Steps:
- Preheat the oven to 425.
- In medium sized pot, over medium heat, melt butter.
- Add the flour and cook for 3 minutes.
- Pour in the hot milk and cook until thickened.
- Add the spinach, cheese, seasonings, horseradish and mustard.
- Mix well.
- Combine with the cooked pasta.
- Place in a greased cassarole dish.
- Bake in oven for 15 minutes or until bubbling.

- HEAT OVEN TO 400F/204C. Line 2 quart casserole with parchment paper (for easy cleanup) or spray casserole dish with oil.
- BOIL MACARONI AND SPINACH: Bring salted water to a boil in a large saucepan and add macaroni. Cook as per package directions. 3 minutes before macaroni is cooked, add frozen or fresh chopped spinach. This will slow the boil, so increase heat to medium high to finish cooking pasta to al dente which is what you want. Drain in colander and set aside.
- MAKE CHEESE SAUCE: Heat butter in saucepan on medium heat. Add flour and whisk to blend. Cook for 2 minutes. Add milk. Whisk to blend. Add salt and mustard (if using). Cook for about 5-7 minutes until thickened. Turn off heat. Mix in 2 1/2 cups (~280g) cheese, reserving remaining 1/2 cup (56g) of cheddar for topping.
- COMBINE SAUCE AND MACARONI: Add cooked macaroni and spinach to cheese sauce. Mix to combine well. Transfer to 2 quart casserole. Sprinkle remaining 1/2 cup shredded cheese casserole.
- BAKE AND SERVE: Bake for 15-20 minutes until cheese is golden brown on top. Serve with slaw, baked beans or tomato salad.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain. Bring 1/2 cup water to a boil in a saucepan, and cook the spinach 4 to 6 minutes, until tender.
- Place the cooked pasta in a medium bowl. In a small bowl, whisk together the eggs and oil. Toss the pasta with the cooked spinach, egg mixture, and bread crumbs.
- Cover the bottom of a 9x13 inch baking dish with 1/3 of the pasta sauce. Pour half of the pasta mixture into the baking dish, and cover with another 1/3 of the pasta sauce. Sprinkle with half of the Cheddar cheese and half of the mozzarella. Layer with remaining pasta mixture, and top with remaining sauce. Sprinkle with the rest of the Cheddar and mozzarella cheeses.
- Bake 45 minutes in the preheated oven, or until bubbly and lightly browned.

EASY CHEESY SPINACH

- Heat the butter in a 12-inch saute pan over moderate heat. Add the onions and cook until soft, about 8 minutes. Whisk in the cream cheese and let melt. Fold in the spinach until evenly combined. Add up to 3 tablespoons water if the mixture seems too dry. Sprinkle the nutmeg on top and season with salt and pepper.
- BYOC: Lemon zest and juice would bring a little bit of sunshine to this dish. Just add with the salt and pepper.
LAYERED MEAT AND COTTAGE CHEESE MACARONI CASSEROLE
This is great to take to potlucks, you can prepare the complete casserole and refrigerate until ready to bake, adjust all seasonings to suit taste. To save time you can cook the sauce up to 48 hours in advance, in fact I advise to do so this will allow the flavors will blend together. If you prefer creamier layers increase the cottage cheese to 4 cups. Prep time does not include cooking the tomato sauce.

- Grease a 13 x 9-inch baking dish.
- For the sauce; cook the ground beef or sausage meat with onion and garlic, chili powder, basil, oregano and cayenne; cook until browned; drain fat.
- Add in tomato paste and stir over medium-low heat for 2 minutes.
- Add in crushed tomatoes, bring to simmer and cook uncovered over medium-low heat stirring occasionally for 1-1/2 to 2 hours (the longer this sauce cooks the thicker and richer it will be, if you find that the sauce is too thick add in some water and continue cooking).
- Season with salt and pepper; set aside.
- Meanwhile cook the macaroni pasta until just al dente (do not overcook the pasta) drain then place into a bowl.
- Add in 3 cups cottage cheese, 1 cup grated mozzeralla cheese, 1/4 cup grated Parmesan cheese and 1/4 teaspoon black pepper; mix to combine with a wooden spoon.
- Spread about 1-1/2 cups cup meat sauce into the bottom of the prepared baking dish.
- Top meat sauce (just dollup the meat sauce then spread with a spoon, you do not have to cover completely with the meat sauce) then with 1/3 of the cottage cheese/macaroni mixture, then sprinkle about 1 cup shredded mozzeralla or cheddar cheese.
- Repeat the layers 2 more times (make certain to save some meat sauce for the top of the casserole).
- Top with remaining meat sauce.
- In a small bowl combine the topping ingredients together until blended, then sprinkle over the top of the casserole.
- At this point you can cover the casserole and refrigerate until ready to bake.
- Bake at 350 degrees for 40-50 minutes or until hot and bubbly.
- Let stand for 15 minutes before serving.
- Delicious!

EASY-CHEESY SPINACH CASSEROLE
It doesn't get much easier than this... no sautéing and hardly any chopping - everything is cooked in one dish before putting in the oven (I even bake it in my toaster over). A great way to use up spinach that's been in the fridge for a while. Use whole-wheat pasta for extra nutrients. You could probably sub rice for the pasta. Add a dash of hot sauce to jazz it up a bit. Measurements and cooking times are approximate.

- Preheat oven to 350°F.
- Combine broth, spinach (don't bother chopping) and garlic in a saucepan; bring to a boil. Cook 5 minutes until spinach is wilted. Cream using a stick blender.
- Bring back a boil, add pasta, and simmer until pasta is al dente.
- Dilute starch in an equal amount of cold water. Stir into pot along with cream cheese. Simmer until thickened; remove from heat.
- In a separate bowl, whisk eggs together. Stirring constantly, add several spoonfuls of the mix to the eggs (to warm them up). Stir into remaining pasta & sauce mix. Pour into an oven-safe dish (a 9-inch pie plate is the perfect size).
- Mix breadcrumbs with grated cheese and sprinkle over top. Bake 10 approximately 10 minutes, or until a toothpick inserted in centre comes out clean. Turn oven to broil and cook until cheese turns golden - watch constantly.

- Heat oven to 350°F Cook macaroni according to package directions (or to your liking). Drain and set aside.
- Melt butter in 10" skillet until sizzling; stir in onion, Italian seasoning, pepper and garlic. Cook over medium high heat, stirring constantly, until onion is softened (2 to 3 minutes). Stir in spinach.
- Continue cooking, stirring constantly, until spinach is heated through (2 to 4 minutes). Stir in cooked macaroni and all remaining ingredients except spaghetti sauce and bread crumbs.
- Sprinkle bread crumbs into buttered 3 quart casserole. Then, spoon pasta mixture into prepared casserole on top of breadcrumbs, pressing gently. Bake for 20 to 25 minutes or until heated through.
- Serve spaghetti sauce over baked pasta, if desired.

- In a large wok or frying pan heat oil and cook onion and garlic in a small amount of oil until transparent.
- Add spinach and cook until wilted. Set aside.
- Brown ground beef and season with garlic salt, salt and pepper to taste. Set aside.
- Combine cooked pasta, spinach, ground beef, cheese (amount to your preference, my family likes it cheesy!) and soup.
- Add salt and pepper to taste.
- Place in a large baking dish, cover in a layer of shredded cheese.
- Cover with tin foil and place in a 350°F oven for 30 minutes.
- Uncover and place back in oven for another 10 minutes.
