2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 carrot, diced
2 potatoes, diced
15 oz diced tomato, 1 can
2 cups dried lentil
8 cups vegetable broth
1 bay leaf
½ teaspoon cumin
salt, to taste
pepper, to taste

Steps:

  • In a large pot, add the oil and onion and cook over medium heat until semi-translucent, about 3-5 minutes. Add garlic and cook for 2 minutes.
  • Add carrots and potatoes, and sauté for 3 minutes.
  • Add lentils, vegetable broth, diced tomatoes, bay leaf, and cumin, and bring to a boil.
  • Reduce heat to a simmer and cook for 35-40 minutes, or until lentils are tender.
  • Remove bay leaf and add salt and pepper to taste.
  • Enjoy!

Here's what you need: medium butternut squash, medium vidalia onion, large carrot, garlic, canola oil, fine kosher salt, sweet paprika, ground cinnamon, black pepper, cayenne pepper, red lentils, granny smith apple, vegetable stock, water, cornbread, Canadian white cheddar, fresh chives

Number Of Ingredients 17

1 medium butternut squash
1 medium vidalia onion
1 large carrot
3 large cloves garlic
3 tablespoons canola oil
1 teaspoon fine kosher salt
1 teaspoon sweet paprika
½ teaspoon ground cinnamon
½ teaspoon black pepper
¼ teaspoon cayenne pepper
1 cup red lentils
1 granny smith apple
4 cups vegetable stock
1 cup water, optional
4 slices cornbread, store-bought (any bread will do)
1 ½ cups Canadian white cheddar, grated
2 tablespoons fresh chives, chopped

Steps:

  • Pre-Heat oven to 375F
  • Place folded damp paper towels under your cutting board to make a secure surface for cutting the butternut squash. Carefully peel and cut squash into 2 inch chunks, remove and discard seeds. Peel onion and cut into 1 inch chunks. Peel carrot and slice into ½ inch rounds. Peel garlic. Place all prepared vegetables onto a large baking sheet. Drizzle over canola oil and season with salt, paprika, cinnamon, black pepper and cayenne pepper. Toss until everything is evenly coated. Roast at 375F for 40 - 45 minutes or until fork tender.
  • Remove roasted vegetables from the oven and let cool slightly before handling, meanwhile chop the apple. Transfer all roasted vegetables to a large dutch oven or stock pot along with lentils, apple and stock. Turn heat up to medium high and simmer for 10-15 minutes or until apples are soft. Stir occasionally so lentils do not stick to the bottom of the pan.
  • Let soup cool slightly, then using an immersion blender, puree until no chunks remain. Stir in 1 cup of water if too thick, season with salt if desired. Ladle soup into oven proof soup bowls, place bowls on a baking sheet. Cut cornbread into 1 inch chunks and divide evenly on top of soup. Divide cheese overtop and broil on high for 2-3 minutes or until golden brown and melted. Garnish with chives, enjoy!
  • Note: If you do not have an immersion blender you can use a normal blender, working in batches and not filling the blender all the way up. Make sure the mixture is slightly cooled before blending.

If there's one thing you should be eating more of this fall, it's butternut squash soup (the homemade kind, of course). This seasonal recipe is easy to whip together in no time, and you can make a big batch at once to freeze for lazy nights or on-the-go work lunches.

2 teaspoons butter
3 cloves garlic, minced
½ cup onion, chopped
1 potato, peeled and cubed
1 stalk celery, chopped
1 carrot, sliced
salt, to taste
pepper, to taste
2 lb butternut squash, peeled, seeded, and cubed
6 cups vegetable broth
2 cups water
1 bay leaf
2 sprigs fresh thyme

Steps:

  • Melt the butter in a large pot over medium heat, then add the garlic and onion and sauté for 1-2 minutes, until the onion is translucent.
  • Add the potato, celery, carrot, salt, and pepper. Sauté for 3 minutes.
  • Add the butternut squash, broth, water, bay leaf, and thyme and stir. Bring to a boil.
  • Cover and reduce the heat to low. Simmer for 25-30 minutes.
  • Remove the thyme stems and bay leaf.
  • Use an immersion or countertop blender to blend the soup until smooth.
  • Let cool for 2 minutes, then serve.
  • Enjoy!

2 tbsp olive oil
2 onions, finely chopped
2 garlic cloves, crushed
¼ tsp hot chilli powder
1 tbsp ras el hanout
1 butternut squash, peeled and cut into 2cm pieces
100g red lentils
1l hot vegetable stock
1 small bunch coriander, leaves chopped, plus extra to serve
dukkah (see tip) and natural yogurt, to serve

Steps:

  • Heat the oil in a large flameproof casserole dish or saucepan over a medium-high heat. Fry the onions with a pinch of salt for 7 mins, or until softened and just caramelised. Add the garlic, chilli and ras el hanout, and cook for 1 min more.
  • Stir in the squash and lentils. Pour over the stock and season to taste. Bring to the boil, then reduce the heat to a simmer and cook, covered, for 25 mins or until the squash is soft. Blitz the soup with a stick blender until smooth, then season to taste. To freeze, leave to cool completely and transfer to large freezerproof bags.
  • Stir in the coriander leaves and ladle the soup into bowls. Serve topped with the dukkah, yogurt and extra coriander leaves.

2 tablespoons olive oil
1 cup finely chopped onion
1/2 cup finely chopped carrot
1/2 cup finely chopped celery
2 teaspoons kosher salt
1 pound lentils, picked and rinsed
1 cup peeled and chopped tomatoes
2 quarts chicken or vegetable broth
1/2 teaspoon freshly ground coriander
1/2 teaspoon freshly ground toasted cumin
1/2 teaspoon freshly ground grains of paradise

Steps:

  • Place the olive oil into a large 6-quart Dutch oven and set over medium heat. Once hot, add the onion, carrot, celery and salt and sweat until the onions are translucent, approximately 6 to 7 minutes. Add the lentils, tomatoes, broth, coriander, cumin and grains of paradise and stir to combine. Increase the heat to high and bring just to a boil. Reduce the heat to low, cover and cook at a low simmer until the lentils are tender, approximately 35 to 40 minutes. Using a stick blender, puree to your preferred consistency. Serve immediately.

My friend gave me several squashes from her garden, so I have been experimenting with recipes for this delicious vegetable. This soup was very popular with my family, so I thought I should write it down before I forget it and maybe someone else would like it as well.

1 (2 -2 1/2 lb) buttercup squash or 1 (2 -2 1/2 lb) acorn squash, about 2-21/2 pounds, peeled, de-seed, diced, reserving 1 cup
1 tablespoon vegetable oil
1 cup red lentil
2 cups water
1 (14 ounce) can coconut milk
1 large onion, chopped
1/2 green pepper, de-seeded, chopped
4 garlic cloves, peeled, coarsely chopped
1 inch piece gingerroot, peeled, chopped
2 teaspoons Thai red curry paste
2 tablespoons sweet chili sauce
2 cups canned tomatoes
1 teaspoon hot sauce (to taste)
1 teaspoon salt
1 vegetable bouillon cube
freshly grated pepper
3 tablespoons chopped fresh cilantro
sour cream or yogurt

Steps:

  • Put veg oil in large pot, heat over med high heat. Add onions, green pepper, garlic and ginger. Cook till onions are soft and transparent. Add rest of ingredients, except lentils and 1 cup of squash.
  • Cook over medium heat 10 minutes until squash is tender.
  • Put into blender in batches and blend until smooth OR use a stick blender in the cooking pot.
  • Put puree back on medium-high heat, add diced squash and lentils, bring to a simmer, cover, cook for 10-12 minutes.
  • Add freshly grated pepper, and cilantro.
  • Serve immediately with sour cream or yogurt.

1 1/2 lbs summer squash, yellow
1 1/2 lbs zucchini
1 quart half-and-half
1 (16 ounce) package Velveeta cheese
1 onion, medium, chopped
1 teaspoon garlic salt

Steps:

  • Slice the squash into a large sauce pan & cover with water.
  • Cook until very tender, then drain off the water.
  • Divide the squash & mash half of it, then in the original sauce pan, mix all the squash together with the half-and-half.
  • On medium heat, reheat the squash mixture.
  • Meantime, cut the Velveeta cheese into chunks.
  • When the squash is again hot, add the cheese to the hot mixture, stirring it often as the cheese melts.
  • The chopped onion & garlic salt can be added as the cheese continues to melt.
  • When all the cheese is melted, the soup is ready to serve hot. If it's to be served cold, let it cool, then chill it in the refrigerator.

Flavour up butternut squash with Indian spices for this warming and healthy vegetarian soup

1 tbsp olive oil
1 butternut squash, peeled, deseeded and diced
200g carrot, diced
1 tbsp curry powder containing turmeric
100g red lentil
700ml low-sodium vegetable stock
1 can reduced-fat coconut milk
coriander and naan bread, to serve

Steps:

  • Heat the oil in a large saucepan, add the squash and carrots, sizzle for 1 min, then stir in the curry powder and cook for 1 min more. Tip in the lentils, the vegetable stock and coconut milk and give everything a good stir. Bring to the boil, then turn the heat down and simmer for 15-18 mins until everything is tender.
  • Using a hand blender or in a food processor, blitz until as smooth as you like. Season and serve scattered with roughly chopped coriander and some naan bread alongside.
