OLD-FASHIONED ICEBOX CAKE
This Old-Fashioned Icebox Cake is a classic no-bake dessert that only requires 5 ingredients!

Steps:
- In a large bowl, use an electric mixer to beat heavy cream, powdered sugar, vanilla and salt until stiff peaks form.
- Spread a very thin layer of the whipped cream in the bottom of a 9 x 13-inch dish.
- Place a layer of the graham crackers or chocolate wafers in the bottom of the dish, breaking them as necessary in order to fit.
- Gently spread ¼ of the whipped cream on top of the crackers. Top with a second layer of crackers and then another layer of whipped cream.
- Repeat the layers until you have used a fourth layer of crackers and the final ¼ of the cream.
- Garnish the cake with crushed chocolate grahams, sprinkles, or grated chocolate.
- Cover loosely and refrigerate for at least 4 hours, or up to overnight.

Steps:
- In the bowl of an electric mixer using a whisk attachment, whisk the heavy cream and powdered sugar until stiff.
- Crush one-third of the wafers by hand or with a rolling pin inside a resalable plastic bag until they become coarse crumbs. Set aside.
- In a round 9-inch springform pan, layer in one-third of the whipped cream, smoothing evenly with a spatula. Then layer half of the remaining flat whole wafers close to each other, then one-third more of the whipped cream, then the remaining whole wafers and finally top with the rest of the whipped cream. Garnish the top of cake with the crushed wafers.
- Cover and refrigerate for at least 6 hours.
- Run a paring knife around the springform pan and release the wall of the pan from around the cake. Leave the cake on the bottom of the pan and transfer to a serving dish or cake stand, then slice and serve.

- Mix all ingredients together.
- Bake in a 8 inch square pan.
- Bake in a preheated oven 350** for 35 minutes.
- Serve plain or frost with Caramel icing.
- Icing: Heat brown sugar,milk and butter in a medium saucepan until it boils.
- Boil for 2 minutes.
- Remove from heat.
- Cool a bit.
- Add icing sugar and vanilla.
- Beat until smooth.
- Add more milk to icing sugar until spreading consistency is reached.

GRAHAM CRACKER CAKE (NO BAKE, 5 INGREDIENTS)
This no-bake graham cracker cake is made with just 5 ingredients and is an amazing copycat of an intricate honey layer cake. The fluffy sour cream frosting makes the cake really tender and the sweet graham crackers pair so nicely with the tangy frosting.

- In a large bowl, whip the chilled heavy cream with 1/2 cup powdered sugar and 1 teaspoon vanilla extract until stiff peaks form. Set aside.
- In another bowl, mix the sour cream with the remaining 1/2 cup powdered sugar and 1 teaspoon vanilla extract. Gently fold the whipped cream into the sour cream mixture until combined. Add more sugar if you have a sweeter taste preference.
- Spread about 1 1/2 cups of the frosting to cover the bottom of a 9 X 13 inch pan. Top with a layer of graham crackers, breaking the crackers as necessary, so the crackers fit like a puzzle in a single even layer. Top with more frosting, about 2 cups (it doesn't have to be exact), spreading the frosting to cover the graham crackers.
- You should have these layers in the end: 1 1/2 cups frosting, graham crackers, 2 cups frosting, graham crackers, 2 cups frosting, graham crackers, remaining frosting.
- Grate a chocolate bar on top of the last layer of frosting.
- Chill the cake in the refrigerator for at least 6 hours, or overnight before serving. You can make the cake up to 2 days in advance.
GRAHAM CRACKER JELL-O DESSERT
This is in request to 1970's jell-o recipes. My mother used to make this, and we just loved it with black cherry jell-o -- still do! (Prep time does not include chilling time.)

- Prepare Jell-O as directed.
- Let Jell-O partially set, just enough to be able to spread.
- Cover bottom of 8 inch square dish with whole graham crackers.
- Mix sugar and sour cream until blended.
- Put half of sour cream mixture over graham crackers.
- Next spread partially set Jell-O over sour cream mixture.
- Place in refrigerator and let set until firm.
- Spread rest of sour cream mixture on top of Jell-O.
- Crush graham crackers and sprinkle on top.
- Keep in refrigerator until ready to serve.
- Cut into squares.

This recipe was taken from the 2 April, 1940 edition of the Vancouver Sun newspaper. It was a 'prize winning recipe' submitted by Mrs R.G. Gilman who says "this is an ideal recipe to use when preparing for luncheon or bridge parties". As I was unfamiliar with the term 'Graham Wafer', I did a quick check, and verified that they are the same as 'Graham Crackers'. Enjoy!

- Cut Marshmallows into small pieces and add to milk.
- Add Walnuts and Wafers, saving out 1 cup of the crushed Wafers.
- Line a cake pan (7"x10") with 1/2 cup of Wafers.
- Press the cake mixture in.
- Add or press the remaining 1/2 cup of Wafers on top.
- Let stand until set. Do not cook.
