CHERRY-ALMOND ICEBOX COOKIES

Cherry-Almond Icebox Cookies image

This is my Grandmother's recipe, at least 50 years old, a classic cherry almond icebox cookie that I turned into a bar cookie. I also dip or drizzle white chocolate on the cooled cookies to make them a little more fancy for Christmas cookie exchanges. But it's delicious either way!

Categories     Desserts     Nut Dessert Recipes     Almond Dessert Recipes

Time 1h5m

Yield 24

Number Of Ingredients 6

1 cup butter, softened
1 cup brown sugar
2 cups all-purpose flour
½ cup sliced blanched almonds
½ cup chopped red candied cherries
2 ounces white chocolate

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line bottom and sides of an 11x7-inch glass baking pan with parchment paper; leave paper hanging over pan edges so that cookies can be lifted out after baking.
  • Beat butter and brown sugar together with an electric mixer until light and fluffy, about 2 minutes. Stir flour into butter mixture until crumbly; stir in almonds and cherries. Press mixture evenly into the bottom of prepared pan.
  • Bake in the preheated oven until lightly golden at edges, about 20 minutes. Score with a sharp knife into bars while in the pan and still warm; allow cookies to cool about 30 minutes. Lift cookies from pan and slice to separate along scored marks.
  • Melt white chocolate in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or chocolate will scorch. Drizzle melted white chocolate over cookies or dip half of each cookie into melted white chocolate.

Categories     Cookies     Bake     Cornmeal     Boil

Yield makes about 3 dozen

Number Of Ingredients 14

for the filling
3/4 cup dried cherries
1/3 cup cherry jam or other red fruit jam
1 tablespoon sugar
1/8 teaspoon pure almond extract
for the dough
1 1/4 cups all-purpose flour
1/2 cup yellow cornmeal
1 teaspoon baking powder
1/4 teaspoon coarse salt
1/2 cup (1 stick) unsalted butter, room temperature
1 cup sugar
1 large egg
1 teaspoon pure vanilla extract

Steps:

  • Make filling: Process cherries, jam, and sugar in a food processor until coarsely pureed. Transfer to a small saucepan. Bring to a boil over medium heat, stirring occasionally. Remove from heat, and stir in almond extract. Let cool completely.
  • Make dough: Whisk together flour, cornmeal, baking powder, and salt in a bowl. Put butter and sugar in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy, 2 to 4 minutes. Mix in egg and vanilla. Reduce speed to low. Add flour mixture; mix until just combined.
  • Transfer dough to a work surface. Divide into four equal pieces. Roll one piece of dough between two sheets of parchment paper to a 3 1/2 by 9-inch rectangle about 1/4 inch thick. Repeat with the remaining dough pieces. Transfer with parchment to a baking sheet, and freeze 30 minutes.
  • Assemble cookies: Remove top pieces of parchment. Spread one third of the filling evenly over one rectangle. Top with another rectangle; remove parchment. Repeat with remaining filling and rectangles, leaving the top rectangle un-coated. Wrap in plastic, and freeze 1 hour.
  • Preheat oven to 350°F. Trim dough to a 3 1/4 by 8 1/2-inch brick. Cut into 1/4-inch-thick slices. Space 2 1/2 inches apart on baking sheets lined with nonstick baking mats (such as Silpats). Bake cookies, rotating sheets halfway through, until edges are pale golden brown, 12 to 15 minutes. Let cool on sheets on wire racks. Cookies can be stored in airtight containers at room temperature up to 2 weeks.

CHERRY-ALMOND ICEBOX COOKIES - REVIEW BY TARAB ...
I love the cherry almond combo and had high hopes for this recipe. But the bars were very dense... I didn't like the consistency. I had to bake them an extra 10 minutes to get the middle cooked. I ended up frosting them with almond frosting and topping with half a candied cherry to make them look and tast better.
