IRISH CHEDDAR SPRING ONION BISCUITS

By layering and folding the cheese into the dough, à la puff pastry, we get all the cheesy flavor without making the biscuit too dense.

2 cups self-rising flour, plus more for kneading
¼ teaspoon baking soda
7 tablespoons very cold butter, cut into pieces
¾ cup buttermilk, plus additional for brushing
½ cup shredded Irish Cheddar cheese, divided, plus more for topping
¼ cup sliced green onions, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Whisk self-rising flour and baking soda together in a mixing bowl. Add cold butter and cut it into flour with a pastry blender until texture resembles coarse crumbs, 5 to 7 minutes. Make a well in the center of the flour mixture and pour in the buttermilk. Stir with a fork just until mixture starts to come together to form a shaggy dough.
  • Transfer dough to a floured work surface. Press into a roughly shaped rectangle. Fold into thirds using a bench scraper. Press again into a rectangle. Flour surface if the dough seems sticky. Roll dough with a rolling pin to 1/2-inch thickness. Sprinkle with half of the shredded cheese and half of the green onions. Fold dough into thirds. Dust with flour, if necessary, and roll out again to about 1/2-inch thickness. Top with remaining cheese and green onions. Fold into thirds and roll out again to about 1/2 inch thickness. Cut biscuits with a 2- or 3-inch biscuit cutter.
  • Transfer biscuits to prepared baking sheet. Brush lightly with buttermilk. Sprinkle tops with about a teaspoon of grated cheese.
  • Bake in preheated oven until cooked through and golden brown, about 20 minutes. Transfer to a rack to cool.

  • Preheat oven to 450 degrees F (230 degrees C).
  • In a large bowl, sift together flour, salt and baking powder. Cut in butter until mixture resembles coarse crumbs. Make a well in the center of flour mixture. Add the milk and cheddar cheese; stir to combine. Drop batter by spoonfuls onto an ungreased baking sheet.
  • Bake in preheated oven for 12 to 15 minutes, until lightly browned. While biscuits are baking mix melted butter and minced garlic. Brush garlic butter over hot baked biscuits.

Steps:

  • Heat oven to 400°F Melt butter in 8-inch square baking pan in oven (3 to 5 minutes).
  • Meanwhile, combine all remaining ingredients except milk in medium bowl.
  • Stir in milk just until moistened.
  • Turn dough onto lightly floured surface; knead until smooth (1 minute).
  • Pat or roll dough into 12x6-inch rectangle.
  • Cut into 12 (1-inch) strips.

3 teaspoons baking powder
1 tablespoon sugar
1 teaspoon salt
3/4 teaspoon cream of tartar
1/2 cup cold butter
1 cup shredded sharp cheddar cheese
1 garlic clove, minced
1/4 to 1/2 teaspoon crushed red pepper flakes
1-1/4 cups 2% milk

Steps:

  • Preheat oven to 450°. In a large bowl, whisk flour, baking powder, sugar, salt and cream of tartar. Cut in butter until mixture resembles coarse crumbs. Stir in cheese, garlic and pepper flakes. Steps:

3/4 teaspoon baking soda

Steps:

  • Preheat oven to 475°F Sift the self-rising flour, cake flour, baking powder, baking soda, sugar and salt into a large bowl. Using your fingers or a pastry cutter, work the 4 tablespoons cold butter into the flour until the pieces are pea size.
  • Add the bacon, cheddar and green onions to the flour mixture. Pour the heavy cream into the flour mixture and, with your hands or a silicone spatula, stir just until the cream and flour come together to form a dough.
  • Use 2 tablespoons of the melted butter to brush the inside of the Cast-Iron Biscuit Pan (Emeril has his own line, but I think any biscuit pan would work). Carefully spoon mixture into each well being sure to divide the mixture evenly between all wells. This will ensure even baking. Gently smooth each top with the back of a spoon or spatula. Brush the tops with the remaining tablespoon of melted butter.
  • Bake in the oven for 10 or 12 minutes, or until golden brown. Allow to cool briefly before running a thin, sharp, small blade around the edge of the biscuit pan and inverting the pan to release the biscuits.

This quick batter bread is fabulous! If you love the taste of carmelized onions and sweet brown sugar, you must try it! It is more of a biscuit style bread, and best when still warm from the oven, but this is one of the few breads that can successfully be gently reheated in the microwave or oven. The onions form a sweet bottom layer, as they don't actually bake into the bread. I've used less onions than the recipe calls for due to not having enough, and it came out fine, but if you have enough use them all! The onions are so sweet I could almost eat it as dessert. 2 cups sliced onions, 1/4 inch thick
2 tablespoons brown sugar
2 cups flour

Steps:

  • Preheat oven to 350 degrees F.

  • Grease a 9-inch pie plate with remaining tablespoon butter and sprinkle bottom with brown sugar.
  • When onions are done, spread out evenly over brown sugar.

  • In small bowl combine egg, milk and oil.
  • Quickly mix wet ingredients into the flour mix.
  • Spread batter over onions and bake for 35 to 40 minutes.
  • Serve warm.

  • Place the flour, baking powder, garlic powder, and salt together in a large bowl or in a large food processor. Whisk or pulse until combined. Add the cubed butter and cut into the dry ingredients with a pastry cutter or by pulsing several times in the processor. Cut/pulse until coarse crumbs form. See photo above for a visual. If you used a food processor, pour the mixture into a large bowl.
  • Fold in the shredded cheese. Make a well in the center of the mixture. Pour 1 cup (240ml) buttermilk and drizzle honey on top. Fold everything together with a large spoon or rubber spatula until it begins to come together. Do not overwork the dough. The dough will be shaggy and crumbly with some wet spots. See photo above for a visual.
  • Pour the dough and any dough crumbles onto a floured work surface and gently bring together with generously floured hands. The dough will become sticky as you bring it together. Have extra flour nearby and use it often to flour your hands and work surface in this step. Using floured hands or a floured rolling pin, flatten into a 3/4 inch thick rectangle as best you can. Fold one side into the center, then the other side. Turn the dough horizontally. Gently flatten into a 3/4 inch thick rectangle again. Repeat the folding again. Turn the dough horizontally one more time. Gently flatten into a 3/4 inch thick rectangle. Repeat the folding one last time. Flatten into the final 3/4 inch thick rectangle.
