This recipe was inspired by the beef roll from Pine and Crane in Los Angeles, CA.

Number Of Ingredients 21

1 teaspoon vegetable oil
Two 1-pound bone-in beef shanks
4 to 6 slices fresh ginger
5 dried chiles
1/2 bunch scallions, cut into 3-inch pieces
1 1/2 cups soy sauce
1 1/2 cups red wine
1/2 cup brown sugar
1 teaspoon whole cloves
1 teaspoon fennel seeds
1/2 teaspoon white pepper
6 to 8 whole star anise
3 whole cardamom pods
1 small cinnamon stick
6 tablespoons hoisin sauce
1/2 cups all-purpose flour, plus more for rolling
1/2 cup warm water
1 teaspoon vegetable oil, plus more for cooking
1/2 cup cilantro, roughly chopped
2 cucumbers, julienned
2 scallions, sliced

Steps:

  • For the braised beef: Heat the oil in a large pot over medium-high heat. Then add the beef shanks, browning deeply on each side, about 5 minutes per side. Set aside.
  • Add the ginger, dried chiles and scallions and saute until fragrant. Add the soy sauce, wine, sugar, cloves, fennel, white pepper, star anise, cardamom and cinnamon stick. Return the beef to the pot, add enough water to cover and bring to a simmer. Cover and cook gently until tender when pierced with a fork, about 2 hours.
  • Shred the beef with forks and set aside. Reserve 6 tablespoons of the braising liquid and mix with the hoisin sauce in a small bowl until smooth.
  • For the wraps: Combine the flour, water and oil and knead until smooth and pliable, about 5 minutes; the dough should be slightly tacky. Cover with plastic wrap and rest for 10 to 15 minutes. The resting is important, don't skip it!
  • Roll the dough out into a 10-by-14-inch rectangle and then roll into a log. Cut into 6 pieces. On a lightly floured surface, press down on your small piece of dough and roll into a circle, about 1/4-inch thick. Let rest for 10 minutes.
  • Stretch each circle out until you can see light coming through the dough. Set aside with a damp cloth on top. When ready to use, heat up a little oil on a griddle or large saute pan over medium- high heat; the pan should be hot but not smoking. Place the wrap in the pan and cook until golden brown on one side. Then flip and cook until just cooked on the other side. Repeat with the remaining wraps.
  • To assemble: Brush 1 tablespoon of the hoisin sauce evenly onto the less cooked side of the wrap. Evenly layer the beef onto the wrap. Add the cilantro, cucumber and scallions. Roll up, slice and enjoy!

1/4 teaspoon black pepper
4 1/2 tablespoons olive oil
1/3 cup pitted green olives, chopped
1 tablespoon drained bottled capers, chopped
4 tablespoons pine nuts
1/4 cup fresh bread crumbs from an Italian loaf
2/3 oz finely grated Parmigiano-Reggiano (1/3 cup)
4 tablespoons finely chopped fresh flat-leaf parsley
2 (1/2-lb) pieces boneless beef top round (1/4 inch thick)

Steps:

  • Make tomato sauce:
  • Cook tomatoes with garlic, salt, and 1/8 teaspoon pepper in 2 tablespoons oil in a 2-quart heavy saucepan over moderately high heat, stirring occasionally, until tomatoes have broken down and sauce is thickened, 8 to 12 minutes.
  • Make filling:
  • While tomatoes are cooking, pulse olives, capers, and 2 tablespoons pine nuts in a food processor until coarsely chopped and transfer to a bowl. Stir in bread crumbs, cheese, 2 tablespoons parsley, 1 tablespoon oil, and remaining 1/8 teaspoon pepper.
  • Pulse tomato sauce in cleaned processor until coarsely puréed, then return to saucepan and keep warm.
  • Make beef rolls:
  • Pound meat between 2 sheets of plastic wrap with flat side of a meat pounder or with a rolling pin until 1/8 inch thick, then cut each piece in half crosswise. Sprinkle 1 piece of beef evenly with one fourth of filling. Starting with a long side, roll up beef, then tie in 3 places with kitchen string. Season beef roll well with salt and pepper. Make 3 more rolls with remaining beef and filling. Heat remaining 1 1/2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until just beginning to smoke, then cook beef rolls, turning, until well browned on outside, 3 to 4 minutes for medium-rare. Let beef stand 5 minutes. Cut off kitchen string and halve each roll diagonally.
  • Spoon sauce onto 4 plates, then top with beef and sprinkle with remaining 2 tablespoons each of pine nuts and parsley.

This chicken dish has intense flavors! Serve this with hot cooked linguini or spaghetti if desired and crusty rolls on the side. The complete recipe can be doubled.

3 -4 lbs bone-in chicken legs with thigh (skin on or off)
1/2 cup flour
1 teaspoon seasoning salt (or white salt)
1/4 teaspoon cayenne pepper (more if desired, adjust the amount to suit heat level)
1/2 teaspoon garlic powder
black pepper (optional)
3 -4 tablespoons olive oil
1 (28 ounce) can whole tomatoes, cut up (with juice)
4 -5 medium potatoes, cut into smaller pieces
1 large onion, sliced
1 tablespoon minced garlic (or to taste, I use lots!)
1 cup pitted ripe olives, halved (or to taste)
1/2 cup dry red wine
2 tablespoons capers (these can be omitted if you do not like capers, but they are good to add in)
1 teaspoon dried basil (rubbed between fingers)
1/2-1 teaspoon dried oregano (rubbed between fingers)
1 tablespoon cold water
2 -4 teaspoons cornstarch
parmesan cheese (optional)

Steps:

  • In a large plastic bag combine flour, seasoning salt, cayenne pepper, garlic powder and black pepper (if using); shake bag to combine spices.
  • Add in chicken pieces one at a time, shaking to coat with flour mixture.
  • In a large Dutch oven, heat oil and brown chicken on all sides for about 5-6 minutes on each side, or until lightly browned, adding in more oil if needed.
  • Add in the tomatoes with juice, potatoes, onion, garlic, wine, capers (if using) and herbs; bring to boiling, reduce heat and cover with a lid.
  • Simmer for about 40 minutes, or until chicken is done and no longer pink.
  • Remove the chicken and transfer to a large serving dish, cover with foil to keep warm or place in a 200 degree oven.
  • In a small bowl or cup combine the water with cornstarch; add/stir into tomato mixture in the Dutch oven, and cook for about 2-3 minutes, stirring with a spoon.
  • Pour the tomato mixture over the chicken in a large serving dish/bowl.
  • Sprinkle with grated Parmesan cheese if desired and serve.

This recipe is much like a puttanesca sauce but without the anchovies. It can be salty so be sure to rinse the olives and capers, especially if you can't find low-salt tomatoes. It's from a cookbook called "Pasta Light" which I've had for 15 years. I wanted to post it here to save it. My picky husband will eat this straight from the pan, before it even goes onto the pasta. Best served with "strand" pasta like spaghetti or linguine, rather than shapes. The recipe doubles well - I often double and freeze half.

1 lb spaghetti or 1 lb linguine
1 tablespoon olive oil
3 medium garlic cloves, minced
1 small onion, coarsely chopped
1 (16 ounce) can no-salt-added whole tomatoes, with their juice
1 cup about 48 medium pitted black olives, drained, rinsed and chopped into about 4 pieces each
3 tablespoons capers, drained and rinsed
1 tablespoon balsamic vinegar
1 tablespoon tomato paste
2 teaspoons sugar
1/2 tablespoon dried oregano

Steps:

  • Prepare pasta according to package instructions.
  • In a large skillet, heat olive oil and saute onions till they start to turn clear.
  • Add the garlic and saute briefly. Don't let it brown.
  • Add the tomatoes, breaking them up with your hands or a spoon.
  • Stir in the rest of the ingredients.
  • Simmer for about 5 to 10 minutes. Sauce will thicken slightly but still should have liquid.

Allow the currants to marinated for at least a few hours. After that, this dish takes minutes to throw together.
