I love fried chicken, but it takes so long and is such a big mess. I came up with this one, and have been making it ever since! Everyone I have given the recipe to has loved it as well.

12 chicken thighs
3 eggs
1 cup all-purpose flour
1 cup Italian seasoned bread crumbs
salt and pepper to taste
1 teaspoon paprika
½ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place flour in a shallow plate or bowl and season with salt and pepper to taste. Put the bread crumbs in another shallow plate or bowl and beat the eggs in another bowl.
  • Dredge the chicken piece by piece in the flour, then the egg, then the bread crumbs, until all pieces are coated. Pour the oil into a 9x13 inch baking dish. Add the chicken to the dish and sprinkle with paprika to taste. Bake in the preheated oven for 30 minutes, then turn pieces over and bake for another 30 minutes. Remove from oven and drain on paper towels. Enjoy!

This is for serious garlic lovers. The chicken bakes out so moist and tender! Grated cheese may be sprinkled on top of the breast the last 5 minutes of cooking if desired but that is optional. Double all ingredients for more than four breasts and adjust the amount of garlic to suit taste. For the coating amount you might be able to get away with 5 or maybe 6 very small chicken breasts, but I would suggest to increase the amount slightly --- to take this dish to yet another level, about 10 minutes before the cooking time is finished, drizzle the top of the chicken with a little pasta sauce, then sprinkle mozzarella cheese on top. Return to oven for about 10 minutes until the chicken is completely cooked and sauce is hot and cheese has melted. For a lemon-garlic flavor add in 3 tablespoons lemon juice to the melted butter/garlic mixture --- *NOTE* for a healthier alternative Smart Balance Butter Blend may be used in place of the melted butter --- you will love this chicken! 2 tablespoons minced garlic (can use more or less)
2 teaspoons garlic powder, divided (garlic lovers can use more)

1/4 cup freshly grated parmesan cheese

shredded cheddar cheese (optional and use any amount desired, or can use shredded mozzarella cheese)

Steps:

  • Preheat oven to 350°F.
  • Butter an 11 x 7-inch pan (if using more than 4 breasts use a larger pan).
  • In a bowl, combine melted butter with fresh minced garlic, 1 teaspoon garlic powder and salt.
  • In another bowl, combine the dry breadcrumbs with 1/2 cup finely grated cheddar cheese, Parmesan cheese 1 teaspoon garlic powder and coarse ground black pepper.
  • Dip chicken in butter mixture; then in crumb mixture.
  • Place in prepared pan and bake uncovered for 35-45 minutes or until cooked through, larger breasts may take more time (placing the chicken on a rack in a pan will produce an extra crispy crust).
  • Top with shredded cheddar or mozzarella the last 5 minutes of cooking (this is only optional.

1/3 cup parmesan cheese, grated
1/4 cup flour

1/2 teaspoon dried basil
1 lb boneless skinless chicken tenders or 1 lb turkey tenderloins
2 tablespoons skim milk

Steps:

  • Preheat oven to 400*. Spray a shallow baking pan with vegetable oil spray.
  • Crush crackers in a ziplock bag and add basil and pepper to crumbs.
  • Dip chicken in milk. Add a few pieces of chicken at a time to the crumb mixture and shake until chicken is coated. Place coated chicken in a single layer on the baking pan.

I found this recipe and tried it for the first time last night and my husband and kids went nuts over how fantastic it was!! It has a unique and fabulous taste. 2 teaspoons olive oil
4 ounces bacon, cooked crisp, drained and crumbled
6 boneless skinless chicken breasts
6 ounces Roquefort cheese (or Feta cheese if you cannot find Roquefort)
1 teaspoon creole seasoning (Emeril's Bayou Blast recommended)
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 cup honey
3 tablespoons Dijon mustard
1/8 teaspoon cayenne pepper
1 1/2 cups breadcrumbs

Steps:

  • Preheat the oven to 400 degrees F. Cover a baking sheet with aluminum foil and lightly oil the foil with the olive oil. Set aside.
  • Butterfly cut each chicken breast. Divide the cheese and cooked/crumbled bacon evenly among the cavities of each chicken breast. Season the chicken evenly on both sides with the Creole seasoning, salt, and pepper. In a small bowl, combine the honey, mustard, and cayenne and stir well. In a shallow dish, fill with the breadcrumbs. Brush both sides of each piece of chicken with the honey mixture, then dredge in the breadcrumbs. Great flavor, easy to make, and a nice twist on fried chicken that uses every day grocery store ingredients. Serve with Recipe #389419 that you can "jazz" up any way you want; and yellow rice for a quick easy dinner. This is also great served with a side salad and fresh fruit for something a bit lighter, or a tangy coleslaw.

4 boneless skinless chicken breasts
8 tablespoons shredded monterey jack pepper cheese (2 per chicken breast)
16 ounces plain tortilla chips (crushed fine in the food processor)
2/3 cup flour
3/4 cup salsa, use your favorite, but a smooth salsa, not the chunky kind, a picante sauce also works
2 eggs, well beaten
olive oil (to saute the chicken)
salt
pepper
2 avocados, rough chopped
2 tablespoons fresh jalapenos, fine diced ribs and seeds removed
1 cup sour cream (don't use low fat)
1/4 cup milk (more if you prefer the sauce a bit thinner)
1/3 lime juice
2 tablespoons fresh cilantro, fine chopped
salt
pepper

Steps:

  • Sauce -- Make the avocado sauce ahead of time and set in the refrigerator to chill. I like to use my mini food processor for this, or a blender will work fine. Add the avocado, milk, lime juice, sour cream, jalapeno and cilantro. Blend until smooth. Check for seasoning salt and pepper and adjust as needed. Remove to a small bowl and cover and chill until ready to serve. This sauce is serve cold.
  • Chicken -- Remove to the counter, along with the salsa and eggs. You want them to be room temp or at least have the chill taken off them.
  • Tortilla Chips -- Add the tortillas to the food processor and grind until fine chopped. The finer chopped the easier it is. A rough chop or hand chop will not work.
  • Dredging Stations -- 1: Flour, salt and pepper. 2: Eggs, lightly beaten mixed with salsa. 3: Ground tortilla chips.
  • Cheese -- Cut a thin slice about 1/2 of the way through one side of the chicken breast (making a pocket) as you will be stuffing it with the cheese. Make sure not to cut all the way through to the other side. But make a nice slice so you can stuff it with a fair amount of cheese. About 2 tablespoons per chicken breast. Stuff the chicken breast and secure with a single toothpick.
  • Chicken -- Dredge the chicken in the flour and make sure to shake off any extra. Next, dip in the egg and salsa mix and last into the tortilla chips.
  • Saute -- In a large NON STICK pan (I prefer non stick for this, but one that is oven proof) and heat to medium high heat. Add enough oil to just lightly cover the bottom of the pan. Saute on each side until golden brown. I transfer the pan (if oven proof) to the oven, if not, transfer to a pie plate and finish cooking in a 400 degree oven until the juices run clear. Approximately 10 minutes. It really depends on the thickness of your chicken.
  • Serve -- Garnish the chicken with the avocado sauce, some beans, rice, anything you want. The avocado sauce is really good with this. Even serve this over some crisp romaine, onion and black beans and use the avocado sauce as the dressing. You can really serve it lots of way.

1/2 teaspoon dried basil, crushed
1/4 teaspoon pepper
4 chicken leg quarters or 4 chicken breasts

  • Place crackers in a plastic bag (leave bag open so air can escape). Use a rolling pin to crush the crackers. Add basil and pepper to bag. Set aside.

  • Place coated chicken, skin side up, in an ungreased baking pan.
