CHEESY SCRAMBLED EGGS WITH SPINACH
This easy meal is perfect to save you time for lunch or dinner when you are on the run. Over the holidays we are all time-crunched and this recipe will help you through it nutritionally and deliciously.

Steps:
- Whisk the eggs in a small bowl and season with the Kosher salt and freshly ground pepper and set aside.
- Add the olive oil to a cast-iron pan or non-stick skillet and place over medium heat. Saute the garlic for 30 seconds until fragrant and then add in the spinach. Stir and cook for 1 min. to wilt.
- Add in the eggs and cook stirring occasionally until just cooked but still slightly wet. Remove from the heat and the eggs will continue to set-up.
- Add the Parmesan cheese and stir. Sprinkle on the red pepper flakes and serve immediately.

SCRAMBLED EGGS WITH SPINACH
Steps:
- Gather the ingredients.
- Coarsely chop the baby spinach leaves.
- Heat the olive oil in a large heavy skillet and cook the onion and garlic until crisp-tender, about 5 minutes, stirring frequently.
- Add the chopped spinach to the skillet and cook, stirring often, until the spinach is tender, about 5 to 7 minutes. Be sure to cook this until the water that leaches out of the spinach has evaporated.
- In a medium bowl, beat the heavy cream with the eggs, salt, pepper, and thyme until foamy.
- Add the egg mixture to the skillet and cook and stir so the eggs scramble with the spinach, about 4 to 5 minutes longer. Sprinkle with the cheese and serve.

HEALTHY SPINACH SCRAMBLED EGGS

- Gather the ingredients.
- Heat a large skillet over medium-high heat and coat it well with cooking spray. If you prefer, use a nonstick skillet for easier cleanup later.
- Crack the eggs into a medium-sized dish. Using a wire whisk, beat the eggs and break up the yolks completely.
- Add the milk to the egg mixture, followed by the salt and ground black pepper. Whisk the mixture together well.
- Pour the egg mixture into the heated pan, using a fork to stir the egg mixture continuously as it cooks. (If you are using a nonstick skillet, stir the eggs with a wooden spoon or silicone tool since a fork can scratch the pan's surface.)

- Take your eggs and crack them into a medium bowl. Scramble with a fork or a whisk.
- Add your shredded cheese to the eggs and mix to combine.
- Heat a medium skillet over medium heat. Add the olive oil and let heat for 30 seconds.
- Add the spinach and saute for 2 minutes, stirring freqently until spinach is wilted.
- Add your egg mixture to the pan and cook on medium-low heat for 2-3 minutes, stirring frequently until eggs are cooked.
- Plate, then season with salt and pepper. Top with more cheese and red pepper flakes if desired.

CHEESY SCRAMBLED EGG AND POTATO SKILLET
This makes a great weekend brunch or a light weekday dinner served with a side salad and crusty bread. You will need a large skillet for this, an electric frypan works well also. If possible use the large size hash browns for this, red potatoes, peeled and cut into 3/4-inch cubes can be used in place of hash browns.

- In a large skillet cook the bacon pieces over medium heat for about 4-5 minutes.
- Add in hash browns and continue cooking stirring until potatoes are browned and crisp (about 12-15 minutes).
- Add in onions, bell pepper and jalapeno (if using) continue to cook until veggies are tender (about 3-4 minutes).
- Season with seasoned salt and black pepper to taste.
- Skim some of the fat off if desired.
- In a bowl whisk together the eggs with whipping cream until well combined; pour over the veggies/potato mixture in the skillet, then stir with a wooden spoon or spatula to combine.
- Cook over medium heat gently lifting portions with spatula so uncooked portion flows underneath or until the eggs are just set (about 4-5 minutes).
- Sprinkle with grated cheddar cheese, then let stand for 2-3 minutes until melted.
- Sprinkle with chopped green onions.
- Delicious!

- Over medium to medium low heat, melt butter in frying pan.
- Add the wedges of laughing cow cheese and slowly melt.
- In mixing bowl, crack and whisk eggs until puffy (or until the cheese has melted in the pan).
- Add eggs to pan & turn with a spatula (you don't want them to get brown marks).
- When the eggs are pretty well set, add the shredded cheddar and take the pan off the heat. Mix the cheddar in by folding over the eggs until cheddar is melted.

I like to start the day with a flavorful and healthy breakfast. The best thing about this is it can be made in a matter of minutes.

- Spray a pan with olive oil spray.
- Crack one full egg into the pan, adding only the egg whites of 2 other eggs.
- Sprinkle dried garlic and black pepper to taste (garlic salt can be added instead if you prefer that).
- When the egg has just hardened on the bottom (the eggs on the top should still be in liquid form), scramble the eggs.
- Squeeze any excess water from the spinach leaves and add them to the eggs. Let the spinach leaves cook until it's time to stir the scrambled eggs again.
- Cook until the spinach leaves are wilted.
- Add the goat cheese (you can use crumbles if you prefer) to the SIDE of the plate and use as a "dip". I find if you mix the goat cheese into the scrambled eggs, it dilutes the flavor of the goat cheese greatly.

- Crack the eggs into a bowl and mash them up with a fork.
- (Be sure to wash the fork to prevent raw egg poisoning.) Put the butter on a pan on a stove-top set on high.
- Let it melt and move it around until it covers the entire pan.
