CHEESY BROCCOLI PUFFS
This recipe is sponsored by Birds Eye®. These impressive Thanksgiving appetizers are easy to prep thanks to frozen broccoli and store-bought puff pastry. Tucked inside each golden packet is a delicious mixture of vegetables, melty mozzarella, creamy ricotta and fragrant dill. A sprinkle of sesame seeds is the perfect finishing touch.

Steps:
- Preheat the oven to 400 degrees F. Line 3 baking sheets with parchment paper or silicone baking mats.
- Cook the broccoli according to the package directions. Transfer to a colander to drain until cool, about 5 minutes.
- Transfer the broccoli to a large bowl and add the mozzarella, feta, ricotta, dill, chives, red pepper flakes, lemon zest, 1 teaspoon salt and 1/2 teaspoon pepper. Stir together with a large spoon, using the back of it to crush any large broccoli florets. Set aside.
- Whisk the egg with 1 tablespoon water in a small bowl. Set aside.
- Roll out a sheet of the puff pastry on a clean work surface into a 12-inch square, dusting with flour as needed to prevent sticking. Cut the puff pastry into sixteen 3-inch squares with a pizza wheel or knife. Place 1 tablespoon of the broccoli mixture in the center of each square. Working with a square at a time, pinch together 2 opposite corners, then pinch together the remaining 2 corners to create a small packet. Transfer the packets to a baking sheet. Repeat with the remaining puff pastry and filling. Brush the packets with the egg wash and sprinkle with the sesame seeds.
- Working in batches if needed, bake the packets until golden and bubbly, 20 to 22 minutes.

Steps:
- Make pâte à chou:
- Preheat oven to 400°F. and lightly grease 2 large baking sheets.
- In a heavy saucepan bring water, butter, and salt to a boil over high heat and reduce heat to moderate. Add flour all at once and beat with a wooden spoon until mixture pulls away from side of pan. Remove pan from heat and add eggs, 1 at a time, beating well after each addition. Continue beating until batter is very smooth and falls softly from spoon.
- Drop pâte à chou by rounded teaspoons 1 1/2 inches apart onto baking sheets and bake in upper and lower thirds of oven, switching position of sheets halfway through baking, 25 minutes, or until puffed, golden, and crisp. Transfer puffs to rack and cool.
- Make filling while puffs are baking:
- In a small heavy saucepan cook onion slice in butter over moderately low heat, stirring, 3 minutes and discard onion. Stir in flour and cook roux, stirring, 3 minutes. Add milk in a steam, stirring until smooth, and simmer, stirring, until very thick, about 2 minutes. Add Gruyère, stirring until melted. Stir in salt and pepper to taste and cool filling.
- With a small sharp knife poke a hole in top of each puff and gently pull apart just enough to fill with a rounded 1/2 teaspoon of filling, reclosing puff. Arrange filled puffs on baking sheets. Chill puffs at least 1 hour and up to 4.
- Preheat oven to 350°F.
- Bake chilled puffs in middle of oven 10 minutes (do not bake longer because filling may seep out of puffs) and serve immediately.
CHEESY PUFFS
Steps:
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
- Melt the butter in a medium saucepan over medium heat. Add the milk and heat until small bubbles start to form around the edges. Add the flour and cook, stirring constantly with a wooden spoon, until the mixture is smooth and glossy and a dough ball forms. (The dough should start to pull away from the edges of the pan.)
- Transfer the dough to a stand mixer fitted with the paddle attachment. Mix in 5 of the eggs, one at a time, on medium speed until completely combined. Stir in the salt, pepper and 3/4 cup of the Gruyere.
- Spoon large tablespoons of the batter onto the prepared baking sheet, leaving about 1 inch between each puff. Whisk the remaining egg and use it to brush the tops of the puffs. Sprinkle over the remaining 1/4 cup Gruyere.
- Bake until puffed and golden, about 25 minutes. Serve hot.
CHEESE PUFFS (GOUGERES)
Light, airy, cheese puffs are a versatile addition to a meal or appetizer plate. Tiny, they're like soup nuts. Larger, they pair well with beer or wine. Even bigger, they can be split and filled with ham, chicken, tuna salad, or even more cheese! These are easier to make than the recipe sounds, yet the result looks impressive enough that you can tell your friends you slaved over them.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Combine the flour with the salt, black pepper, thyme, chili powder, and cayenne pepper in a large bowl.
- Put the milk and butter in a large saucepan and bring to a boil. When the butter melts, turn heat to low. Add the seasoned flour all at once. Stir vigorously with a wooden spoon until the dough forms a ball. Remove from heat.
- Separate the white and yolk from one egg, reserving the yolk for glazing.
- Put the dough into a large mixer bowl. Beat at medium speed for one minute. Then beat in one egg and the extra egg white. Beat until completely absorbed into the dough. Then add the remaining 4 eggs, one at a time, waiting each time until the previous egg is completely absorbed. After all 5 eggs (plus the one egg white) have been incorporated, the dough should be smooth and satiny.
- Add the Parmesan and Gruyere cheeses, and pepperoni if you are using it. Incorporate thoroughly into the dough.
- Use a pastry bag to pipe dough onto 2 ungreased baking sheets. You can also drop dough from a teaspoon. For tiny puffs, mounds should be about 1/2 inch in diameter. From small appetizers, mounds should be 1 inch in diameter. For puffs large enough for filling, mounds should be 1 1/2 inches in diameter. Keep the size of the puffs uniform so they bake properly. Space puffs about 1 inch apart.
- Beat the remaining egg yolk with 2 tablespoons of milk to make a glaze. Lightly brush the tops of the puffs with glaze before baking. Sprinkle tops with your Parmesan cheese.
- Bake in pre-heated oven for 10 minutes (5 minutes for tiny puffs). Reduce heat to 300 degrees F (150 degrees C). Bake 10 minutes more for tiny puffs; 15 to 20 minutes longer for medium or large puffs, or until puffs are golden brown. Test by removing a puff from the oven and breaking it open. The inside should be baked through. If it is still doughy or wet, bake another 5 minutes.
- Remove pans from oven and leave puffs on pans until cool enough to serve.

Steps:
- Unroll the pastry and sprinkle most of the cheese over one half of the sheet. Fold the pastry in half to cover the cheese and seal it in.
- Dust your rolling pin and work surface with a little flour and put your pastry sheet on it. Roll it out until doubled in size.
- Heat oven to 200C/180C fan/gas 6 and line two baking sheets with baking parchment.
- Using cookie cutters, cut the pastry into shapes and put them on the prepared baking sheets. (Put the cutters on the dough close together so that less pastry is wasted. You can fold the trimmings back on themselves and re-roll to cut out more shapes.)
- Brush the shapes with milk and add a pinch of cheese and a sprinkling of your chosen topping, if using.
- Bake in the oven for 10-12 mins or until risen and golden, then transfer to a serving plate. Will keep in an airtight container for 3 days.

Steps:
- Preheat the oven to fan 170C/conventional 190C/gas 5. Place a baking sheet on a centre shelf. Break or chop the spaghetti into finger lengths. If using uncooked spaghetti, boil it in a saucepan of salted water until quite soft, for about 7-10 minutes, then drain.
- Melt the butter in a medium saucepan and remove a tablespoonful to a 1¼ litre ovenproof soufflé dish. Brush the melted butter well around the base and sides. Add the breadcrumbs and shake around to coat thoroughly.
- Heat the milk to boiling in another pan and set aside. Stir the flour and mustard powder into the pan with the remaining butter and heat for a minute, stirring, until sandy coloured. Gradually beat in the hot milk until you have a thick, smooth sauce. Remove from the heat.
- Stir in all but 2 tbsp of the cheddar, all the spring onion and the shredded leaves. Stir the spaghetti into the sauce and mix in the egg yolks (you can prepare to this stage up to a day ahead).
- Place the 4 egg whites in a large grease-free bowl with a pinch of salt. Whisk until you have a firm foam with floppy peaks. Beat a quarter of this into the spaghetti mixture to loosen it, tip into a large bowl and fold in the rest.
- Spoon the mixture into the prepared dish and level the top. Run your thumb around the edge of the dish to make a "gully" and sprinkle over the last of the cheese. Put the soufflé on the hot tray in the oven and bake for 30-35 minutes until it has risen and is golden. Serve immediately.

- Utz Cheese Balls. Ah, the old classic. You can never really go wrong with a nice tub of cheese balls. Pro tip: they pair nicely with a glass of full-bodied red wine.
- Goldfish Puffs Snacks. Don't knock 'em till you've tried 'em. Yes, Goldfish Puffs are a little enigmatic, but they are actually quite delicious, as if a Goldfish and a Cheeto had babies.
- Cheetos Crunchy. Crunchy Cheetos are like mediocre sex. You never really crave them, but once you have them, you're fairly satisfied.
- Wise Puffed Cheez Doodles. Let's be honest, these are the stepchildren of cheese puffs. No one is reaching for Wise Cheez Doodles when Cheetos are anywhere in sight.
