Number Of Ingredients 10

2 packages (1/4 ounce each) active dry yeast
2 tablespoons sugar
1/2 cup warm water (110° to 115°)
1 cup half-and-half cream
5 tablespoons butter, melted, divided
1 tablespoon salt
1/8 teaspoon cayenne pepper
5-1/2 to 6 cups all-purpose flour
2 cups finely shredded peeled potatoes
1 cup shredded cheddar cheese

Steps:

  • In a large bowl, dissolve the yeast and sugar in warm water; let stand until foamy, about 5 minutes. Add cream, 3 tablespoons butter, salt, cayenne pepper and 2-1/2 cups flour; beat on medium for 2 minutes. Stir in potatoes and enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 8-10 minutes. (Dough will feel slightly sticky.) Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until almost doubled, about 1 hour. , Punch the dough down. Pat into a 1/2-in.-thick rectangle. Sprinkle cheese evenly over dough. Fold dough over the cheese and knead into dough. Shape into two round loaves; place in greased 9-in. round baking pans. Cover and let rise until doubled, about 45 minutes. , Cut an X on top of each loaf; brush with remaining butter. Bake at 400° for 35-40 minutes or until golden brown. Remove from pans to cool on wire racks.

6 tablespoons unsalted butter
1/3 cup all-purpose flour
1 quart milk
3 cups shredded sharp Cheddar cheese
3 cups shredded Gruyere cheese
2 cloves garlic, smashed
1/2 teaspoon freshly ground pepper
Kosher salt
1/2 teaspoon freshly grated nutmeg
7 medium Yukon gold potatoes, unpeeled, cut in 1/2-inch thick coins
1/4 cup chopped fresh parsley, for garnish

Steps:

  • Preheat the oven to 300 degrees F.
  • Melt 4 tablespoons of the butter in a large, oven-safe high-sided skillet over medium-high heat. When the foam subsides, add the flour and cook, stirring constantly, until it has the consistency of wet sand, about 3 minutes. Remove from the heat and whisk in the milk, little by little.
  • Put the saucepan over high heat and bring to a boil, whisking constantly. Lower the heat and whisk in 2 cups of the Cheddar, 2 cups of the Gruyere, the garlic, pepper and salt. Whisk until the cheese is melted, then stir in the nutmeg. Add the sliced potatoes to the pan. Scatter the remaining 2 tablespoons butter and the remaining 1 cup Cheddar and 1 cup Gruyere over the top.
  • Bake in the oven for 45 minutes, then increase the oven temperature to 400 degrees F., and bake until the potatoes are fork-tender and the top is bubbly and golden brown, about 15 minutes more. (Cover the dish with foil if the top becomes too dark before the potatoes are tender.) Scatter the chopped parsley over the top, and serve.

Steps:

  • Make the dough: in a large bowl, mix flour and salt, add milk and butter, mix until dough is formed. Knead until smooth. Cover with a plastic wrap and refrigerate for 1 hour.Make the filling: peel the potato and boil until fork tender.Place boiled potato in a large bowl and mash until smooth. Add salt, parsley, garlic and mayonnaise. 2 scant tablespoons or 2 (1/4-ounce) packages active dry yeast
2 cups warm water (about 110 degrees)
2 teaspoons salt
1 tablespoon finely minced garlic
1 tablespoon finely chopped fresh rosemary or 1 teaspoon dried rosemary
1/4 cup olive oil
2 cups coarsely shredded raw potato
1 cup finely shredded or grated Parmesan cheese
6 to 7 cups unbleached flour
Additional olive oil

Steps:

  • In a large bowl, stir yeast into water to soften. Add salt, garlic, rosemary, olive oil, potato, cheese, and 3 cups flour. Beat vigorously for 2 minutes. Gradually add flour, 1/4 cup at a time, until the dough begins to pull away from the side of the bowl.
  • Turn dough onto a floured work surface. Knead, adding flour a little at a time, until you have a smooth, elastic dough. Place dough into an oiled bowl. Turn to coat the entire ball of dough with oil. Cover with a tightly woven towel and let rise until doubled, about 1 hour.
  • Turn dough out onto a lightly oiled work surface and divide in half. Shape each half into a ball and place onto a well-greased baking sheet. Cover with a tightly woven towel and let rise until almost doubled, about 45 minutes.
  • About 10 minutes before baking, preheat oven to 375 degrees. Place a shallow pan on the bottom shelf of the oven. Just before baking, brush each loaf liberally with extra olive oil and cut a cross about 1/4-inch deep into the top. Place the bread in the oven and put 5 ice cubes into the pan on the bottom shelf. Close the door quickly to prevent steam from escaping. Bake for 25 minutes, or until the internal temperature of the loaves reaches 190 degrees. Immediately remove bread from baking sheet and cool on a rack.

1½ kg King Edward potato, Desiree, or similar, peeled
1 onion, finely chopped
knob of butter, plus extra for greasing
100ml white wine
300ml milk
400ml double cream
3 sage leaves, finely chopped
50g gruyère, grated

Steps:

  • Heat oven to 190C/170C fan/gas 5. Boil the potatoes for 3 mins to soften a little, then drain. When cool enough to handle, slice into 5mm pieces. Cook the onion in the butter in a pan until softened, about 5 mins, then pour over the wine, milk and cream and heat through. Place the potato slices into a large bowl, pour over the cream mixture, sage leaves and half the cheese. Carefully stir until the potato slices are coated.
  • Grease a large baking dish (about 20 x 30cm) with a little butter, then tip the potatoes in. Smooth over the top, scatter over the remaining cheese and season with black pepper. Cover with foil and cook for 30 mins, then uncover and cook 30-40 mins more until a fork slides in easily and the top is golden brown.

  • layer 1/2 potatoes.
  • layer on all of the onions.
  • put on half the cheddar cheese.
  • put on the remaining potatoes.
  • melt butter over medium heat.
  • add flour and cook 1 minute.
  • add milk and cook until sauce is thick and smooth.
  • remove from heat.
  • add garlic, salt, pepper and mustard, stir until smooth.
  • pour on top of potatoes.
  • sprinkle with remaining cheese.
  • bake 375 degrees for 1 hour.
  • CRUMB TOPPING.
  • mix together all the ingrediants.
  • put on once the potatoes are cooked.
  • broil for 3 minutes.

1 pound medium yellow-flesh potatoes, scrubbed and chopped into 1-inch cubes
1 pound red potatoes, scrubbed and chopped into 1-inch cubes

½ cup mayonnaise
4 tablespoons salted butter, cut into small pieces

Steps:

Steps:

(Try to use as little flour as possible, as it can make the dough tough.) Cover the dough with plastic wrap on your work surface, and let rest for 15 minutes while you prepare the filling.
  • Prepare the topping: In a small pot, melt the butter over medium heat. Add the garlic and cook until fragrant, about 1 minute. Transfer to a heatproof bowl and allow to cool for about 5 minutes.
  • In a medium bowl, toss the Parmesan, white cheddar and pepper to combine. Working with one piece of dough at a time, dip the dough into the garlic butter, then roll it in the cheese mixture to coat.
  • Transfer each ball to the prepared pan, arranging in even layers. Do not tightly pack. Drizzle the rolls with the leftover garlic butter and sprinkle with the remaining cheese.
  • Cover the pan with plastic wrap and let rise in a warm place until increased in volume, 35 to 45 minutes. (The dough won't fully double in size, but it will look puffy and risen.)
  • Toward the end of rise time, heat the oven to 375 degrees. Bake until the surface is golden-brown, 35 to 40 minutes. (It should have an internal temperature of 200 degrees. Be sure to take the temperature in the center portion of the dough.)
  • Let cool 10 to 15 minutes before unmolding. Serve warm or at room temperature.
