1 ½ cups dry bread crumbs
2 ounces shredded Cheddar cheese
¼ cup minced onion
2 tablespoons chopped fresh parsley
1 ¼ teaspoons salt
¼ cup grated Parmesan cheese, divided
2 eggs, beaten
2 tablespoons butter, diced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Add zucchini and cook until tender, about 15 minutes; drain. Scoop out the flesh of the zucchini, making a 'boat'.
  • In a medium bowl combined zucchini flesh, bread crumbs, Cheddar cheese, onion, parsley, salt, most of the Parmesan cheese and egg. Fill zucchini boats with mixture. Dot tops with butter and sprinkle with remaining Parmesan cheese.
  • Bake in preheated oven for 30 minutes.

3 medium sized zucchini, cut in half lengthwise
1/2 pound lean ground beef (90%/10%, grass-fed if possible)
1/3 cup diced onion
1 clove garlic, grated
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon oregano, rubbed between the palms of your hands
Kosher salt and fresh ground black pepper to taste
4 ounce can diced green chiles
2 cups cauliflower rice
3/4 cup salsa, divided
1/2 cup shredded Colby Jack cheese, cheddar or pepper jack are also good
1/2 cup chopped tomatoes
Cilantro for garnish

Steps:

  • Preheat oven to 400°F.
  • Place 1/4 cup of salsa in the bottom of a large baking dish.
  • Use a small spoon or metal 1/2 teaspoon measuring spoon to hollow out the center of the zucchini halves then place them cut side up in the prepared baking dish. Leave approximately 1/4-inch thick shell on each half.
  • Heat a large skillet over medium-high heat and spray with cooking oil. Add in the onion and cook for approximately 2 minutes.
  • Add the ground beef to the skillet and break it up into small crumbles as it cooks. Cook until the beef is no longer pink then add in the garlic, spices, green chiles, cauliflower rice and remaining 1/2 cup of salsa. Taste for seasoning.
  • Mix everything together until combined and cook until heated through, about 3-5 minutes.
  • Divide the taco filling equally into the hollowed zucchini boats pressing it in firmly.
  • Top with shredded cheese then cover with foil and bake 25-35 minutes or until cheese is melted and zucchini is cooked through.
  • Top with the chopped tomatoes, cilantro and serve with extra salsa on the side.

4 zucchini
3 tablespoons unsalted butter
1 1/4 cups chicken stock
One 15.5-ounce can hominy, liquid drained and 3/4 cup reserved
1/2 cup grits or coarse-ground polenta
One 4-ounce jar pimientos, drained
1/2 cup frozen lima or butter beans, defrosted
3 tablespoons chopped fresh chives
1 cup grated pepper jack cheese
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Cut each zucchini in half lengthwise to create 2 long pieces. Scrape a small, ideally pointed spoon down the center of the zucchini halves to remove and discard the flesh, leaving about 1/4 inch of flesh intact. Place the zucchini boats on the prepared baking sheet.
  • Place a saucepot over medium heat and add the butter. Heat until melted, then brush the cavities of the zucchini boats with the butter. Add the chicken stock and reserved hominy liquid to the remaining melted butter and heat until simmering. Whisk in the grits and reduce the heat to medium-low. Cook, stirring occasionally, until the grits have softened and thickened, about 15 minutes. Stir in the pimientos, beans, chives, 1/2 cup cheese and 1/2 cup hominy (save the remaining hominy for another use). Season to taste. Remove from the heat and allow to cool briefly. (The grits will continue to thicken as they cool.)
  • Sprinkle the zucchini boats with salt and pepper. Spread about 1/4 cup of the grits into each zucchini boat, mounding the filling over the edges. Sprinkle the remaining cheese over the boats.
  • Roast until the boats have softened and the cheese just starts to brown, 20 to 25 minutes. Sprinkle with the fresh parsley and serve immediately.

4 medium zucchinis
1 tablespoon olive oil
5 shallots (diced)
12 ounces mushrooms (cremini, diced)
1/2 teaspoon garlic powder
1/4 cup bread crumbs
1/4 cup Parmesan cheese (grated)

1 pinch black pepper
1/2 cup mozzarella (shredded)

Steps:

  • Preheat the oven to 375˚F. Cut the stem end off the zucchinis and slice them in half lengthwise. With a table spoon, scoop out just the pulpy center that contains the seeds, and put the zucchini cut-side down on a parchment paper-lined baking sheet. Cook for 15 minutes, until just slightly softened.
  • While the zucchini are cooking, in a saute pan, heat the olive oil over medium heat. Add the shallots and saute until they are softened, about 5 minutes. Add the mushrooms and saute, stirring occasionally, until the mushrooms release their liquid and the liquid cooks off, about 7 to 8 minutes. Remove the pan from the heat. Sprinkle the mixture with garlic powder, stir in the breadcrumbs and parmesan cheese. Season the mixture with salt and pepper.
  • Remove the zucchini from the oven and turn them over on the sheet pan so they are cut side up. Divide the mushroom mixture between each zucchini, spooning it into the carved-out channel where the seeds were removed. Return the zucchini to the oven and cook for 10 minutes. Remove the zucchini from the oven, sprinkle each boat with mozzarella cheese. Return to the oven or to the broiler and cook until the cheese is melted, 5 minutes or less.

If I'm baking something else in the oven, I'll just put this in till the meat or whatever is done, then crank up the broiler and top it off in there. And of course, you can use more cheese or anything else you desire.

1 chicken bouillon cube
1 teaspoon salt
1 cup cheddar cheese, shredded

Steps:

  • Preheat broiler.
  • In a large saucepan, bring water, boullion and salt to a boil.
  • Add zucchini.
  • Cover and boil for 3 to 5 minutes until just tender-crisp; drain well.

These Cheesy Grilled Zucchini Boats are the zucchini craze you need to get behind! Tender summer zucchini is stuffed with cream cheese and Italian sausage, drizzled with pesto, and topped with loads of melty mozzarella.

4 medium zucchini (sliced in half lengthwise)
1 pound ground Italian sausage (sweet or hot, whichever you like)
8 ounces cream cheese (softened)
4 Tablespoons basil pesto
2 cups shredded mozzarella cheese

Steps:

  • Preheat the grill. Preheat your grill to High heat (400-450 degrees F). Place a 12" cast iron skillet on your grill and allow that to preheat as well.
  • Make the sausage filling. Cook the ground sausage in the skillet until golden brown. Drain off the rendered fat and then stir in the softened cream cheese until evenly incorporated with the sausage.
  • Stuff the zucchini. Use a spoon to scrape out and discard the seeds and pulp from inside the zucchini to form the boat shape. Spoon the cream cheese sausage filling into each of the zucchini boats. Spread about 1/2 Tablespoon of basil pesto on top of the sausage mixture in each boat. Sprinkle each boat with 1/4 cup of the shredded mozzarella.
  • Grill the zucchini boats. Place the stuffed zucchini boats onto the grill and close the lid. Grill for 4-5 minutes, then rotate the boats around the grill to avoid any hot spots. Close the lid and grill for 4-5 more minutes. You want the cheese to be melty and the zucchini to be tender-crisp. It should be softened, but still firm enough to remove from the grill to your serving tray without falling apart.
  • Remove from the grill and serve. Promptly remove the zucchini from the grill. Top with chopped Italian parsley before serving, if desired.

Steps:

  • Preheat oven to 375 degrees.
  • Using a small spoon, scoop out the zucchini flesh, leaving a 1/4- to 1/2-inch thick shell.
  • Wrap the zucchini flesh in a paper towel and squeeze out any excess liquid; discard the liquid and set aside the flesh.
  • Place the zucchini shells cut side down on a baking sheet and bake for 15 minutes.
  • Meanwhile, in a large skillet, heat 2 T olive oil over high heat.

6 medium size zucchini or yellow squash
1 medium red onion or yellow, chopped
1 medium bell pepper, chopped
2 stalk(s) celery chopped
1/2 tsp each salt black pepper & thyme
1/2 c liquid egg white
1/2 lb bacon ( i omitted it)
2 c panko bread crumbs or other bread crumbs of your choice
1 c sharp shredded cheddar cheese (extra for top if desired)
non stick butter flavored cooking spray

Steps:

  • 1. Wash the zucchini or squash thoroughly, then add to a large pot, and cook in boiling salted water for about 10 minutes until they are tender but still firm. Then drain and allow to cool slightly. I used the microwave in two intervals of about 10 minutes each.
  • 2. Spray a 9 X13 size casserole dish with non stick cooking spray. Set aside till needed. Preheat oven to 350 degrees F.
  • 3. Remove the stems from zucchini, then cut each in half lengthwise.
  • 4. With a medium size spoon, remove the centers of each zucchini, and add it to a medium size bowl. Add each zucchini half to the prepared casserole dish.
  • 5. Add coconut or canola oil to a large skillet, and add the chopped veggies, and cook about 3 to 4 minutes until crisp tender. Remove from heat, and add mixture to bowl with zucchini pulp.
  • 6. Remove from heat & add mixture to bowl with zucchini pulp. If adding the bacon, cook till crisp, allow to cool, then crumble into stuffing to blend together.
  • 7. Add the panko bread crumbs, spices, shredded cheese, & liquid egg whites. Stir till blended together.
  • 8. Stuff each shell with an equal amount of the stuffing, till they are all filled.
  • 9. Then top sparingly with extra shredded cheese if desired. Bake in preheated 350 degree. oven for 25 to 30 minutes until cheese melts and mixture is hot and bubbly. Garnish with a dash of paprika if desired, & serve hot.
