Kosher salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
1/2 teaspoon crushed red pepper flakes
Two 28-ounce cans plum tomatoes, crushed by hand
1 cup chopped fresh basil, plus 4 large fresh basil sprigs
1 pound dried rigatoni
1 pound spicy Italian sausage, casings removed
1 1/2 cups shredded mozzarella
1 1/2 cups shredded provolone
1 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • Bring a large pot of salted water to a boil. Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of the tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard basil and stir in the chopped basil. Season with salt and pepper.
  • While the sauce simmers, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Transfer the sausage to a large bowl with a slotted spoon.
  • Cook the rigatoni in the salted boiling water until very al dente, about 2 minutes less than the package directions instruct. Drain the pasta and add it to the large bowl.
  • Add the tomato sauce and half each of the mozzarella, provolone and Parmesan cheeses to the bowl and stir well to combine. Transfer the pasta-sausage mixture to a 3- to 4-quart baking dish and top with the remaining mozzarella, provolone and Parmesan cheeses. Bake, uncovered, until browned, about 15 minutes. Let the pasta rest about 10 minutes before serving.

1 tablespoon vegetable oil
½ tablespoon finely minced onion
1 orange bell pepper, thinly sliced

1 cup heavy cream
1 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley

Steps:

  • Fill a large pot with lightly salted water, and bring to a rolling boil over high heat. Stir in the shell pasta, and return to a boil. Cook, stirring occasionally, until cooked through but still firm to the bite, about 13 minutes. Drain well.
  • While the pasta is cooking, heat the vegetable oil in a large skillet over medium-high heat. Cook onion, orange pepper, and garlic in oil until tender, about 5 minutes. Stir the crumbled Italian sausage into the vegetables in the skillet; cook and stir until meat is browned and cooked through, about 8 minutes. Stir in the undrained tomatoes and the heavy cream. Turn the heat to medium-low, and allow the sauce to cook until thick, about 5 additional minutes.
  • Mix pasta with the sausage cream sauce, stir in the Parmesan cheese, and serve. Garnish with chopped fresh parsley.

Smoked sausage is my new go to meat for a tight budget, so I have been searching for something to use it in besides Jambalaya. I found this recipe in a Taste of Home magazine and loved it! I just had to share it! For a healthier casserole, I use whole wheat pasta, turkey smoked sausage, 98% fat free soup and low fat cheese.

2 cups penne pasta, uncooked
14 ounces smoked sausage, cut into 1/4 inch slices
1 1/2 cups milk
1 (10 3/4 ounce) can cream of celery soup
1 1/2 cups cheddar French-fried onions, separated (I couldn't find cheddar, so I used regular and it was great)
1/2 cup mozzarella cheese, shredded, divided
1/2 cup cheddar cheese, shredded, divided

Steps:

  • Cook pasta according to package directions.
  • Meanwhile, brown sausage in a skillet and drain. (I skipped this step since I was using fully cooked turkey smoked sausage and wouldn't have any fat to render).
  • In a large bowl, combine milk and soup.
  • Stir in 1/2 cup onions, 1/4 cup of each cheese, and sausage.
  • Drain pasta and stir into sausage mixture.
  • Transfer to a greased 13 x 9 baking dish.
  • Cover and bake at 375 degrees for 25-30 minutes or until bubbly.
  • Sprinkle with remaining onions and cheese.
  • Bake, uncovered, 3-5 minutes longer or until cheese is melted.

3/4 pound bulk hot or mild Italian sausage (pork, chicken or turkey)
4 garlic cloves, thinly sliced
1 teaspoon dried oregano
1/2 teaspoon fennel seeds, coarsely crushed
Pinch of red-pepper flakes, plus more for serving (optional)
1 (28-ounce) can whole peeled tomatoes with their juices
1 (14-ounce) can crushed or strained tomatoes
2 bay leaves
Kosher salt
12 ounces dried pasta, such as small shells, farfalle or other shaped pasta
8 ounces fresh mozzarella, torn into bite-size pieces
6 ounces whole-milk ricotta (about 3/4 cup)
1/3 cup grated Parmesan
1/4 cup basil leaves
Black pepper, for serving

Steps:

  • Heat oven to 425 degrees. Heat oil in a 12-inch ovenproof skillet over medium-high. Crumble sausage into skillet, using a spoon to break it into small pieces. Cook until starting to brown, stirring occasionally, 5 to 7 minutes. Stir in garlic, oregano, fennel seeds and red-pepper flakes (if using), and cook another 1 to 2 minutes.
  • Stir in whole tomatoes and their juice, using a spoon to break them up. Add crushed tomatoes, bay leaves and 2 teaspoons salt, and bring to a simmer. Simmer for 10 minutes to thicken slightly.
  • Stir in pasta and 1 cup water and return to a simmer. Continue to simmer for 2 minutes, stirring frequently to make sure pasta doesn't stick to the bottom of the pan. Remove from heat, pluck out the bay leaves, and fold in about a third of the mozzarella.
  • Top pasta with remaining mozzarella and dollops of ricotta. Sprinkle with Parmesan, then transfer to oven. Bake until pasta is tender when poked with a fork, and cheese is bubbly and lightly golden, 18 to 22 minutes. (If you'd like a more deeply browned topping, run the pan under the broiler for 1 or 2 minutes.) Remove from oven and let cool slightly before serving. Top with basil, plenty of black pepper, and more red-pepper flakes, if you like.

8 oz medium pasta shells
3 garlic cloves (minced)
½ cup shallots, ((or onions) minced)
12 oz Italian sausage, (removed from casing)
28 oz can crushed tomatoes
1 Tablespoon tomato paste
1 ½ Tablespoon granulated sugar
½ teaspoon kosher salt, (or more to taste)
½ teaspoon freshly ground black pepper, (or more to taste)
pinch of red pepper flakes, (optional)
¾ cup low fat (2%) cottage cheese, (small curds)
6 oz mozzarella cheese, (cut into ½-inch cubes)
1 cup shredded mozzarella cheese
chopped Italian parsley, (to garnish)

Steps:

  • Cook pasta to al dente according to pasta package instructions. Drain and let cool.
  • Heat about 2 tsp of olive oil in a medium pot over medium heat. Add garlic and shallots and cook until shallots have started to soften. Stir often to prevent garlic from burning. Add Italian sausage and cook until browned. As sausage cooks, break into small pieces. Once sausage is cooked, drain off any excess fat (oil).
  • Add entire can of crushed tomatoes, including any juice. Add tomato paste, sugar, salt, pepper, and red pepper flakes. Stir to combine. Bring to a boil and then reduce to a simmer. Let simmer for 10-15 minutes. Sample sauce and add additional salt or pepper to taste. Let sauce cool for about 15 minutes.
  • Preheat oven to 350°F. In a large bowl, add cooled pasta, cooled meat sauce, cottage cheese and mozzarella cubes. Toss to combine. Place tossed pasta in casserole dish, or any oven-safe serving ware. Sprinkle shredded mozzarella cheese on top.
  • Bake for 20 minutes until cheese on top is melted. Set oven to broiler and allow cheese to brown for 30-45 seconds. Remove from oven and let dish stand for 5-8 minutes before serving.

1/2 lb Italian sausage links (hot or sweet*)
4 oz fresh mushrooms (sliced in half)
1/4 cup onion (chopped)
2 cloves garlic (minced)
8 oz dry rotini pasta

2 cups shredded mozzarella cheese
26 oz spaghetti sauce
1 tbsp olive oil

Steps:

  • Cook spiral pasta as per package directions, but cook only until al dente (pasta will finish cooking in casserole). Drain, rinse and set aside.
  • Slice sausage links into 1/2-inch pieces.
  • Preheat oven to 350 degrees F. Lightly spray a deep 11 x 7-inch baking dish (or a shallow 13 x 9-inch dish)
  • Heat a heavy skillet over medium-high heat. Add the olive oil. When oil begins to shimmer, add the sausage pieces, onion, mushrooms and garlic. Cook, stirring frequently, until sausage begins to brown. Remove from heat.
  • In a large bowl, combine the pasta, sausage mixture, the cheddar cheese, 1 cup of the mozzarella and the spaghetti sauce. Stir well to combine.
  • Turn out into prepared baking dish. Cover with foil and bake at 350 degrees F for 25-30 minutes. Remove foil and top with the remaining mozzarella cheese. Return to oven and bake an additional 10-15 minutes, or until cheese is melted and beginning to bubble.

Steps:

  • In a large pot over medium heat, brown Italian sausage and onion.
  • Add milk, broth, and pasta to the pot along with the sausage and onion. Stir in the cornstarch and seasonings and bring to a boil.

6 medium sliced mushrooms

2 tablespoons flour

  • Cook and slice Italian Sausage, set aside.

Steps:

  • Bring large pot of salted water to a boil over high heat. Cook pasta according to package directions.
  • In a large deep skillet over medium-high heat, add olive oil. Add onion, garlic, Italian seasoning mix and red pepper flakes, if using. Sir frequently and cook until the onions are soft and fragrant, about 3 to 4 minutes. Add sausage and cook for 1 minute. Add can of crushed tomatoes, stirring all the ingredients together to combine.   • Drain the pasta and add directly to the skillet with the sauce Toss the pasta to coat with the sauce. Transfer to a serving bowl or platter and garnish with basil leaves. Serve with the cheesy garlic bread.
  • For the cheesy garlic bread:
  • Preheat oven to 400 degrees F.
  • Sprinkle cheese and Italian seasoning over garlic bread half. Place on tinfoil lined baking sheet and cook in the oven for 10 to 12 minutes, until the cheese is melted and bread is warmed through. Slice and serve.
  • Use the leftover garlic bread from this recipe to make Garlic Bread Pizza.

2-1/2 cups (8 oz.) penne or rotini pasta (Note 2)
1/4 cup white flour

1-1/2 cups chicken stock/broth (Note 3)
2 cups milk (Note 4)
2-1/2 cups chopped broccoli ((~1 small bunch))
1-1/2 teaspoons minced garlic
2 tablespoons unsalted butter
1-1/2 cups shredded sharp Cheddar cheese, (separated)
Optional: fresh parsley, finely chopped

Steps:

  • PREP: Start by removing the milk from the fridge, measuring 2 cups, and setting it aside for now. Preheat oven to 400 degrees F. Generously grease a 9x13-inch pan with cooking spray. Coin sausage then cut coins in half.
  • COMBINE: Add the following ingredients in this order to the pan: uncooked pasta, flour (sprinkled evenly on top), seasonings (mustard, onion, and garlic powder), and salt/pepper to taste (I add 3/4 tsp of each), minced garlic, chicken broth/stock, milk, and butter (cut into 2 pieces). Stir well. Top with coarsely chopped broccoli. Cover pan with foil and bake for 20 minutes.
  • BAKE AGAIN: Remove foil, and stir ingredients together really well. Add in 1 cup Cheddar cheese and stir through again. Place the cut sausage on top of ingredients in one even layer. Sprinkle the remaining 1/2 cup Cheddar on top. Return the pan to the oven, uncovered, and bake for another 15-20 minutes or until pasta is tender and the top is golden brown (don't overbake or sauce will bake out). Remove from oven and let stand for 5 minutes (it thickens more as it stands). Enjoy immediately, garnished with fresh parsley if desired.

You can use just about any shape pasta you like: penne, shells, armoniche, wagon wheels, farfelle, or my favorite, tri-colored campanelle. I used turkey sausage for this and it was fantastic.For those to an aversion to ANYTHING spicy, you could easily substitute petite diced tomatoes for the Rotel.
