I make these all the time-and my family complains I don't make them enough! I usually make a big batch (3 lbs of turkey breast) so that I can make a couple of meals out of them- Swedish Meatballs, Sweet and Sour Meatballs, Meatballs with Baked Ziti and Marinara, Meatball sandwiches, or just put your favorite sauce on them in a crockpot for a potluck!! Yummy!! Adjust sizes according to the serving size you need, but they freeze well, so it is a great thing to make a big batch and save yourself extra work later! Just add to your favorite dish! **Adjust breadcrumbs as needed to achieve good consistency for forming meatballs. I do tend to eyeball things, so some measurements are approximate! ;) (Swedish meatballs base for ZWT3)

3 lbs ground turkey breast
3 eggs
1 cup fine breadcrumbs (Old London or Progresso are best,seasoned)
1/2 cup asiago 3-cheese blend, shredded (Asagio,Parm,Romano blend)
garlic powder, to taste
ground black pepper, to taste
onion powder, to taste
cajun-louisiana seasoning blend, to taste (Luzianne Cajun Seasoning)
3 tablespoons canola oil

Steps:

  • In a large mixing bowl, combine turkey and eggs until thoroughly mixed.
  • Add seasonings to suit your taste. I tend to be fairly heavy handed,especially with garlic and black pepper. ;) Mix completely.
  • Add cheese and bread crumbs. *If mixture is still too moist, feel free to add more bread crumbs until desired consistency is achieved.
  • Roll into large, walnut sized balls and set aside.
  • In a large skillet, warm 3 tablespoons oil over medium heat.
  • Cook meatballs until golden brown, turning so that each side is browned. (Hint- a screen is helpful since the oil may pop and splatter like bacon).
  • Serving tip: My family likes these plain, with Contadina sweet and sour sauce (doctored up) on brown rice, in a marinara over your favorite pasta, slice in half on French rolls with marinara and cheese for a great meatball sandwich, in Swedish meatballs, in a BBQ sauce or anything for a party, you name it! They do freeze well too. Enjoy! ;).

1 green onion, thinly sliced
1 minced clove of garlic
1 egg, lightly beaten
1-ounce fresh bread crumbs
2 tablespoons grated Parmesan cheese, plus extra to serve on the side for grating
1 pound ground turkey or chicken
5 tablespoons olive oil
2 cups tomato sauce (recipe above)
1 pound perciatelli pasta
Salt and pepper to taste
Parmesan cheese-to serve on the side for grating

Steps:

  • Bring a large pot of salted water to a boil for the pasta. In a bowl mix together; green onion, garlic, egg, bread crumbs and Parmesan cheese. With a fork stir in ground turkey or chicken and season to taste with salt and pepper. (You can crumble some in a skillet, cook, taste, and then adjust seasoning). Shape mixture into small meatballs. In a large skillet heat olive oil. Add meatballs in a single layer and let them cook for 2 to 3 minutes a side, without disturbing. If they stick, loosen with a slotted spoon. Stir in tomato sauce into the skillet, cover and simmer 10 to 15 minutes (while spaghetti is cooking) to reheat sauce and cook meatballs through. Drain pasta and then return to the pot and toss with remaining 2 tablespoons of olive oil. Dish out a portion of pasta on each plate and spoon some meatballs and sauce in center.

1 cup plain breadcrumbs
1/2 cup finely grated Parmesan, plus more for serving
1/4 cup chopped fresh basil
1/4 cup chopped fresh Italian parsley
1/4 cup whole milk, at room temperature
1 tablespoon ketchup, optional
1 tablespoon tomato paste
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 large eggs, at room temperature
2 cloves garlic, minced
1 small onion, finely chopped
1 pound ground dark turkey meat
1 pound spicy Italian turkey sausage links, casings removed
Extra-virgin olive oil, for drizzling
1/4 cup extra-virgin olive oil
3 large cloves garlic, smashed and peeled
1 large onion, finely chopped 1 teaspoon kosher salt, plus more to season
1/2 teaspoon freshly ground black pepper, plus more to season
3/4 cup chopped fresh basil
2 teaspoons finely ground fennel seeds
2 teaspoons dried oregano
Two 28-ounce cans crushed tomatoes
1/2 cup low-sodium chicken broth, optional

Steps:

  • Preheat the oven to 400 degrees F.
  • For the meatballs: In a large bowl, combine the breadcrumbs, Parmesan, basil, parsley, milk, ketchup if using, tomato paste, salt, pepper, eggs, garlic and onions. Using a wooden spoon, stir to blend. Add the ground turkey and sausage meat. Using fingers, gently mix all the ingredients until thoroughly combined.
  • Using a 1-ounce cookie scoop or a small ice cream scoop, form the meat mixture into 1 1/2-inch balls (22 to 24 meatballs). Place the meatballs on a heavy nonstick baking sheet, spacing apart. Drizzle with olive oil and bake until cooked through, 15 minutes.
  • For the tomato sauce: Heat the olive oil in a large deep skillet with 2-inch-high sides over medium-high heat. Add the garlic, onions, salt and pepper. Cook for 5 to 6 minutes. Add 1/2 cup of the basil, the fennel, oregano and crushed tomatoes. Bring to a simmer. Cook over medium heat until the sauce thickens slightly, stirring occasionally, 15 to 20 minutes. Stir in the remaining 1/4 cup basil. Adjust the seasoning with more salt and pepper if desired.
  • Add the meatballs to the tomato sauce and simmer until the meatballs are heated through, about 10 minutes. Thin the sauce with chicken stock, 1/4 cup at a time, if needed.
  • Serve with grated Parmesan alongside.

1 teaspoon Worcestershire sauce
One 10-ounce package frozen chopped spinach, thawed and excess moisture squeezed-out

4 cups prepared marinara sauce
Warm cooked spaghetti, for serving

Steps:

  • Heat the oil in a large wide pot over medium-high heat. Add the onion, celery, bell pepper and garlic and cook, stirring frequently, until soft, about 5 minutes. Transfer to a large bowl and cool. Reserve the pot.
  • Meanwhile, add the turkey, oats, Parmesan, Worcestershire, spinach, 1/2 teaspoon salt and 1/4 teaspoon pepper to the cooled vegetables. Mix well and form into 24 small meatballs.
  • Pour the marinara into the reserved pot and bring to a simmer. Add the meatballs, cover and cook, turning once or twice, until cooked through, about 8 minutes.
  • Serve the meatballs and sauce over spaghetti and serve Parmesan on the side.

2 tablespoons extra-virgin olive oil
2 tablespoons canola oil
3/4 cup finely ground fresh breadcrumbs (from 3 to 4 slices white bread, crusts removed)
1/2 cup milk
1 pound ground turkey (93/7 ratio)
1/2 cup whole milk ricotta cheese
2 tablespoons grated Parmesan
1 clove garlic, grated
1/4 cup packed parsley leaves, finely chopped (about 2 tablespoons chopped)
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper
1 large egg, lightly beaten

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and drizzle the olive oil and canola oil in an even layer over the paper.
  • Pour the breadcrumbs into a large mixing bowl, pour the milk over top and stir to fully moisten the breadcrumbs. Add the remaining ingredients to the mixing bowl and mix with your hands just until combined.
  • Scoop 1/4-cupfuls of meatball mixture and place them evenly spaced on the prepared baking sheet; you should have 12 meatballs. Gently roll them into balls. Bake until bottoms are golden brown, about 15 minutes. Reduce the oven temperature to 325 degrees F and continue to bake for 15 to 20 minutes more until the meatballs are cooked through.

Shuler's is a very well known restaurant in Michigan with great food. It's nice to have a few of their recipes! Found in March 30, 2004, Detroit Free Press with this quote: "Schuler meatballs are tender, not chewy or crispy. To achieve this, use fresh bread crumbs. A couple slices of tender white bread processed in the food processor should do the trick." I've not made this yet.

Steps:

1 1/2 lbs ground beef
1 cup dry Italian seasoned breadcrumbs
3/4 cup grated romano cheese
2 eggs
2 garlic cloves, minced
1 tablespoon milk
1/4 cup chopped fresh basil
1/3 cup chopped fresh basil
2 tablespoons olive oil
2 garlic cloves, minced
1 (6 ounce) can tomato paste
2 (28 ounce) cans crushed tomatoes
1/2 teaspoon sugar

Steps:

  • Combine first 6 ingredients with 1/4 cup basil. Shape into 16 meatballs.
  • In nonstick skillet, heat 1 T. oil over medium heat. Add half of meatballs; cook, turning once, until browned, 3 minutes per side. Remove from pan. Repeat with remaining oil and meatballs. (Stop at this point if you are making your own sauce, add meatballs to your sauce and cook for 45 minutes or so).
  • To skillet add garlic. Cook until lightly browned,1 minute. Stir in tomato paste. Fill paste can halfway with water; stir into mixture.
  • In pot over medium heat combine crushed tomatoes and paste mixture. Stir in sugar and remaining basil. Bring to simmer; add meatballs. Partially cover; cook until meatballs are no longer pink inside, 45 minutes.

16 oz sliced water chestnuts (2- 8 oz cans)
1 can(s) baby corn (15oz)
1/2 c white wine
1 medium green pepper, chopped
1 medium red pepper, chopped
1 can(s) chunk pineapple (5oz)

Steps:

  • 1. Combine red and green pepper, if desired, in pan and cook for 3-4 minutes or until tender.
  • 2. Add meatballs (precooked, see my turkey meatballs), sauce, and all canned veggies to a large pot or in crockpot.
  • 3. Cook on medium high heat for 30 minutes stirring often, (high crockpot) or until meatballs have warmed through.

I have been making these for yours and have never once heard anything but compliments. The recipe is so simple that I feel bad keeping it a secret, so here it is. Great over mashed potatoes or rice for dinner and also wonderful for appetizers served as is. Easily double, triple, etc. the quantity, I've made these for over a hundred people and many size groups in between.

1 lb ground beef
2 3/4 ounces swedish meatball seasoning, mix
1 egg
2 tablespoons water
2 tablespoons onions, chopped very fine
salt & pepper
10 3/4 ounces cream of mushroom soup
1 1/4 ounces beefy onion soup mix
1 teaspoon chicken bouillon
10 3/4 ounces milk (1 soup can)
5 1/4 ounces water (1/2 soup can)
1/2 teaspoon seasoning salt
pepper

Steps:

  • Preheat oven to 350.
  • Combine all of the meatball ingredients in large bowl until well mixed. Shape into small balls and place on buttered casserole dish in single layer. Bake until lightly browned on bottom of balls then stir around and bake a few minutes longer until firm. Time will depend on the size of the balls. approximately 20 minutes to 1/2 hour.
  • While the meat is baking, put all Sauce ingredients in large pot and simmer. When the meatballs are finished baking, carefully scoop them out with a slotted spoon and put into sauce. Gently stir until well coated and heated through. At this point you can serve immediately or put in Crockpot for a party and keep them warm on a low setting. Enjoy!

I like to serve them with my Crab Wontons as an appetizer when serving to guests. ;) They go great in a crockpot for parties, bbq's, potlucks, etc. and I am usually requested to bring them!! Amounts can vary depending on number of meatballs you make. ;) ****You can add green pepper, red pepper and additional pineapple if you want more veggies - I usually don't unless I need to stretch it!
