- Cook peppers in large skillet sprayed with cooking spray on medium-high heat 4 to 5 min. or until crisp-tender, stirring frequently.
- Top half of each tortilla with cheese, peppers and onions; fold in half to enclose filling.
- Spray skillet with additional cooking spray. Use to cook quesadillas, in batches, 2 to 3 min. on each side or until crisp and lightly browned on both sides. Cut into wedges to serve.

- In a large nonstick skillet coated with cooking spray, saute the yellow pepper, onion and garlic in oil for 2 minutes. Stir in the tomatoes and corn; cook 2 minutes longer. Add the black beans, pepper and salt. Cook until vegetables are tender; drain., Spritz one side of each tortilla with cooking spray; place plain side up on baking sheets coated with cooking spray. Spoon bean mixture onto half of each tortilla; sprinkle with cheese. Fold tortilla over filling. , Bake at 400° for 6 minutes. Carefully turn over; bake 4-7 minutes longer or until cheese is melted.

- Heat oven to 325°F.
- Heat dressing in large skillet on medium-high heat. Add onions and garlic; cook and stir 2 to 3 min. or until onions are crisp-tender. Add peppers and mushrooms; cook 8 to 10 min or until peppers are crisp-tender, stirring occasionally. Stir in chicken.
- Place 2 tortillas on foil-covered baking sheet. Sprinkle tortillas with half the cheese. Top with chicken mixture and remaining cheese; cover with remaining tortillas.
- Bake 20 to 25 min. or until golden brown. Cut each quesadilla in half to serve.

- Sprinkle cheese onto one half of each tortilla. Top with ham, tomato and green onion tops. Fold each tortilla in half, pressing firmly together.
- In a 10-inch skillet, cook quesadillas, two at a time, over medium heat for 4 minutes, or until lightly browned, turning once. Repeat with remaining quesadillas.
- Cut each quesadilla into wedges and serve.

- Heat oil in large skillet over medium-high heat. Add garlic, onion, bell peppers, mushrooms, jalapeños, salt and pepper. Cook, stirring occasionally, 7-9 minutes or until the vegetables are soft. Transfer to bowl and cool. Stir mayonnaise into cooled mushrooms.
- Place tortillas on work surface. Sprinkle with cheese and top with mushroom mixture. Fold each in half to form a semi-circle. Wipe out skillet and return to stove over medium heat. When hot, add quesadillas 2 at a time to skillet. Cook 1-2 minutes per side or until lightly golden and cheese melts. Repeat with remaining quesadillas and serve immediately.
- Optional: You can heat in microwave oven if you don`t want your tortillas crispy!
