COCONUT CURRY FISH

Coconut Curry Fish image

Jamaican curry powder plays a major role in this deeply savory weeknight dish, giving the sauce its unique flavor and golden hue. The traditional spice blend is heavy on the turmeric, and benefits from being toasted, which brings out its notes. This recipe calls for frozen whiting, which doesn't hold up to frying but shines here, simmered in a sauce studded with red and green bell peppers. If whiting is unavailable, cod is also a good choice.

Provided by Millie Peartree

Categories     dinner, weeknight, seafood, main course

Time 30m

Yield 4 servings

Number Of Ingredients 14

2 tablespoons olive oil
2 medium red bell peppers, deseeded and sliced into 1/4-inch-thick strips
2 medium green bell peppers, deseeded and sliced into 1/4-inch-thick strips
1 medium onion, sliced
Kosher salt and freshly cracked black pepper
1 1/2 tablespoons Jamaican curry powder (hot or mild)
2 garlic cloves, minced
1 tablespoon grated ginger
4 (6-ounce) fillets frozen fish, such as whiting or cod
1 (14-ounce) can coconut milk
1 lime
2 scallions, trimmed and thinly sliced, for garnish
Fresh cilantro leaves and tender stems, for garnish
White rice or couscous, for serving

Steps:

  • Heat a medium (10-inch) saucepan with deep sides over medium-high. Drizzle in olive oil to cover the bottom of the pan. Add red and green bell peppers and onion, and sauté until softened, about 3 to 4 minutes. Season with salt and pepper.
  • Add the curry powder to the pan, and toast for about 1 minute, stirring often to keep the curry from scorching. Stir in the garlic and cook until fragrant, about 30 seconds. Stir in the grated ginger and cook until fragrant, about 30 seconds.
  • Place fish on top of cooked vegetables, or nestle them into the vegetables, if your pan is becoming too full. Pour coconut milk over fish and vegetables.
  • Cover and simmer over medium-low until fish is cooked and starts to flake, about 20 minutes. Adjust seasoning with salt and pepper. Squeeze lime to taste over the top and garnish with scallions and cilantro. Serve with white rice or couscous.

JAMAICAN COCONUT CURRY CHICKEN (SLOW COOKER)

Jamaican Coconut Curry Chicken (Slow Cooker) image

Learn how to make this delicious Jamaican style coconut curry chicken in your crock pot, so flavoursome and delicious.

Provided by Charla

Categories     Main Course

Time 5h5m

Number Of Ingredients 24

2 ½ - 3 lb chicken of your choice (I used skinless/boneless thighs)
3 tbsp curry powder (see notes for recipe to homemade recipe)
1 tbsp onion powder (or granules)
1 tbsp garlic powder (or granules)
1 tbsp all purpose seasoning
1 tbsp black pepper
1 tsp ground ginger
1 tsp ground coriander
½ tbsp cilantro (fresh or dried)
½ tbsp parsley (fresh or dried)
½ tbsp pink salt
3 tbsp olive oil (can use coconut oil)
1 tbsp curry powder
1 medium onion
2 scallion (sliced)
4 garlic, cloves (minced)
6-8 sprigs of fresh thyme (or dried)
1 ½ cups full fat coconut milk (**MUST BE FULL FAT**)
a knob of coconut cream (about 1/4 cup) (known as coconut butter or manna)
2 bay leaves
1-2 large carrots (sliced and halved)
1 cup mixed bell peppers
additional pink salt, black pepper or seasoning to taste
scotch bonnet (whole) (optional)

Steps:

  • Place all of the meat in a large bowl and use a fork/knife to make small holes. This will helps seasoning to penetrate (make sure the meat is blotted dry from washing it).
  • Sprinkle the curry powder, ground coriander, onion powder, garlic powder, ginger, black pepper, all purpose seasoning, pink salt, parsley and cilantro.
  • Use your hands (can wear gloves) to work the seasoning into the chicken.
  • Wrap the bowl and leave to marinate in the refrigerator for several hours or overnight (recommended).
  • On medium heat, add the olive oil to the skillet and add 1 tbsp of curry powder and cook the curry for about 1 minute.
  • Add the onion, scallion and garlic then proceed to saute in the pan until soft and translucent.
  • Now add the chicken and begin to sear the chicken until the meat turns color/seal and is no longer pink. This is will take about 10 minutes or so (it's normal for the chicken to extract its own juices).
  • Once seared, transfer the contents of the skillet to your crockpot.
  • Add the bay leaves, scotch bonnet, thyme, coconut milk and knob of coconut cream (coconut butter/manna).
  • Switch the slow cooker on, cover the crock pot with a lid and set to cook on high for 4 hours.
  • 1hr-45 minutes before the cooking time is done add your carrots and mixed bell peppers.
  • Once the cooking time has finished do a taste test and adjust for additional pink salt, black pepper or more seasoning if required.
  • Discard the bay leaves, scotch bonnet and thyme stems prior to serving

Provided by Taneisha Morris

Categories     Fish & Seafood     Jamaican & Caribbean     Low Carb & Keto     Main Dishes & Entrees     Quick, Easy & Under 30

Time 25m

Number Of Ingredients 21

4 Salmon Fillets
1 tbsp Butter
1 tsp Garlic Powder
1 tbsp Curry Powder (Betapac or Montego brand Curry recommended)
1/2 tsp Black Pepper
1/2 tsp Salt (more or less to taste)
1 tbsp Olive Oil
1 tbsp Butter
2 tsp Curry Powder (Betapac or Montego brand Curry recommended)
1/2 Green Bell Pepper (medium, julienned, or any colour)
1/2 Red Bell Pepper (medium, julienned, or any colour)
1 Onion (small, julienned or 2 stalks escallion (green onion))
3 Cloves Garlic (minced)
2 Sprigs Fresh Thyme
1 Scotch Bonnet Pepper (or 1 tsp of Hot Pepper Sauce)
400 ml Coconut Milk (1 can)
1 tsp Paprika
1/2 tsp Black Pepper
1/2 tsp Salt (or more or less to taste)
3 tsp Cornstarch
3 tsp Cold Water

Steps:

  • Pat dry salmon fillets and season with garlic powder, curry powder, black pepper, salt. Heat butter in a large nonstick skillet or saucepan over medium-high heat, add salmon fillets and cook, without moving, skin side up (if skin-on), until golden and crisp, around 4-5 minutes. Gently flip the fillets and reduce the heat to medium until done then remove from heat and set aside.
  • In the same skillet or large saucepan, heat olive oil and butter over medium high heat and "burn", or cook the curry (1 tbsp) for about 2 minutes - see notes section. Add the julienned bell peppers, onion and the minced garlic to the saucepan. Sauté until the veggies have softened slightly; then add sprig(s) of fresh thyme and scotch bonnet pepper or hot pepper sauce.
  • Stir in coconut milk until combined. Then add paprika, salt and black pepper, stirring occasionally for approx. 5 minutes. Combine the cornstarch and cold water in a small bowl until dissolved and stir it into the sauce if needed to thicken. Continue to let simmer while stirring occasionally, until the sauce begins to thicken. Return salmon to the saucepan and cover with sauce until completely coated. Add more salt/pepper as desired and remove the scotch bonnet pepper. Once the sauce has thickened to your liking, remove from the stove, serve while hot and enjoy!
