CHEESY CHICKEN AND MUSHROOM BAKE

This recipe is a tasty blend of chicken breasts browned in butter, then topped with sauteed mushrooms and onions, and finally baked with grated Parmesan, mozzarella, and scallions. A favorite in my household.

salt and ground black pepper to taste
4 skinless, boneless chicken breasts
2 tablespoons unsalted butter
1 ½ cups sliced fresh mushrooms
½ cup diced onion
2 cloves garlic, chopped
1 tablespoon all-purpose flour
½ cup chicken broth
1 cup grated Parmesan cheese
½ cup shredded mozzarella cheese, or to taste
½ cup diced scallions

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a baking dish lightly.
  • Sprinkle salt and pepper on chicken. Heat butter in a pan over medium-high heat. Add chicken and brown on all sides, 5 to 7 minutes. Remove chicken and place in the prepared baking dish.
  • Stir mushrooms, onion, garlic, and flour into the remaining butter in the saucepan and saute over medium-high heat until softened, about 5 minutes. Add chicken broth and bring to a boil while scraping the "good stuff" off of the bottom of the saucepan, letting it add to the flavor. Cook until thickened to your liking; drizzle over chicken.
  • Bake in the preheated oven for 30 minutes. Sprinkle with Parmesan cheese, mozzarella cheese, and scallions. Continue to bake until chicken is no longer pink in the center and cheese is melted, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

3 tablespoons butter, plus extra for casserole dish
2 tablespoons all-purpose flour
1/2 pound shiitake or baby bella mushrooms, sliced
1/4 cup onions, chopped
2 cloves garlic, finely chopped
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1 1/2 cups heavy cream
1/2 cup chicken stock
1 (10-ounce) box frozen chopped broccoli, thawed and drained
2 cups shredded Cheddar-Monterey blend
3 cups cooked rice
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 425 degrees F.
  • Butter casserole dish. In a large pot, melt 3 tablespoons butter and flour over medium heat until golden in color to make a quick roux. The roux should resemble the color of peanut butter. Add mushrooms, onion, garlic, garlic powder, cayenne pepper, heavy cream and chicken stock. Add broccoli, 1 cup of the cheese and rice. Season with salt and pepper, to taste. Pour into buttered dish and top with remaining shredded Cheddar. Bake until cheese is melted and golden, about 20 minutes.

½ cup cooking sherry
1 teaspoon minced garlic

½ cup grated Parmesan cheese
1 (8 ounce) can mushroom pieces, drained

Steps:

  • Place the chicken breasts into a slow cooker. Whisk the cream of chicken soup, cream of mushroom soup, sherry, garlic, celery flakes, and paprika in a mixing bowl. Stir in the Parmesan cheese and mushroom pieces; pour over the chicken.
  • Cook on Low for 8 hours until the chicken is tender, and the sauce has reduced slightly.

1 tablespoon olive oil
1 onion, chopped
1 stalk celery, chopped
2 cloves garlic, crushed
500 g chicken tenderloins
3/4 cup white wine, optional
400 g mushrooms, sliced
1 can cream of mushroom soup
1/4 cup light sour cream
2 tablespoons chopped parsley

Steps:

  • Heat oil in a large heavy based saucepan.
  • Add onion and celery and cook until soft.
  • Add garlic and cook a further minute.
  • Add chicken and cook until browned.
  • Add wine, if using, and mushrooms.
  • Cook a further couple of minutes.
  • Add soup and sour cream and season with pepper (check for salt, often the soup contains a fair amount).
  • Cook until warmed through.
  • Stir through parsley and serve with rice, risoni or pasta.

1 lb yukon gold potato, peeled and sliced thinly
1 (10 3/4 ounce) can cream of mushroom soup
1 cup gruyere cheese, grated
1/2 cup parmesan cheese, grated
1/2 cup low sodium chicken broth
1/3 cup dry white wine
3 garlic cloves, minced
2 shallots, minced
2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
1/2 teaspoon fresh thyme leave, chopped
1/2 teaspoon fresh sage leaf, chopped
kosher salt & freshly ground black pepper, to taste

Steps:

  • Preheat oven to 375; F and lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  • Heat butter and olive oil in a large pan or skillet and saute mushrooms and shallots until softened and tender. 3-5 minutes.
  • Add minced garlic, thyme and sage, season with salt and pepper, and cook for another 1 minute, or until fragrant.
  • Pour in white wine and cook for another 3 minutes, or until liquid has mostly evaporated.
  • Remove from heat and set aside.
  • Arrange 1 layer of potato slices on the bottom, then add a layer of sauteed mushrooms.
  • Repeat with remaining vegetable layers.
  • In a small bowl, whisk the chicken stock into the cream of mushroom soup, then pour mixture over the mushrooms and potatoes, tapping the baking dish against the counter to make sure the liquid gets in between the vegetables.
  • Sprinkle the cheeses over the top, cover with aluminum foil and place baking dish in oven.
  • Bake for 40 minutes, then uncover and bake for another 20 minutes.
  • Remove from oven and let cool 5 minutes before serving.

Cheese, Mushrooms, Chickens, what could be better??? :D I concocted this after deciding to do some baked mushrooms for a side, but preferred an all-in-one meal.

500 g mushrooms
2 cups broccoli florets
2 cups cauliflower florets
8 boneless skinless chicken thighs
1 large onion
1 celery rib, sliced in 1cm thick bits
4 garlic cloves, sliced
1 teaspoon bottled minced garlic
4 tablespoons butter, seperated
1 cup chicken broth
1 cup sour cream
1/2 cup cornflour
1/4 cup tomato sauce
salt and pepper, to taste
1 cup cheddar cheese, grated

Steps:

  • Over medium-heat, saute the sliced garlic cloves in 1 tablespoon of butter until scent is released, add onion and celery and chicken thighs. Cook for approximately 10-15minutes. Until onion is soft and chicken has been THOROUGHLY browned.
  • Remove from frying pan and place into a large baking tray, leaving juices in the frying pan.
  • Melt another tablespoon of butter and the teaspoon of minced garlic in amongst the juices and add mushrooms. Cook for 5minutes, stirring constantly, and then add brocolli and cauliflower. Stir constantly and cook for another 5minutes. Then place in the baking tray. Juices and all.
  • Preheat oven to 180 degrees Celcius.
  • Mix together the flour, salt, and pepper. Melt the remainder of the butter and mix the flour mixture until well combined and smooth. Slowly top off with the chicken broth and mix well until smooth. Add the sour cream and tomato sauce. Mix well. Pour over what's in the baking tray.
  • Cover and bake for 45minutes, uncover and sprinkle with the grated cheese and bake uncovered for 10-15minutes or until cheese has browned.
