This got me first place in a Spam® 'cookoff' that a local TV station held. They are fast and easy hors d'oeuvres and are always a hit during Sunday football!

1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), grated
1 cup shredded Cheddar cheese
1 cup all-purpose biscuit baking mix
1 teaspoon water
¼ teaspoon ground cayenne pepper

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Mix together the meat, Cheddar cheese, baking mix, water, and cayenne in a large bowl. Form the mix into 1-inch balls and place on a greased baking sheet.
  • Bake in preheated oven until golden brown, about 12 to 14 minutes. Serve warm.

1 stick (8 tablespoons) unsalted butter
1 cup whole milk
1 cup all-purpose flour
6 large eggs
1 teaspoon kosher salt
1 teaspoon ground black pepper
1 cup grated Gruyere cheese

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  • Melt the butter in a medium saucepan over medium heat. Add the milk and heat until small bubbles start to form around the edges. Add the flour and cook, stirring constantly with a wooden spoon, until the mixture is smooth and glossy and a dough ball forms. (The dough should start to pull away from the edges of the pan.)
  • Transfer the dough to a stand mixer fitted with the paddle attachment. Mix in 5 of the eggs, one at a time, on medium speed until completely combined. Stir in the salt, pepper and 3/4 cup of the Gruyere.
  • Spoon large tablespoons of the batter onto the prepared baking sheet, leaving about 1 inch between each puff. Whisk the remaining egg and use it to brush the tops of the puffs. Sprinkle over the remaining 1/4 cup Gruyere.
  • Bake until puffed and golden, about 25 minutes. Serve hot.

1/8 teaspoon cayenne pepper
1 cup all-purpose flour
4 eggs

Steps:

  • In a large saucepan, bring the water, butter, salt and cayenne to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Stir in Gruyere and mustard. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Sprinkle with Parmesan cheese. Bake at 425° for 15-20 minutes or until golden brown. Even bigger, they can be split and filled with ham, chicken, tuna salad, or even more cheese! These are easier to make than the recipe sounds, yet the result looks impressive enough that you can tell your friends you slaved over them.

1 cup all-purpose flour
½ teaspoon salt
½ teaspoon fresh ground black pepper
½ teaspoon dried thyme
½ teaspoon chili powder
1 pinch cayenne pepper
1 cup whole milk
1 stick butter (cut into 1/2 inch cubes)
6 large eggs (at room temperature)
½ cup grated Parmesan or Romano cheese
¾ cup grated Gruyere cheese
1 ounce pepperoni, diced
2 tablespoons milk
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine the flour with the salt, black pepper, thyme, chili powder, and cayenne pepper in a large bowl.
  • Put the milk and butter in a large saucepan and bring to a boil. When the butter melts, turn heat to low. Add the seasoned flour all at once. Stir vigorously with a wooden spoon until the dough forms a ball. Remove from heat.
  • Separate the white and yolk from one egg, reserving the yolk for glazing.
  • Put the dough into a large mixer bowl. Beat at medium speed for one minute. Then beat in one egg and the extra egg white. Beat until completely absorbed into the dough. Then add the remaining 4 eggs, one at a time, waiting each time until the previous egg is completely absorbed. After all 5 eggs (plus the one egg white) have been incorporated, the dough should be smooth and satiny.
  • Add the Parmesan and Gruyere cheeses, and pepperoni if you are using it. Incorporate thoroughly into the dough.
  • Use a pastry bag to pipe dough onto 2 ungreased baking sheets. You can also drop dough from a teaspoon. For tiny puffs, mounds should be about 1/2 inch in diameter. From small appetizers, mounds should be 1 inch in diameter. For puffs large enough for filling, mounds should be 1 1/2 inches in diameter. Keep the size of the puffs uniform so they bake properly. Space puffs about 1 inch apart.
  • Beat the remaining egg yolk with 2 tablespoons of milk to make a glaze. Lightly brush the tops of the puffs with glaze before baking. Sprinkle tops with your Parmesan cheese.
  • Bake in pre-heated oven for 10 minutes (5 minutes for tiny puffs). Reduce heat to 300 degrees F (150 degrees C). Bake 10 minutes more for tiny puffs; 15 to 20 minutes longer for medium or large puffs, or until puffs are golden brown. Test by removing a puff from the oven and breaking it open. The inside should be baked through. If it is still doughy or wet, bake another 5 minutes.
  • Remove pans from oven and leave puffs on pans until cool enough to serve.

1/2 cup milk
1 stick (4 ounces/113 grams) unsalted butter, cut into pieces
1 tablespoon sugar
1 teaspoon salt
1 cup (120 grams) all-purpose flour
3 to 4 large eggs, at room temperature
1 cup grated Cheddar cheese
1/2 cup grated Gruyere cheese

Steps:

  • Preheat the oven to 425 degrees F. Line 2 baking sheets with parchment. Set aside.
  • In a saucepan, combine 1/2 cup water with the milk, butter, sugar and salt and stir over low heat until the sugar, butter and salt have melted. Raise the heat to medium and bring to a healthy simmer.
  • Take from the heat and immediately add the flour. Stir with a wooden spoon until the mixture thickens, is smooth and no flour lumps remain. Return to the heat and cook, stirring, until a film forms on the bottom of the pan. Continue stirring, careful not to scrape up the film, for a minute or two more.
  • Transfer the mixture (panade) to a food processor. Mix for a minute to dissipate the heat. Add the eggs one at a time with the processor running. Pay attention to the consistency of the paste. It should be smooth and shiny, so you may only need 3 of the eggs. Stir in the cheese.
  • Using a small cookie scoop, scoop generous mounds onto the parchment-lined baking sheets, spacing them an inch apart. Place in the oven, immediately reduce the heat to 375 degrees F and bake for 20 to 25 minutes, or until the cheese puffs are golden brown.

4 ounces cheddar cheese, cubed
1/2 cup butter
2 egg whites, stiffly beaten
1 loaf unsliced white bread, crusts removed,and cut into 1 inch cubes (1 pound)

Steps:

  • Melt cream cheese and cheddar cheese, and butter in the microwave or in top of a double boiler.
  • Remove; fold in beaten egg whites.
  • Dip the bread cubes in the mixture to coat.
  • Place on baking sheet; cover with plastic wrap.
  • Chill overnight (the coated bread cubes can also be frozen for later baking).
  • Remove from the fridge, remove plastic wrap.
  • Bake at 375 degrees for 10-12 minute, or until brown.
  • These puffs freeze well after baking.

2 heaped tablespoons butter
4 heaped tablespoons flour
1½-2 cups milk
1 cup grated mature cheddar cheese
pinch of cayenne pepper
salt & pepper to taste
1 small head broccoli (cut into florets and steamed until al dente)
1 roll ready-made puff pastry (cut into 12 squares)
1 egg (beaten)

Steps:

  • To make the sauce, melt the butter in a saucepan and add the flour.
  • Stir for a minute over medium heat then slowly whisk in the milk. The sauce needs to be very thick (but still creamy) in consistency so you might not need all the milk.
  • When the sauce is smooth, creamy and thick, turn the heat down and cook the sauce out for approximately 7-10 minutes, stirring regularly, until the sauce is velvety smooth and all flouriness has been cooked out.
  • When the sauce is cooked, remove from the heat then add the cheese, steamed broccoli, cayenne pepper and seasoning and stir to combine. Cover the surface of the sauce with a piece of plastic wrap to prevent a film from forming then set aside.
  • Pre-heat the oven to 180°c.
  • Place the pastries in the holes of a shallow muffin tin, pressing down properly.
  • Spoon in the broccoli filling then fold over the edges of the pastry.
  • Brush with the beaten egg and place in the oven.
  • Allow the pastries to bake for 20-25 minutes until they pastry is golden, crisp and cooked through.
  • Remove from the oven and allow to rest for 10 minutes before serving.

1 Cup Plain White Flour, 145 grams
2 teaspoons Baking Powder
1 Pinch Salt & Pepper

Optional: pinch of paprika or curry powder or any other herbs or spices you enjoy, ham or fried bacon.

Steps:

  • Preheat Oven to 200C Bake, 390F
  • Prepare a baking tray with non stick cooking spray

1/4 cup olive oil
1/4 cup vegetable oil
1 teaspoon salt
2 cups tapioca flour
2 eggs
1 cup queso fresco shredded cheese
1/2 cup Parmesan cheese (You can use any combo of cheese...all parmesan, some cheddar, switch it up!)

Steps:

  • Preheat oven to 450 degrees F. Line a sheet pan with parchment paper and set aside.
  • Combine milk, oils, and salt in a medium sized saucepan. Bring to a boil (just a little one! It'll boil over quickly if you let it go!) over medium heat, stirring occasionally. Remove from heat.
  • Stir tapioca flour into milk mixture. It will be sticky and look like something you'd never, ever want to put in your mouth. That's okay. Keep on going!
  • Transfer the dough to the bowl of an electric mixer fitted with the paddle attachment. Beat at medium speed for about 3 minutes or until dough begins to smooth out and is cooled. You should be able to pinch the dough between your fingers without feeling like your thumbprints are being singed off.
  • Add eggs one at a time, beating after each addition until the egg is fully incorporated. Beat in cheese until fully combined.
  • Scoop mounded tablespoons of dough onto the parchment lined pan, leaving approximately an inch of space between each one. If the dough becomes too sticky, just dip the spoon in warm water between scoops.
  • Place the puffs in the oven and turn heat down to 350 degrees F. Bake for 25-30 minutes or until balls are puffed and lightly browned. Serve warm. Puffs stay good for 3-4 days. Simply reheat in a toaster oven.
