1 (30 ounce) package frozen hash brown potatoes, thawed
1 (12 ounce) package pre-cooked ham steak, diced
2 cups shredded sharp Cheddar cheese, or more to taste
1 onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
½ cup butter, melted
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Stir hash browns, ham, Cheddar cheese, onion, cream of chicken soup, sour cream, and butter in a large bowl; season with salt and black pepper. Transfer mixture to prepared baking dish and cover with aluminum foil.
  • Bake until bubbly and cheese is melted, 45 minutes to 1 hour. Remove foil and continue baking until brown, about 15 minutes more.

This rich combination of ham and potatoes in a creamy cheese sauce is comfort food in a casserole dish.

Cooking spray or butter, for coating the pan
2 pounds russet potatoes (about 4 medium)
1 cup diced, cooked ham (about 5 1/2 ounces)
1/2 medium yellow onion
8 ounces sharp cheddar cheese, shredded (about 2 cups)
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups whole or 2% milk
1 teaspoon kosher salt, plus more as needed
1/8 teaspoon freshly ground black pepper

Steps:

  • Arrange a rack in the top third of the oven and heat the oven to 350°F. Coat a 2-quart baking dish (such as an 8x8x2-inch) with cooking spray or butter.
  • Peel and cut 2 pounds russet potatoes into 1/2-inch cubes (about 5 1/2 cups). Place in a large bowl and add 1 cup diced ham. Dice 1/2 medium yellow onion. Grate 8 ounces sharp cheddar cheese on the large holes of a box grater (about 2 cups).
  • Melt 2 tablespoons unsalted butter in a medium saucepan over medium heat. Add the onion and sauté until softened, about 5 minutes. Sprinkle with 2 tablespoons all-purpose flour and cook, stirring constantly, for 1 minute. Add 2 cups whole or 2% milk, 1 teaspoon kosher salt, and 1/8 teaspoon black pepper, and stir until the flour is dissolved. Bring to a simmer, stirring often. Simmer until thickened to the consistency of cream sauce, 2 to 3 minutes more. Add 1 1/2 cups of the cheese and stir until completely melted. Taste and season with more kosher salt as needed.
  • Pour over the potato and ham and stir to combine. Transfer to the baking dish and spread into an even layer.
  • Bake until the potatoes in the center of the baking dish are knife tender, 1 hour and 15 minutes to 1 1/2 hours. Sprinkle the remaining 1/2 cup cheese over the casserole. Turn the oven on to broil and broil until the cheese on top is melted and browned in spots, 2 to 3 minutes. Let cool 10 minutes for the sauce to thicken before serving.

Uncover and bake until potatoes are tender, 45-55 minutes longer. , Freeze option: Cover and freeze unbaked casseroles. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casseroles as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

1 small yellow onion, diced
3 tablespoons all-purpose flour
1 cup half-and-half
½ cup whole milk

¼ teaspoon paprika
4 large russet potatoes, peeled and thinly sliced
1 ½ cups chopped hickory smoked ham
½ cup grated Cheddar cheese
½ cup grated Monterey Jack cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a baking dish.

5 -6 large russet potatoes, peeled, diced, and boiled until almost done
1/2 lb ham, diced
1 sweet onion
2 cups shredded cheddar cheese
2 cups sour cream
1 (10 ounce) can cream of chicken soup or 1 (10 ounce) can celery soup
1/4 cup butter
salt and pepper

Steps:

  • Saute ham and onion together until ham is slightly browned and the water has cooked off.
  • Combine butter and can of soup over low heat. Cook until butter has melted and soup and butter have combined.
  • Over low heat, add cheese and sour cream to soup/butter mixture, stirring constantly until melted.

1 cup milk
4 eggs
1/4 teaspoon pepper
1 cup cooked cubed ham
1/4 cup sliced green onion
1/4 cup chopped red bell pepper
1 cup shredded cheddar cheese

  • Heat oven to 375º.
  • Press potatoes on the bottom and up the sides of a greased 9-inch pie plate.
  • Bake for 10 minutes.
