CHEESE & TOMATO PASTA BAKES

Cheese & tomato pasta bakes image

This sort of family meal is well worth making in bulk so you can eat one now and freeze the rest for later

Provided by Sara Buenfeld

Categories     Dinner, Lunch, Main course, Supper

Time 1h40m

Number Of Ingredients 16

3 tbsp olive oil
1 bag small mixed peppers (about 7 peppers), deseeded and cut into large chunks
6 garlic cloves , chopped
500g pack large button mushroom , quartered
1l carton passata
450ml vegetable stock
2 tsp dried oregano
290g jar pitted Kalamata olives , drained
500g large courgettes , halved lengthways and thickly sliced
500g pack dried penne
1 ½l 2¾ pints milk
140g butter
140g plain flour
¼ whole nutmeg , finely grated
300g mature cheddar , grated
85g hunk old bread , torn into small pieces

Steps:

  • Heat the oil in a large, wide pan or wok, then stir-fry the peppers for 5 mins. Add the chopped garlic and mushrooms, and cook for 5 mins more.
  • Pour in the passata and stock, then stir in the oregano, olives and courgettes with plenty of black pepper. Leave to simmer, stirring frequently, for 10-15 mins until the vegetables are just tender and the sauce has reduced a little. Meanwhile, cook the pasta following pack instructions.
  • To make the cheese sauce, pour the milk into a large pan and add the butter, flour, nutmeg and seasoning. Heat, stirring or whisking all the time until smooth and thickened. Stir in half the cheese and allow it to melt into the sauce.
  • Drain the pasta and add to the tomato mixture. Pile into 2 or 3 baking dishes, pack down well, then pour over the cheese sauce (it helps to let the sauce cool and thicken a little before using so that it stays as a layer). Scatter with the remaining cheese and the bread.
  • If eating now, bake at 200C/180C fan/ gas 6 for 40 mins until bubbling and golden. Serve with a salad.

CHEESY BAKED POLENTA IN TOMATO SAUCE

Cheesy Baked Polenta in Tomato Sauce image

This recipe is quite forgiving in that there's plenty of wiggle room to play. Use whatever herbs and cheeses you have on hand, for example, adjust the spice levels as preferred, and opt for fresh tomatoes if they're in season, or chopped canned tomatoes instead of whole. You can also veganize the dish entirely by using a nondairy milk and vegan cheese, adding some nutritional yeast if you like. This hearty main needs nothing more than some lightly cooked greens to eat alongside.

Categories     dinner, casseroles, main course

Time 1h30m

Yield 4 servings

Number Of Ingredients 17

2 3/4 cups/660 milliliters whole milk
3 garlic cloves, minced
3 1/2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 1/3 cups/200 grams instant polenta
2/3 cup/60 grams roughly grated Parmesan
1/4 cup/60 milliliters olive oil
2 small yellow onions, peeled and finely chopped (about 2 1/2 cups/360 grams)
6 garlic cloves, minced
1 teaspoon red-pepper flakes
1/3 packed cup/10 grams fresh oregano leaves
2 (14-ounce/410-gram) cans (tins) plum tomatoes, roughly crushed by hand
1 teaspoon granulated sugar
7 ounces/200 grams fontina cheese or buffalo mozzarella, very thinly sliced
1/3 cup/30 grams finely grated Parmesan
2 scant tablespoons/5 grams finely chopped fresh parsley
1/3 teaspoon red-pepper flakes

Steps:

  • Cut out a piece of parchment paper about 16-by-12 inches/40-by-30 centimeters in size and lay onto a clean work surface.
  • Prepare the polenta: Add the milk, garlic, 1 1/2 tablespoons oil, 1 teaspoon salt and a good grind of pepper to a medium saucepan. Bring to a bare simmer, stirring occasionally, over medium-high heat. Turn the heat to medium-low and slowly pour in the polenta, whisking continuously, until completely incorporated and there are no lumps. Cook for 2 to 3 minutes, stirring all the while with a spatula. When cooked, the mixture should pull away from the sides of the pan and be quite thick.
  • Add the Parmesan, stirring for another 30 seconds to melt. Remove from the heat and transfer the mixture to the parchment paper. Use your hands to quickly shape the polenta into a large cylindrical shape, about 13-inches/32-centimeters long. Use the parchment paper to help you tighten the cylinder and then gently roll the whole thing in the paper, tightening as you go, then twisting in opposite directions at both ends. Refrigerate to set for about 1 hour, or longer if time allows.
  • Meanwhile, make the sauce: Add the olive oil to a large, ovenproof cast-iron pan that is roughly 11-inches/28-centimeters wide, and heat over medium-high. Once hot, add the onions and cook, stirring occasionally, for 6 minutes, or until softened and lightly colored.
  • Stir in the garlic, red-pepper flakes and oregano, and cook until fragrant, about 1 minute. Add the tomatoes and their juices, sugar, a scant 1/2 cup/100 milliliters water, 3/4 teaspoon salt and a good grind of pepper. Bring to a simmer over medium-high. Turn the heat down to medium and cook, stirring occasionally, for 20 minutes or until the sauce has thickened slightly. Set aside until needed.
  • Heat oven to 450 degrees Fahrenheit/230 degrees Celsius.
  • Gently unwrap the chilled polenta and transfer to a cutting board. Trim about 1 inch/2 to 3 centimeters off the ends and then cut the polenta into 24 (1-centimeter-thick) slices.
  • Top the tomato sauce evenly with the sliced fontina, then fan out the polenta slices, overlapping slightly, so that they're spiraled to cover the top, leaving a 1-centimeter gap from the edge of the pan. Drizzle the polenta with the remaining 2 tablespoons oil and bake for 30 to 35 minutes, or until polenta is golden in places and the sauce is bubbling. Remove from oven and let sit for 10 minutes to settle.
  • While the polenta cools, in a small bowl combine all the topping ingredients. Sprinkle a handful of the topping over the polenta and serve the remaining in a bowl alongside. Serve warm.

CHEESE AND TOMATO POTATO BAKE

Cheese and Tomato Potato Bake image

This crispy cheese and tomato potato bake is super easy to make. It's layered up with mature cheddar cheese, thinly sliced potatoes, and a rich tomato sauce - the perfect side dish.

Provided by Becca Heyes

Categories     Side Dish

Time 2h

Number Of Ingredients 14

1 tbsp oil
240 g carrots ((~ 3 medium carrots), grated)
1 onion, (finely diced)
4 cloves garlic, (minced)
1 tsp smoked paprika
1/2 tsp dried mixed herbs
500 ml (~ 2 cups) passata or tomato sauce
2 tbsp tomato puree / paste
175 g (~ 1 1/3 cups) cherry tomatoes, halved
Salt
Black pepper
800 g (~ 28 oz) potatoes (~ 4 medium potatoes)
200 g mature cheddar cheese, (grated (~ 2 cups when grated))
25 g (~ 1/3 cup) breadcrumbs (I used panko)

Steps:

  • Heat the oil in a frying pan, and add the grated carrot and diced onion. Cook over a medium heat for around 5 minutes, until fairly soft. Add the minced garlic, smoked paprika and dried herbs, and cook for 2 more minutes.
  • Next, add the tomato sauce, tomato puree and about two thirds of the cherry tomatoes (save some back for topping), along with a good pinch of salt and pepper. Bring to a gentle simmer, and cook for a few minutes.
  • Thinly slice the potatoes - I didn't bother peeling mine. If you're not planning to pre-boil the potatoes, make sure you don't cut them any thicker than a few millimetres. Or, if you want to cut them a bit thicker or you're pushed for time, pre-boil them until they're just tender.
  • Add one spoonful of sauce to the bottom of a baking dish (mine measured 8 x 8 inches), and spread it around - this just stops the potatoes from sticking to the bottom of the dish. If you have a dish with a lid, that's ideal.
  • Now layer the sliced potatoes, tomato sauce and grated cheese - I ended up with 4 layers of each in total. Just make sure the potatoes are always laid out in a single layer, to help them cook through (less important if you've pre-boiled them).
  • When you've used all the potatoes, finish with one final layer of tomato sauce, the last bit of grated cheese, and the breadcrumbs, as well as any cherry tomatoes you held back earlier.
  • If you didn't pre-boil the potatoes, add a lid to the dish (or cover with kitchen foil, if you don't have a lid), and bake at 190°C (Gas Mark 5 / 375°F) until the potatoes are soft (check by poking with a sharp knife). Mine took around an hour and a half in total, but the exact time will depend on the exact thickness of your potatoes.
  • If you did pre-boil the potatoes, you can cook your potato bake at 190°C (Gas Mark 5 / 375°F) without a lid, until golden brown and crispy - around 20-25 minutes.

CHEESE AND TOMATO LASAGNA

Cheese and Tomato Lasagna image

America's Test Kitchen upgraded lasagna recipe. To make vegetarian, eliminate the anchovies. Do not use no-boil noodles for those are too thin.

Provided by gailanng

Categories     European

Time 1h50m

Yield 6-8 serving(s)

Number Of Ingredients 24

4 ounces pecorino romano cheese (2 cups) or 4 ounces parmesan cheese, grated (2 cups)
8 ounces cottage cheese (1 cup)
1/2 cup heavy cream
2 garlic cloves, minced
1 teaspoon cornstarch
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup olive oil
1 onion, chopped fine
1 1/2 teaspoons sugar
1/2 teaspoon red pepper flakes
1/2 teaspoon dried oregano
1/2 teaspoon dried oregano
1/2 teaspoon salt
4 cloves, garli minced
8 anchovy fillets, rinsed, patted dry, and minced
1 (28 ounce) can crushed tomatoes
1 (14 1/2 ounce) can diced tomatoes, drained
1 ounce pecorino romano cheese (1/2 cup) or 1 ounce parmesan cheese, grated (1/2 cup)
1/4 cup tomato paste
14 curly-edged lasagna noodles (dry packaged)
8 ounces Fontina cheese, shredded (2 cups total but divided into 4 half cups)
1/8 teaspoon cornstarch
1/4 cup pecorino romano cheese or 1/4 cup parmesan cheese, grated

Steps:

  • FOR THE CHEESE SAUCE: Whisk all ingredients in bowl until well combined; set aside.
  • FOR THE TOMATO SAUCE: Heat oil in large saucepan over medium heat. Add onion, sugar, pepper flakes, oregano and salt and cook, stirring frequently, until onions are softened, about 10 minutes. Add garlic and anchovies and cook until fragrant, about 2 minutes. Stir in crushed tomatoes, diced tomatoes, cheese and tomato paste; bring to simmer. Reduce heat to medium-low and simmer until slightly thickened, about 20 minutes.
  • FOR THE LASAGNA: While sauce simmers, lay noodles in 9 by 13-inch baking dish and cover with boiling water. Let noodles soak until pliable, about 15 minutes, separating noodles with tip of paring knife to prevent sticking. Place dish in sink, pour off water and run cold water over noodles. Pat noodles dry with clean dish towel; dry dish. Cut two noodles in half crosswise (short side).
  • Adjust oven rack to middle position and heat oven to 375 degrees. Spread 1 1/2 cups tomato sauce in bottom of dish. Lay 3 noodles lengthwise in dish with ends touching 1 short side of the pan, leaving space on opposite short side. Lay 1 half noodle crosswise in empty space to create even layer of noodles. Spread half of cheese sauce over noodles, followed by 1/2 cup fontina. Repeat layering of noodles, alternating which short side gets half noodle (alternating sides will prevent lasagna from buckling). Spread 1 1/2 cups tomato sauce over second layer of noodles, followed by 1/2 cup fontina. Create third layer using 3 1/2 noodles (reversing arrangement again), remaining cheese sauce, and 1/2 cup fontina.
  • Lay remaining 3 1/2 noodles over cheese sauce. Spread remaining tomato sauce over noodles. Toss remaining 1/2 cup fontina with 1/8 teaspoon cornstarch, then sprinkle over tomato sauce, followed by Pecorino.
  • Spray sheet of aluminum foil with vegetable oil spray and cover lasagna. Bake for 35 minutes. Remove lasagna from oven and increase oven temperature to 500 degrees.
  • Remove foil from lasagna, return to oven, and continue to bake until top is lightly browned, 10 to 15 minutes longer. Let lasagna cool for 20 minutes. Sprinkle with basil, cut into pieces, and serve.
