1 (20 ounce) package refrigerated shredded hash brown potatoes
2 cups shredded Cheddar cheese
1 cup sour cream
1 medium onion, chopped
¼ cup butter or margarine, melted
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F. Lightly spray a 13 x 9-inch baking pan with non-stick cooking spray. Cut sausage into 1/2" cubes. Combine all ingredients in a large bowl.
  • Spread mixture evenly in prepared pan. Bake 40-45 minutes or until lightly browned. Let stand 5 minutes before serving.

3 cups potatoes, peeled, boiled and cut in cubes
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 Velveeta cheese, cubed
1/2 cup sharp Cheddar cheese
1 # skinless smoked sausage
1/8 teaspoon paprika

Steps:

  • Cut sausage in half, lengthwise, and then chop into 1/2" pieces. Cook in a frying pan for about 10 minutes, turning frequently to slightly brown. Put cooked and diced potatoes in a 2 quart casserole dish, add the meat and give it a gentle toss. Mix all remaining ingredients (except for shredded Cheddar cheese & paprika)in a medium saucepan over a medium heat until warm, melted and smooth, use a whisk and stir constantly. Pour cheese sauce over the potatoes and meat. Sprinkle with the Cheddar cheese and then the paprika. Bake in a preheated oven at 350°F for 35 to 45 minutes.

1 teaspoon butter
1 teaspoon olive oil
3 cups elbow macaroni
1 pound smoked beef sausage, cut into bite-size pieces
2 (14.5 ounce) cans stewed tomatoes, chopped, juices reserved
1 sweet onion, diced small
2 ounces shredded sharp Cheddar cheese
2 ounces shredded Monterey Jack cheese
2 teaspoons olive oil, or more to taste
1 teaspoon dried parsley flakes
¼ teaspoon onion powder, or more to taste
¼ teaspoon garlic powder, or more to taste
salt and ground black pepper to taste
1 (8 ounce) package shredded American cheese (such as Kraft® Melts)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
  • Stir sausage, tomatoes and reserved juice, onion, Cheddar cheese, Monterey Jack cheese, 2 teaspoons olive oil, parsley, onion powder, garlic powder, salt, and ground black pepper together in a large bowl. Add elbow macaroni and stir. Pour macaroni mixture into prepared baking dish, sprinkle with American cheese, and cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove aluminum foil from baking dish, increase heat to 425, and bake until sauce is bubbly, and the top is golden brown, about 15 minutes. Cool for 15 minutes before serving.

I am making a few adjustments based on our preferences, but will put the original recipe in parentheses.

1/4 teaspoon black pepper

Steps:

  • Preheat oven to 350.

10 -12 medium potatoes (peeled or skin on, chopped to about 2in)
2 links smoked sausage, cut up
2 -4 cups cheese (of your choice, depends on how cheesy you want it)
1/2 cup butter (salted or unsalted, 1/2 melted, 1/2 sliced)
salt (to taste)
pepper (to taste)
garlic powder (to taste)
1 small onion, chopped (I use frozen chopped)
1 small green pepper, chopped (I use frozen chopped)

Steps:

  • Preheat oven to 400 degrees.
  • In a 9x13 pan place chopped potatoes.
  • Pour melted butter on potatoes, stir until well coated.
  • Sprinkle with salt, pepper, and garlic powder to taste and stir.
  • Place the remaining butter on top.
  • Cover with foil and bake for 30 minutes.
  • While potatoes are cooking saute onion and green pepper in pan.
  • After 30 mins are up add sausage and onion/green peppers to potatoes.
  • Stir to coat and replace foil.
  • Bake an additional 30 minutes or until potatoes are tender.
  • Remove from oven and add cheese, place in oven for about 5 minutes or until cheese is melted.
  • Stir and Serve.

2 cups milk

1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage (Eckrich is my favorite brand)
1/8 tsp paprika

Steps:

  • Cut sausage in half, lengthwise and then chop into ½ inch half moon cuts. Cook in a saute pan for about 15 minutes turning frequently, until slightly brown. Meanwhile, put cooked and diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss. Mix butter, flour, milk, salt, pepper and Velveeta cheese in a saucepan over medium heat until warm, melted and smooth. Use a whisk and stir constantly. Pour white cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top and then sprinkle paprika evenly over the top.
