Can't choose between cauliflower cheese or macaroni cheese? This veg-charged hybrid is a real winner. It works particularly well with leafy greens and broccoli, but feel free to mix it up with whatever veg you have available.

- Recipe kindly shared by the Tesco Community Cookery School with Jamie Oliver. The recipe has been written to be flexible and scalable up to 50 portions. Note: all veg weights are for trimmed, prepped vegetables.
- Preheat the oven 180°C/350°F/gas 4.
- Break the cauliflower and broccoli into florets.
- Cook the pasta in a large pan of boiling salted water according to the packet instructions, adding the cauliflower and broccoli for the last 4 minutes, then drain, reserving a mugful of cooking water.
- Remove and discard any tough stalky bits from the leafy greens, then chop into bite-sized pieces.
- Place a pan large enough to hold all the ingredients on a medium heat with the olive oil. Add the greens and cook for 3 minutes or until wilted.
- Add the white sauce, mustard (if using) and pasta and veg. Grate over the cheese and give everything a good mix, adding a splash of cooking water to loosen. Season to taste.
- Transfer to a large, deep baking tray (60x40cm).
- Tear the bread (if using) into small chunks and whiz in a food processor to chunky crumbs. Scatter the breadcrumbs over the pasta and season with a little black pepper.
- Bake for 10 minutes or until golden and bubbling.

- Cook the pasta, adding the broccoli for the final 4-5 mins and cooking until tender. Drain well, then heat the grill.
- Heat the butter in a saucepan and stir in the flour. Cook for 1 min, then gradually add the milk, stirring well between each addition. Bring to the boil, stirring, then simmer for 2 mins, before stirring in the mustard, half the cheese and seasoning.
- Mix the pasta and broccoli into the sauce and spoon into an ovenproof dish. Scatter over the remaining cheese and place under a hot grill for 3-4 mins until golden and bubbling.

- Heat oven to 325°F.
- Cook pasta in large saucepan as directed on package, omitting salt and adding broccoli to the boiling water for the last 2 min. of the pasta cooking time.
- Meanwhile, melt butter in large saucepan on low heat. Stir in flour; cook and stir 2 min. or until bubbly. Gradually stir in milk; bring to boil on medium heat, stirring constantly. Simmer on low heat 3 to 5 min. or until thickened, stirring constantly. Add cheeses; cook and stir 2 to 3 min. or until melted.

- Cook pasta according to package directions. Meanwhile, in a large saucepan, cook the beef, onions and garlic over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce and mushrooms; bring to a boil. Reduce heat; cover and simmer for 20 minutes., Place 1/2 cup of meat sauce in a greased shallow 2-1/2-qt. baking dish. - Heat oil in a skillet over medium heat. Add chicken, salt, and pepper; cook and stir until golden brown, about 5 minutes. Add garlic; cook until fragrant, about 2 minutes. Add broth and heavy cream; stir in pasta and bring to a boil. Reduce heat and simmer until pasta is tender, about 15 minutes.

- Cook pasta as directed on package, omitting salt.
- Meanwhile, brown ground beef with vegetables in large skillet sprayed with cooking spray. Add sauce, bacon and seasoning; mix well. Simmer on medium-low heat 10 min. or until slightly thickened, stirring occasionally.

- Set the oven to 400°F.
- Cook the pasta in boiling water for 10-14 mins, or as directed on the packet, until just tender, then drain well.
- Meanwhile, heat the oil in a pan. Add the onion and cook it over a medium heat for 4-5 mins, until it starts to soften. Add the meat and celery to pan and cook for a further 5-8 mins, stirring well so the meat browns all over.
- Add flour to the pan and cook for a further minute, stirring until the mixture has thickened, then stir in the tomatoes and 2/3 cup boiling water. Stir well while the mixture comes to the boil. Stir in bouillon cube, then add the Worcestershire sauce and seasoning to taste. Simmer for 2-3 minutes Remove the pan from heat and stir in drained pasta. Tip the mixture out into a gratin dish and level the surface.
- To make the topping, melt the butter in a pan and add flour. Cook for 1-2 mins until mixture forms a thick paste, then gradually pour in the milk, beating well and allowing mixture to come to the boil between each addition of liquid. Remove pan from heat and add mustard powder and half the cheese. Season to taste. Spoon sauce over pasta, spreading it to cover. Sprinkle remaining cheese over.
- Bake in the centre of the oven for 30-40 mins, or until the mixture is gollden on top and sizzling hot. Serve immediately.
- To freeze: Prepare from steps 2-5, then allow mixture to cool completely. Cover the dish well and freeze for up to 1 month. Defrost, then bake, allowing a little extra cooking time.

- Preheat the oven to 190C/Gas 5.
- In a medium saucepan cook the pasta according to pack instructions, drain in a colander, rinse with cold water and set aside.
- Melt the butter over a low heat in the large saucepan. Once the butter it melted, add the flour and stir with the wooden spoon to form a sort of paste. Cook for another 1-2 minutes.
- Gradually stir in the milk, approximately 100ml at a time, stirring out any lumps from the mixture.
- Continue stirring until the sauce thickens, then add the next bit of milk. When the sauce is ready, in around 10-15 minutes, it will be fairly thick, smooth and steaming. Don't allow it to boil (Hint! You may want to gradually increase the heat from low to medium-low as you add more milk)
- Remove the sauce from heat and stir in 250g of the cheese, mixing well until the cheese has melted.
- Transfer the pasta into the ovenproof dish, pour the cheese sauce over it and stir the mixture around, making sure that all of the pasta is covered in sauce.
- Sprinkle the mixture first with breadcrumbs, then with the remaining cheese, finally adding a dash of dried chives (optional).
- Bake for approximately 30 minutes until the cheese is browned and bubbling. Allow to cool for at least 5 minutes before serving.

- 1. Preheat oven to 350*. Lightly spray a baking dish - 8 x 8 or 9 x 9 and set aside.
- 2. In a small dish mix together the onion powder, garlic and oregano and set aside.
- 3. Cook the pasta according to package instructions but shorten the cooking time by 2 minutes. Rinse and drain well.
- 4. Heat a large skillet or pot to medium and add the ground beef and Italian sausage. Cook until done. Remove meat from pan but leave the drippings.
- 5. To the pan drippings add the butter. Then add the mushrooms, onion, bell pepper and celery and cook until all are done but not scorched.
- 6. Add the meat mixture to the cooked vegies then mix in the pepperoni. Sprinkle the seasonings and stir to blend over low heat.
- 7. Stir in the tomato sauce and heat thoroughly over low for about 5 minutes. Add the pasta and stir to combine.
- 8. Pour the mixture into the prepared baking dish. Sprinkle with half of the Provolone and half of the Mozzarella cheese.
- 9. Cover and bake for 30 minutes or until bubbly. Remove cover and sprinkle with remainder of cheeses. Return to the oven for about 5 minutes or until all of the cheese has melted.
- 10. Remove from oven and let it sit for at least 7 minutes before serving. Serve with Parmesan cheese if desired.
