A delicious casserole that has a surprise spinach layer in addition to the traditional ham and potatoes. All baked in a delicious cheesy sauce.

3 tablespoons butter or 3 tablespoons margarine
3 tablespoons all-purpose flour
2 cups milk
6 ounces shredded cheddar cheese
1 tablespoon dijon-style mustard
2 cups cooked ham, cut into thin strips
1 (24 ounce) package frozen hash brown potatoes, thawed
1 (10 ounce) package frozen chopped spinach, thawed and drained

Steps:

  • Preheat oven to 350 degrees.
  • For the cheese sauce; in a saucepan melt butter or margarine; stir in flour.
  • Add milk all at once.
  • Cook and stir until bubbly; cook 1 minute more.
  • Remove from heat.
  • Stir in cheddar cheese and mustard; set aside.
  • Place half of the ham strips in an ungreased 2-quart casserole dish.
  • Top with half of the hash browns and half of the cheese sauce.
  • Spoon the spinach on top of the cheese sauce.
  • Repeat layers of the remaining ham, potatoes and sauce.
  • Bake uncovered 30-40 minutes or until heated through.

12 ounces ham, cubed (or sliced)
1 (32 ounce) bag frozen hash brown potatoes
1 (24 ounce) bag cheddar cheese
1 (10 ounce) package frozen creamed spinach
1 tablespoon spicy mustard
1 small onion
2 cups milk
3 tablespoons butter
3 tablespoons all-purpose flour
2 eggs, beaten
salt
pepper

Steps:

  • Using a skillet, melt your butter. Add the flour and the milk.
  • Cook until sauce thickens; remove from heat.
  • Add eggs, cheese, mustard, salt and pepper.
  • In another skillet, sauté the onion in some butter (I use about 1 tsp).
  • When onion is cooked, add the frozen creamed spinach (I microwave the spinach first for a couple of minutes to speed up the process).
  • In a casserole dish, layer half the ham, then half of the shredded potatoes and half of the cheese mixture.
  • Repeat until all is used.
  • Cover and bake at 350°F for about 46 minutes.
  • Sprinkle some parmesan cheese on top before serving.

for boiling potatoes water
1½ lb preferably russets, peeled and cut into large chunks potatoes
3 tbsp heavy cream
3 tbsp at room temperature unsalted butter
1½ cup chopped ham
1½ cup spinach
2 tbsp vegetable oil
to taste salt and ground black pepper
10½ oz (1 can) cream of mushroom soup
1 cup shredded cheddar cheese
chopped parsley

Steps:

  • Preheat your oven to 350 degrees F and grease a baking dish.
  • Place potatoes into a pot and add enough water to cover the potatoes.
  • Boil the potatoes for about 25 minutes until tender.
  • While boiling the potatoes, heat up oil in a saute pan over medium heat.
  • Saute your ham and spinach briefly.
  • Season to taste with salt and pepper. Adjust accordingly and set aside.
  • When potatoes are tender, turn off the heat and drain the water from the pot.
  • Roughly mash the potatoes with a fork.
  • Then add in heavy cream, mushroom soup, and butter. Mix them well together.
  • Add in the ham and spinach. Season to taste with salt and pepper. Mix them well.
  • Transfer the potato mixture into your greased baking dish and add the shredded cheddar cheese on top.
  • Bake at 350 degrees F for about 20 to 30 minutes or until the cheese has melted evenly.
  • Serve while fresh and hot, garnished with parsley.

1 1/3 cups (173 grams) all-purpose flour, plus more for dusting
2/3 cup (86 grams) whole-wheat flour
1 teaspoon kosher salt
1 teaspoon sugar
1/2 teaspoon instant yeast
1 cup (236 milliliters) lukewarm water
3 tablespoons olive oil
4 cloves garlic, thinly sliced
1 medium shallot, thinly sliced
8 ounces fresh mozzarella, torn
2 handfuls fresh spinach
6 ounces thick-cut (3/8-inch) sliced ham, cut into 1/2-inch pieces
6 ounces rainbow fingerling potatoes, thinly sliced (1/8- to 1/16-inch-thick)
Kosher salt and freshly ground black pepper
Crushed red pepper flakes, for sprinkling
Grated Parmesan, for sprinkling
Handful chopped fresh parsley

Steps:

  • For the dough: Combine the flours, salt, sugar and yeast in a medium bowl. Mix in the water until combined. Cover with plastic wrap and let rise for 1 1/2 hours or up to overnight.
  • Position a pizza stone or inverted baking sheet in the oven and preheat to 475 degrees F.
  • Cut out 2 big sheets of parchment paper, and dust liberally with flour. Divide the dough into two pieces, and place each on a piece of parchment. The dough will be very sticky, so don't be shy in dusting it with enough flour as needed to handle it. Roll out on the parchment until the dough is very thin and about 12 inches in diameter, dusting with flour as needed.
  • For the toppings: Brush each round with 1 tablespoon olive oil and top them with the garlic, shallot, mozzarella, spinach and ham. Toss the potatoes with the remaining tablespoon olive oil in a medium bowl and distribute the potatoes over the pizzas in a single layer, not allowing the potatoes to overlap. Sprinkle everything with a good pinch of salt and a few turns of pepper.
  • Using a pizza peel or baking sheet, slide one of the pizzas on its parchment onto the pizza stone and bake until the cheese is splotchy with brown marks and the potatoes are browned, about 12 minutes.
  • Sprinkle with crushed red pepper, Parmesan and parsley. Repeat with the remaining pizza, and enjoy!

I got this recipe out of one of those checkout, small Betty Crocker cookbooks. I think it's delicious and a good way to use up leftover ham and mashed potatoes. The first 5 ingredients and instructions are there if you're going to make instant potatoes, but you can skip that and use leftover mashed potatoes instead.

  • Heat oven to 350 degrees. Butter 13x9 inch baking dish. If using instant potatoes, make, following directions above, otherwise, heat leftover mashed potatoes, so they are spreadable.Set aside. In medium bowl, combine onion,pepper,spinach,sour cream,cream cheese and eggs; mix well.Spread this mixture into bottom of buttered dish.Sprinkle ham over spinach mixture, top with hot mashed potatoes. Cover with foil, and bake at 350 for 35 to 40,minutes, or until mixture begins to bubble at the edges. Remove foil, sprinkle with cheese evenly over the top. Bake uncovered for an additional 3-5 minutes or until cheese is melted. Let stand 10 minutes before cutting into.

Comfort soup at its finest! I usually make this to use up leftover ham. This is easy to adapt with other ingredients. I don't put celery in mine. I have added garlic sometimes as well.

3 1/2 cups potatoes, peeled and diced (I keep mine with the peel)
1/3 cup celery, diced
1/3 cup onion, finely chopped
1 cup chopped carrot
1 -2 cup ham, diced and cooked
3 1/4 cups chicken broth or 3 1/4 cups ham stock
2 tablespoons chicken bouillon granules (omit if using chicken broth)
salt (to taste)
1 teaspoon pepper
5 tablespoons butter
5 tablespoons flour
2 cups milk
2 cups cheddar cheese, shredded

Steps:

  • Combine potatoes, celery, carrots, onion, ham, and water/broth in stockpot and bring to boil.
  • Then cook over medium heat until potatoes are tender.
  • Stir in the chicken bouillon, salt (if using), and pepper.
  • In separate saucepan, melt butter over medium-low heat. Whisk in flour and cook stirring constantly until thick.
  • Slowly stir in milk as not to allow lumps to form and all milk is added. Turn up to medium heat. Continue to stir until thick (4-5 minutes).
  • Add in cheese and stir until melted.
  • Stir the cheese mixture into the stockpot and cook until heated through. (I also will break up some of the potatoes for thickness. It gets thicker as it cools and next day).

1 cup milk

  • Heat oven to 375º.
  • Press potatoes on the bottom and up the sides of a greased 9-inch pie plate.
