CHERRY ALMOND JAM RECIPE {IT'S AMAZING!!!}
Out of all the jams I've made over the years {and I've made a lot!} this recipe for cherry almond jam is HANDS DOWN my favorite all time jam recipe. Who knew, that after all these years of canning, there were still undiscovered recipes that could knock my socks off! I don't know about you, but I LOVE finding new recipes, especially ones that can make a simple hostess or last minute gift.

Steps:
- Bring a boiling-water canner, 3/4 full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
- In a 6 - 8 quart sauce pot, combine the first four ingredients. Bring to a boil, stirring frequently. Slowly stir in the sugar and return to a full rolling for 1 minute, making sure to stir constantly to avoid boiling over. Remove from heat and skim off any foam with metal spoon.
- Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. {Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.}
- Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. If lids spring back, lids are not sealed and refrigeration is necessary}.
- Yields {6} 1/2 pints plus a wee bit extra for snacking.

- After thawing cherries, drain and set juices aside.
- Finely chop the cherries with a knife and then combine them in a saucepan with the pectin, almond liqueur, and the lemon juice.
- Bring the cherries to a boil, stirring frequently to prevent burning, then add the sugar and return the mixture to a boil. Boil the jam at a hard boil for 1 minute, stirring constantly, and then remove from the heat.
- Dip your ladle and funnel into your boiling water for approximately 1 minute to ensure they are sterile. Next, ladle the jam into warm, sterilized canning jars. Be sure not to touch the insides of the jars and resist the temptation to lick your fingers throughout the process (this part will be difficult). This will ensure that you create a sterile environment within the jars by the time you're done.
- Next, clean the rims of your jars with a paper towel that you dipped into boiling water. If there is jam on the rims of the jars when you place the lid on top, it can compromise the integrity of the seal.
- Now you'll get ready to sterilize your lids in the small saucepan of hot water. You'll want to be careful not to boil the lids, as this can damage the seals (I know, there are so many things to remember when you're canning), so bring the water to a boil first, remove from the heat, and then place the lids inside. Wait 5 minutes before using, so that the heat has time to work it's bacteria-killing magic. Next, remove the lids with the magnetic lid grabber, being sure not to touch the bottoms of the lids, and place them on the jars.
- Finally, place your rings on your jars. Now comes the tricky part - you will screw the ring on until it is just tight, and then go back the other direction about one-eighth of an inch, or a couple of millimeters, loosening the ring a bit. This is very important - don't skip this step! This will allow some air to escape the jars while you're boiling them, and then create a vacuum as they cool, sealing the jars.
- Place the jars into the boiling hot water bath (or large pot) using your jar grabber. Bring the water to a full boil, place the lid on the pot, and set your timer for 10 minutes. I used too small of a pot, because I'm too cheap to buy a larger one, so water spilled all over my stove... I don't recommend doing this.
- After the jars have boiled (or have been "processed") for ten minutes, remove them from the pot using your grabber again and place them upright on some dish towels to cool. You will need to let them rest for 24 hours, so pick a place where they won't be in the way, and won't be a temptation for little hands or curious pets. That said, I do encourage you to crack open a jar early! You will just need to store it in the refrigerator after it has been opened.
- Once 24-hours have elapsed remove all the rings from your jars. This will prevent moisture from forming around the edge of the lid and ensure the integrity of your seal. Your jars are now ready to store in a cool, dark place, such as your pantry or your basement. They will keep for 12 months. Once a jar is open, it will keep in the refrigerator for 1 month. When storing an opened jar, use one of your rings to keep the lid on tight.

- In a large stainless or enamel pot add cherries, liqueur and lemon juice.
- Bring to a boil stirring frequently.
- Add sugar stirring until dissolved.
- Return to a rolling boil, stir in the pectin to dissolve and boil for 1 min stirring constantly.
- Remove from heat and skim.
- Ladle into clean hot jars leaving 1/4 inch head space.
- Process 10 minutes in a boiling water bath at altitudes up to 1000 feet.
CHERRY ALMOND BARS
Steps:
- HEAT oven to 350 degrees F. Line bottom and sides of 8 x 8-inch pan with foil, extending foil over edges of pan. Coat lightly with no-stick cooking spray.
- STIR together flour, brown sugar and salt until mixed. Add oil, water and almond extract. Combine with fork until mixture resembles coarse crumbs. Pat evenly in bottom of prepared pan.
- BAKE 15 minutes.
- SPREAD preserves evenly over warm crust. Mix almonds, brown sugar and oil until mixture resembles coarse crumbs. Sprinkle over top of preserves.
- BAKE 20 minutes. Cool completely. Lift out of pan using foil. Cut into 16 bars. Store in refrigerator.
CHEWY ALMOND AND CHERRY THUMBPRINT COOKIES

- Preheat the oven to 350 degrees F.
- Spread the almond flour on a rimmed baking sheet and bake, stirring halfway through, until golden brown and toasted, 10 to 15 minutes. Immediately add it to a medium bowl to cool for 5 minutes. Line the baking sheet with a piece of parchment paper and set aside.
- Add the coconut sugar, honey, limoncello, lemon zest, salt and egg to the toasted flour. Using a rubber spatula, stir until well combined and evenly moistened. Scoop heaping 1-tablespoon scoops of the dough onto the prepared baking sheet, leaving 1 inch between each. Flatten slightly with the palm of your hand, then make a small indent in the center of each cookie using your thumb. Fill each indent with 1/2 teaspoon cherry jam. Bake until golden brown and just set, 15 to 17 minutes. Allow to cool on the baking sheet for 5 minutes, then remove to a wire rack to cool completely. Store in an airtight container.

- Put two saucers in the freezer for testing the jam later on. Tip the cherries, sugar and lemon juice into a large, heavy-based saucepan and simmer uncovered over a medium-high heat for 35-50 mins, stirring frequently until thick and glossy.
- After 35 mins, spoon a little of the jam onto one of the chilled saucers. Leave for 1 min, press a fingertip into the jam. If it starts the wrinkle, it's ready. If it slides away, continue to boil the jam for 10 mins, then test again on the other saucer.
- Spoon the jam into sterilised jars and seal. Will keep for six months unopened (when stored in a dark, cool place), or opened in the fridge for three months.

- Chop them small pieces.
- Put fruit and sugar in a large saucepan.
- Boil hard for 1 minute.
- Remove from heat and stir in liquid pectin.

- Make jam: Combine all ingredients in heavy medium saucepan.
- Stir over medium heat until sugar dissolves and mixture boils.
- Reduce heat to medium-low and simmer until jam is thick, stirring often, about 22 minutes.
- Transfer to small bowl.
- Cover and chill up to 3 days.
- Make cake: Preheat oven to 325°F.
- Butter 9-inch-diameter springform pan.
- Line bottom with parchment; butter parchment.
- Blend almond paste and sugar in processor until mixture resembles fine meal, about 1 minute.
- Add butter and vanilla and blend well, occasionally scraping down sides of bowl.
- Blend in eggs 1 at a time.
- Using on/off turns, blend in flour, baking powder and salt (do not overmix).
- Transfer batter to prepared pan.
- Place pan on baking sheet; bake cake until tester inserted into center comes out clean and top is golden, about 1 hour 10 minutes.
- Cool cake in pan on rack.
- Cover; let stand at room temperature 1 day.
- Make custard: Whisk 1/2 cup sugar and cornstarch in heavy medium saucepan to blend.
- Beat in yolks and vanilla.
- Gradually whisk in half and half.
- Stir over medium heat until custard thickens and boils.
- Transfer to bowl.
- Press plastic wrap directly onto surface; chill 1 day.
- Cut around pan sides to loosen cake; release pan sides.
- Cut cake horizontally into 3 layers; discard parchment.
- Spoon thin layer of custard over bottom of 3- to 3 1/2-quart trifle bowl.
- Trim 1 cake layer to fit, if necessary; place in bowl.
- Spread with 1/3 of custard.
- Mix chopped cherries into jam.
- Spoon 1/3 of jam mixture atop custard; spread to edge of bowl so that jam shows.
- Top with second cake layer, half of remaining custard and half of remaining jam mixture; spread to edge of bowl.
- Top with third cake layer.
- Spread with remaining jam mixture, if desired.
- Beat whipping cream and powdered sugar until stiff peaks form.
- Transfer to pastry bag fitted with star tip.
- Pipe cream in center of trifle.
- Pipe rosettes around edge; top rosettes with whole cherries.
- Sprinkle trifle with almonds.
- Cover; chill at least 3 hours and up to 1 day.

- Pre-heat oven to 160C/ 325F/ Gas 3.
- Line a 20cm deep cake tin with greased non-stick baking paper.
- Place the cherry halves in a small bowl and coat with 1tbs of the flour. Put to one side.
- Place the butter and sugar in a large bowl and cream together.
- Add the almond essence and then gradually add the eggs, beating well in between each addition.
- Stir in 60g of flaked almonds and the lemon rind.
- Fold in both flours and then gently fold in the cherries.
- Spoon the mixture into the prepared tin and level the surface.
- Sprinkle the remaining almonds over the surface and then bake for approximately 1 hour 10 minutes until golden.
- Remove from the oven and allow to cool on a wire rack.

- Combine the preserves, wine vinegar, cinnamon, cloves and nutmeg in a saucepan and mix well.
- Bring to a boil.
- Boil for one minute, stirring occasionally.
- Remove from heat.
- Stir in the almonds.
- Pour 1/3 of mixture into a glass measure to use for basting.
- Reserve the remainder to serve as a sauce with the chops.

CHERRY ALMOND PRESERVES
This recipe came from my mother-in-law. It's very old-fashioned-in fact, the friend who gave it to her used to cook it up on an old wood stove. With all the cherry orchards here in Bitterroot Valley, I make two batches of these preserves each summer. (I get the cherries from a nearby cannery by the gallons!) My family likes them on fresh bread, muffins, pancakes and even ice cream-the consistency's similar to a topping. I have to be careful, though, and ration the jars out or they'd be the first thing to disappear from the root cellar! Both my husband and I serve as 4-H leaders. We have three children-girls 16 and 14 and a son who's 12.

- Very thinly roll out the pastry on a lightly floured surface. Stamp out 12 x 9cm circles with a fluted cutter, if you have one, and use to line a bun tin. Spread 1 rounded tsp of the cherry jam in the bottom of each tart.
- Whizz the cake to crumbs in a food processor, then tip into a mixing bowl and add the flour, butter, ground almonds, caster sugar, eggs and almond extract. Beat together until smooth, then divide between the tarts, spreading a little with the back of a teaspoon to cover the jam. Scatter over the flaked almonds and openfreeze for 2 hrs, then wrap well in cling film and freeze for up to 2 months.
- Heat oven to 180C/160C fan/gas 4 with a baking sheet in it. Unwrap the tarts from the freezer and loosely top with a sheet of foil. Bake on the heated baking sheet for 30-40 mins until golden, removing the foil halfway. Cool the tarts a little, then add a splash of water into the icing sugar to make a runny icing. Drizzle over the tarts and leave to set.
