AWESOME GRILLED CHEESE SANDWICHES
My husband and I were sick of frying grilled cheeses on the stove because you have so many pieces of bread to use, and you have to stand there for a long time if you feed up to six people like we do. So we came up with this idea.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Butter one side of 9 slices of bread, and place butter-side down on a baking sheet. Arrange cheese on each slice of bread. Spread butter on 9 remaining slices of bread, and place them buttered-side up on top of the cheese.
- Bake in preheated oven for 6 to 8 minutes. Flip the sandwiches, and bake an additional 6 to 8 minutes, or until golden brown.

Steps:
- Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain. Stir in pizza sauce, pepperoni and American cheese. Cook and stir until cheese is melted, 4-5 minutes., Place buns on a baking sheet, cut sides up. Spoon meat mixture onto buns; top with mozzarella cheese. Bake until cheese is melted, about 5 minutes. If desired, serve with additional warmed pizza sauce.

The genius move behind these easy sandwiches is cooking enough scrambled eggs for twelve on a baking sheet; no stovetop required. Top with sliced cheese and sandwich between pillowy pull-apart rolls, then let the oven do the rest of the work for you!

- Position a rack in the lower third of the oven. Preheat the oven to 350 degrees.
- Place two 2-foot-long pieces of nonstick aluminum foil next to each other so the long sides are just touching. Pinch the edges together and then fold them over several times to seal and form one large piece of foil. Line a rimmed baking sheet with the foil and set aside.
- Crack the eggs into a large bowl and whisk well. Add the scallions, 1 teaspoon salt and 2 tablespoons water and whisk to combine.
- Split the whole pack of attached dinner rolls in half horizontally using a serrated knife. Set aside.
- Add 1 tablespoon of butter to the prepared baking sheet and place in the oven to melt, about 3 minutes. Spread the butter all over the foil with a pastry brush and then pour in the egg mixture. Place the attached roll halves cut-side down and side by side on top of the eggs and return to the oven. Bake until the eggs are completely set, about 10 minutes.
- Meanwhile, butter another baking sheet with the remaining 1 tablespoon butter. Using heatproof mitts, top the rolls with this baking sheet and invert the whole thing. Remove the top baking sheet and peel back the foil. Top half the eggs with the cheese and the other half with the ham. Bake until the cheese is melted, about 5 minutes.
- Using a large metal hamburger spatula, flip the bottom half of the rolls onto the other half, so the rolls are top-side up. Cut or pull the rolls apart. Serve with hot sauce.
OVEN GRILLED BACON CHEDDAR SANDWICHES

- 1. Preheat oven to 375 degrees F. Line a baking sheet with aluminum foil and set aside.
- 2. Butter one side of each piece of bread. Place 4 slices, buttered-side down, on prepared baking sheet. Layer half of cheese slices on bread followed by bacon and scallions. Place remaining cheese slices on top. Cover each sandwich with remaining 4 slices of bread, buttered side up.
- 3. Bake sandwiches until bottoms are a toasted golden brown, about 10 minutes. Flip and continue to bake until cheese melts and other side is toasted, 8 to 10 more minutes. Serve immediately.
BAKED GRILLED CHEESE SANDWICHES
Steps:
- Preheat oven to 450˚F.
- Lightly butter one side of each slice of bread.
- Arrange bread slices, buttered side down, on a large baking sheet.
- In a small bowl combine mayonnaise and dijon mustard; mix until incorporated.
- Spread the mayo mixture over bread. Add more, if you like.
- Place 2 slices of cheese on each slice of bread.
- Sandwich the breads together - you should have 4 sandwiches.
- Pop them in the oven for 4 minutes; flip and continue to cook for 3 to 4 more minutes, or until golden brown and cheese is melty.
- Remove from oven and transfer to a cutting board.
- Cut each sandwich in half and serve.

OPEN FACED CHEESY EGG SALAD SANDWICHES
Found in the 1986 Sothern Living cookbook and modified a bit. We were very happily suprised with how a few little changes to egg salad can make such a difference. This is now one of my favorite dinners! Ofcoarse you could also make this for breakfast or lunch as well. Make the egg salad ahead of time and the meal is a snap. I usually just serve this with fruit or cucumber slices on the side.

- Peel and chop your eggs into a bowl, and add cheese through celery.
- Mix well. Refrigerate until dinner or go right along.
- Heat skillet to med/low heat.
- Spread sourdough slices with butter and toast on both sides.
- Remove to a baking sheet.
- Raise oven rack to top and set oven to broil.
- Top each slice of bread with egg salad and broil with oven door open 1-3 minutes or until cheese is melted (watch closely so bread doesn't burn).
- You could also use english muffin halves as the original recipe called for, but personally I think the sourdough adds a little something extra!

Made these inspired by Pioneer Woman and they were soooo yummy. Love that you can make so many variations and I think the #1 trick is them being in the oven and all that yumminess melting together! - Combine dressing ingredients and spread on top and/or bottom of buns, spooning over tops as well, if you like.

- Lay a sheet of greaseproof paper in the bottom of a 13 x 9 baking pan.
- Mix together the eggs, melted butter, cheese, and onion and garlic powder.
- Lay 6 pieces of bread on top of the paper with their sides touching.
- Spread half of the cheese mixture on top of the bread.
- Cover with the other 6 slices of bread and spread the remaining mixture on top.
- Can be kept in the refrigerator ( or even freeze )until ready to bake.

- To one piece of bread, add a nice grating of good-quality cheese that melts well, like Cheddar, Red Leicester or a mixture of the two.
- Place your second piece of bread on top, then cook in a sturdy non-stick frying pan on a medium heat for about 3 minutes on each side. This is important, because if it gets too coloured too quickly you won’t get the gorgeous ooze and melt in the middle, and this is all about encouraging that internal cheese lava flow.
- When lightly golden on both sides, lift the toastie out of the pan and grate a little layer of cheese into the pan where it was sitting, then add a little pinch of cayenne pepper.
- Place the toastie back on top. Leave it for just over 1 minute – wait for the cheese to bubble and the fat to spill out of it.
