Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin with coconut oil or line cups with paper liners.
  • Use a fork to mash bananas in a bowl. Blend in egg, coconut oil, maple syrup, and vanilla. Stir whole wheat flour, cocoa powder, baking soda, and baking powder together in a separate bowl, making a well in the center. Pour banana mixture into the well and stir until batter is just combined; fold in unsweetened coconut and chocolate chips.
  • Spoon batter into the prepared muffin cups, filling each 2/3 full.

Steps:

  • Preheat the oven to 350 F and line a muffin tin with paper baking cups.
  • Place the liquid ingredients (mashed bananas, honey, melted coconut oil, vanilla, and eggs into a food processor or mixing bowl and mix or whisk together until combined.
  • Add the dry ingredients (coconut flour, cocoa powder, baking soda, and sea salt) to the wet ingredients, and mix together until thoroughly combined.
  • Spoon batter into each cup, dividing evenly between the 12 cups.
  • If desired, sprinkle the tops with chocolate chips.
  • Bake muffins for 15-20 minutes or until a toothpick inserted comes out mostly clean. They will still feel a little soft at the bottom when they're done, but will firm up as they cool.

Steps:

  • Preheat the oven to 350ºF. Line 12** muffin tins with paper liners or spray with nonstick cooking spray.
  • In a bowl, combine the flour, baking soda, cinnamon and salt.
  • In another bowl, cream together the sugar, melted butter, vanilla and egg.
  • Peel the bananas and mash them. Add them to the wet ingredients and stir to combine.
  • Stir the dry ingredients into the wet ingredients, just until combined. Do not over mix.

1 teaspoon baking soda
1/8 teaspoon salt

1 cup mashed banana*
2 large eggs

1 cup unsweetened almond milk
3 tablespoons coconut oil (melted)

Steps:

  • First, preheat oven to 350ºF and line a muffin tin with muffin liners. We suggest also spraying your muffin liners with cooking spray just in case.
  • Next, place dry ingredients into a medium bowl and mix.
  • Then, in a small bowl, mash 1 large banana. Measure it and add 1 cup to a large bowl.
  • Crack 2 eggs into the large bowl and whisk with mashed banana. Add maple syrup, almond milk, and vanilla extract and mix until combined.
  • Add dry ingredients into wet ingredients and then mix. Then, add in melted coconut oil and mix again.
  • Fill each muffin about 3/4 of the way full (these are going to be big muffins) and sprinkle on a few more chocolate chips. Then, place in the oven at 350ºF and bake for 18-22 minutes or until the center is fully cooked.

  • Preheat oven to 400 degrees and line a 12-cup muffin tin with your favorite liners. Slice the bananas and measure out 2 cups along with 1 cup of shredded coconut and set aside.
  • In a medium bowl sift together flour, baking powder, salt, and all spice and set aside.
  • In a large bowl using an electric mixer, mix sugar, brown sugar, and butter until light in color. Add in whole egg, two egg yolks, and almond extract and mix until combined.

3 large very ripe bananas (lots of brown spots are best) (about 1 3/4 cups, mashed or blended in blender)
1/4 cup honey*
1 large egg (at room temperature)
3 tablespoons coconut oil** (melted)
1 teaspoon pure vanilla extract
1 cup whole wheat pastry flour or all-purpose flour***
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon cornstarch****
1/4 teaspoon salt
1/2 cup semi-sweet or dark chocolate chips + 3 tablespoons more for topping
1/4 cup mini chocolate chips (optional for additional chocolatey goodness)

Steps:

  • Preheat the oven to 425 degrees F. Prepare a muffin pan with cooking spray or line it with parchment paper muffin liners. I like to use a silicone muffin pan and then there's no need to spray it or use muffin liners. I also like to dust the muffin pan cavities with a little cocoa powder.
  • Mix wet ingredients together until well combined: ripe mashed bananas, honey, egg, oil and vanilla.
  • Add dry ingredients to wet ingredients: flour, cocoa powder, baking powder, baking soda, cornstarch and salt. Mix until just combined. Over-mixing will result in denser muffins. Stir in chocolate chips. I used 1/2 cup semi-sweet chocolate chips (Trader Joe's) and an additional 1/4 cup mini chocolate chips (Enjoy Life).
  • Pour batter into muffin cups (about a heaping 1/4 cup batter per muffin) and sprinkle additional 3 or 4 regular-sized chocolate chips over the tops of the muffins.
  • Bake muffins for 5 minutes at 425 degrees F. and then with muffins staying in the oven, reduce heat to 350 degrees F. and bake muffins for 13-15 minutes more. The high heat will cause muffins to rise and then you will lower heat to cook the center of the muffin.
  • Remove from oven and allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

1/3 cup coconut oil (or canola oil)
2 cups white whole wheat flour
2/3 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon espresso powder (optional for a more intense chocolate flavor)
1/2 teaspoon kosher salt
1 cup mashed ripe banana (about 3 medium-large bananas)
2 large eggs
3/4 cup milk (any kind you like (I used unsweetened almond milk))
1/3 cup honey
1/4 cup coconut sugar (or light brown sugar)
2 teaspoons pure vanilla extract
1/2 cup dark chocolate chips (plus additional for sprinkling on top (if desired))

Steps:

  • If using coconut oil, melt it now and let it come to room temperature. (If using canola oil, skip this step.)
  • Preheat the oven to 325 degrees F. Line a standard muffin pan with paper or silicone muffin cups, then lightly coat the cups with nonstick spray.
  • In a large mixing bowl, whisk together the whole wheat flour, cocoa powder, baking soda, baking powder, espresso powder, and salt. Set aside.
  • In a mixing bowl, add the mashed banana (if you are mashing the banana directly in the mixing bowl, double check that you have the correct amount), then whisk in the eggs, milk, honey, brown sugar, vanilla, and oil. If the oil resolidifies, warm the bowl in the microwave in 10-second bursts, just until it melts.
  • Make a well in the center of the dry ingredients and pour the wet ingredients into it. With a rubber spatula or wooden spoon, stir gently and patiently to combine. The batter will look dry at first but will begin to come together as you go. It will also be thick and shaggy, which is just right. Stop as soon as the dry ingredients disappear and don't over mix. Fold in the chocolate chips.
  • Scoop the batter into the prepared muffin pan; the cups will be quite full and the tops will dome when the bake. Sprinkle with extra chocolate chips if desired.
  • Bake the muffins for 22 to 26 minutes, or until a toothpick inserted in the center of a muffin in the center of the pan comes out clean without any wet batter clinging to it. Test a few times to make sure the muffins are cooked through (and that what stuck to the toothpick was in fact batter and not a melted chocolate chip).
  • Remove the muffins from the oven and place them on a wire rack. Let cool in the pan for 3 minutes. Then, using a dull knife or fork to help you out, gently remove the muffins from the pan, allowing them to cool for about 15 minutes on a rack before peeling off the muffin papers. Enjoy!
