of this refreshing salad are dotted with colorful cherries for a festive look. The flavor is pleasant and not overly sweet like some frozen cherry recipes. 1 package (8 ounces) cream cheese, softened
1 carton (8 ounces) frozen whipped topping, thawed
1 can (21 ounces) cherry pie filling
2 cans (11 ounces each) mandarin oranges, drained
Maraschino cherries and orange wedges, optional

Steps:

  • In a large bowl, combine the cream cheese and whipped topping. Stir in pie filling. Fold oranges into cream cheese mixture. , Transfer to a 9x5-in. loaf pan. Cover and freeze overnight. Remove from the freezer 15 minutes before cutting. Garnish with cherries and orange wedges if desired.

CRAN-CHERRY SALAD

This will work just fine with canned whole berry cranberries if fresh ones are not available.

12 oz package(s) fresh cranberries
1 1/2 cup(s) water
1/2 cup(s) sugar
1 package(s) cranberry or raspberry jello
1 can(s) cherry pie filling
1 small can(s) crushed pineapple
1 small can(s) mandarin oranges (optional)
1/2 cup(s) pecans, chopped (optional)

Steps:

  • Drain canned fruit and add 1/2 cup of the juice to the 1 1/2 cup water, making a total of 2 cups liquid. Bring water, juice from fruit, and sugar to a boil, then add washed cranberries. Bring to a boil again, then lower heat and simmer for 15 minutes.
  • Remove from heat and stir in jello, pie filling, and fruit(s), with chopped walnuts or pecans if desired.
  • Allow mixture to cool for 1/2 hr, then pour into glass bowl. Cover and Refrigerate over night.

1 c sugar
2 c boiling water
20 oz can undrained crushed pineapple
3 c fresh or frozen cranberries
1 1/2 c diced apples
1 c chopped celery
1 c chopped walnuts

Steps:

  • 1. In large bowl, combine gelatin and sugar. Add water and stir until gelatin and sugar are dissolved.
  • 2. Stir in pineapple, cranberries, apples, celery and walnuts.
  • 3. Pour into a 2qt serving bowl and chill until firm, 3-4 hours.

2 c boiling water
1/2 c cold water
2 c fresh cranberries (ground )
2 oranges (peeled , seeded and ground )
2 apples ( peeled ,cored and ground )
1 can(s) 15 oz. crushed pineapple (undrained )
2 c sugar
1 1/2 c chopped pecans

Steps:

  • 1. Dissolve gelatin in boiling water. Add cold water and chill until consistency of unbeaten egg whites. Combine next 6 ingredients , mix well. Fold fruit mixture into gelatin mixture. Pour into a 9x13 lightly sprayed pan. Refrigerate until set.

  • Combine the gelatin and boiling water; stir until gelatin is dissolved. Mix in cranberry sauce and pineapple.
  • Transfer to glass serving dishes. Sprinkle with chopped nuts. Chill until set and serve.

"CRANCRACK" CRANBERRY SALAD



This was my mothers recipe, and named by my son because it is so addictive. By replacing the Jell-O® with sugar-free Jello-O®, using no-sugar-added pineapple, and your choice of sugar substitute, this turns into a reduced-carb recipe. If you don't have a grinder, use a blender and water to grind the cranberries, then drain.

1 tablespoon knox gelatin
1 (14 ounce) can whole cranberry sauce
1 (17 ounce) can bing cherries
1 cup sour cream
1 apple, peeled and diced
1/2 cup walnuts or 1/2 cup pecans, chopped

Steps:

  • Mix Jell-O and gelatin thoroughly. Dissolve with boiling water. Set aside 1/2 cup of this mixture. Mix cranberry sauce into Jell-O. Drain cherries and add juice to the Jell-O. Chill until partially set. Stir in halved cherries, apples and nuts. Mix sour cream and reserved lemon Jell-O. Pour into mold alternating cranberry mixture and sour cream.
