Steps:
- First, peel the onion and cut it in half. Then, add the onion and garlic cloves to the bowl of a food processor.
- Chop the onion and garlic, then roughly chop one jalapeño and add it to the food processor. (Exclude the membrane and seeds to reduce the heat.)
- Chop the jalapeño with the onions/garlic.
- Next, add tomatoes then cilantro to the food processor.
- Chop the tomatoes and cilantro to your desired consistency.
- This next step is optional, but I like to do it - pour the salsa into a fine metal strainer over a bowl to get rid of any excess moisture. (The tomatoes and onions release a lot of liquid when you chop them up.) You want to do this BEFORE adding the salt and lime juice because you will strain out the salt and lime otherwise.
- Return the strained salsa to a bowl (or the food processor), then add salt and the juice of a lime.
- Mix well, then taste. Adjust with more salt, lime, and cilantro if needed. Serve with tortilla chips.

GROUND CHERRY SALSA
I love salsa with a hint of natural sweetness and ground cherries are a perfect addition. This is a relatively mild salsa; if you like it spicier, don't remove the jalapeno seeds, or increase the amount of jalapeno. I use only organic produce, so I don't peel the cucumber.

Steps:
- If you want to reduce the saltiness of the halloumi, soak it for two hours beforehand in cold water.
- Cut the halloumi evenly into 8 slices across the width of the cheese. Heat oven to 200C/180C fan/gas 6. Toss the carrots together with the olive oil, saffron, lemon juice and some seasoning. Tip onto a baking tray and roast for 20 mins or until tender and golden. Leave to cool, then tip into a food processor with the almonds and coarsely blitz. Scrape the salsa out into a bowl and add the chopped coriander. Mix well and add more seasoning or lemon juice if needed.
- Heat the vegetable oil in a large pan. Thoroughly pat dry the halloumi slices. When the pan is hot, carefully place in the pan and cook over a medium heat until golden brown, then turn over and cook until the other side is golden.
- While the cheese is cooking, toast the sourdough, then rub one side with garlic. Place a piece of toast on each of 4 plates and top with 2 slices of halloumi. Add the spring onions to the pan and cook for a couple of mins on each side until wilting and a little golden. Put 3 spring onions on each halloumi-topped sourdough slice, then generously spoon over the carrot & saffron salsa. Serve with chicory leaves.

SPRING ONION SALSA
Mmm! A delicious alternative to the more traditional tomato salsa. It's also very low in fat. Note that the cooking time is the marinading time, although this is to taste. This salsa makes a great addition to some Tuna Cakes, another simple recipe.
