CHERRY CHEESE LOG
Cherry Cheese Log is a delicious holiday party appetizer made with cream cheese, maraschino cherries, and rolled in pecans.

Steps:
- Drain the cherries, then rinse them very well.
- Chop the cherries, rinse them again and dry them with a paper towel until the paper towel is not becoming red every time it touches them (the cherries must be very dry and well rinsed).
- In your stand mixer (or a large bowl with a hand mixer), beat the cream cheese, sugar, orange zest, and ground ginger until well combined then barely fold in the cherries.
- Scoop the cream cheese mixture onto a large 15x30 piece of plastic wrap.
- Shape the cream cheese into a log like mixture then close the plastic wrap over it and twist the edges in opposite directions until you have a tight log shape.
- Refrigerate for at least 1 hour.
- Remove the cheese from the refrigerate and unroll from the plastic wrap then roll it in the pecan pieces until well coated.

FRESH CHERRY CHEESE BALL

Steps:
- Combine goat cheese, cherries, and honey in a medium bowl. Spray hands with nonstick cooking spray and roll cheese into a ball, it will be very sticky.
- Place pecans in a shallow bowl and then roll the cheese ball in the pecans, gently pressing the nuts into the cheese to coat. Wrap tightly in plastic wrap and refrigerate for several hours to blend flavors and allow the cheese to firm up.
- When ready to serve, remove plastic, place on serving board, and drizzle with additional honey. Serve with crackers or crusty bread, and thin apple or pear slices

- Beat cream cheese, sugar, butter, and vanilla extract together in a bowl using an electric mixer. Beat in coconut and cherries.

- Cream the butter and gradually mix in the icing sugar and orange juice.
- Add coconut and mix well.
- Note: this mixture will be soft.
- Roll a small portion of the coconut mixture evenly around each cherry and then roll in graham wafer crumbs.
- Place on wax paper and keep cool.
