This is a delicious side dish with cheese, potatoes, and Ranch! What's not to love?! I am always begged to bring this wherever I go. It is a great complement to a barbeque or any potluck meal. I have experimented with using more chili powder and using seasoning salt instead of regular salt.

4 pounds russet potatoes, cut into 1/4 inch cubes
2 teaspoons chili powder
1 teaspoon salt
½ teaspoon ground black pepper
6 tablespoons butter, cubed
1 (8 ounce) package shredded colby-Monterey Jack cheese blend
1 (8 ounce) bottle Ranch dressing

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
  • Place the potatoes in the baking dish. Season with chili powder, salt, and pepper. Evenly distribute the butter over the potatoes.
  • Cover dish with aluminum foil, and bake 1 hour in the preheated oven, until potatoes are tender. Remove from oven, and mix in the cheese and Ranch dressing. Continue cooking 10 minutes, or until cheese is melted and bubbly.

It is so quick to make as a side dish and it tastes great! Wonderful with steaks. Also can be made with low-fat ingredients. Just omit the butter.

5 -6 large potatoes
3 tablespoons butter
1 1/4 cups Hidden Valley® Original Ranch® Dressing
1/2 cup milk
1/2 cup cheddar cheese
garlic salt

Steps:

  • Peel Potatoes and cut in bite size pieces. Boil on high heat until tender with a fork. Not falling apart mushy. Drain. Place back in pan. Combine all ingredients and let warm up making sure cheese is melted. Add garlic salt to taste. Serve!
