CHEESY MUSHROOM CASSEROLE
This deliciously cheesy mushroom casserole is wonderfully flavored with onions, thyme, and melted gruyere.

Steps:
- Preheat your oven to 400 degrees F. Grease a 2-quart baking dish with olive oil.
- Heat the olive oil in a large, deep skillet over medium-high heat. Add the mushrooms, onions, and kosher salt. Cook, stirring occasionally, until the mushrooms have released their liquid and the liquids have mostly evaporated, about 10 minutes.
- Add the garlic, black pepper, and thyme. Cook, stirring, for one more minute. Remove from heat.
- Transfer the mixture to the prepared baking dish. Sprinkle it with the shredded cheese.
- Bake the casserole until hot and bubbly, about 15 minutes. Sprinkle with parsley and serve.

- Preheat the oven to 350 degrees F.
- Heat the olive oil in a large skillet over medium-high heat. Add the mushrooms, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring occasionally, until the mushrooms are softened and have released most of their liquid, 7 to 8 minutes. Add the garlic and cook, stirring occasionally, until soft and fragrant, about 1 minute. Stir in the cream cheese and cook until melted and evenly coating the mushrooms. Stir in the mozzarella, 1/2 cup of the panko and 1/4 cup of the Parmesan until combined. Transfer to an 8-inch square baking dish.
- Combine the parsley, butter and remaining 1/2 cup panko and 1/4 cup Parmesan in a medium bowl. Sprinkle over top of the mushrooms and bake until the breadcrumbs are light golden brown, 25 to 30 minutes.
CHEESY MUSHROOM AND BROCCOLI CASSEROLE

- Preheat oven to 425 degrees F.
- Butter casserole dish. In a large pot, melt 3 tablespoons butter and flour over medium heat until golden in color to make a quick roux. The roux should resemble the color of peanut butter. Add mushrooms, onion, garlic, garlic powder, cayenne pepper, heavy cream and chicken stock. Add broccoli, 1 cup of the cheese and rice. Season with salt and pepper, to taste. Pour into buttered dish and top with remaining shredded Cheddar. Bake until cheese is melted and golden, about 20 minutes.
CHEESY MUSHROOM BAKE
This is a nice side dish, for almost any meal. Similar to a stuffing. Flavors are best when it is refrigerated several hours or even overnight before baking. Mushroom lovers can experiment with different mushrooms. More can be added of desired.

Steps:
- In large skillet, melt butter.
- Stir in celery, onion and mushrooms.
- Saute over low heat, stirring occasionally, until onions become translucent and mushrooms give up their liquid, about 10 minutes.
- In bottom of 2 quart buttered casserole, spread half of bread cubes.
- Top with half of mushroom mixture.
- Sprinkle with half of cheese.
- Repeat with remaining bread, mushrooms and cheese.
- In bowl, beat together eggs, milk, mustard, salt and pepper, Pour over layers in casserole.
- Refrigerate at least 3 hours or overnight before baking.
- Bake at 325 degrees, about 50 minutes, until custard is firm.
- Let stand 5 minutes before serving.

Cheese, Mushrooms, Chickens, what could be better??? :D I concocted this after deciding to do some baked mushrooms for a side, but preferred an all-in-one meal.

- Over medium-heat, saute the sliced garlic cloves in 1 tablespoon of butter until scent is released, add onion and celery and chicken thighs. Cook for approximately 10-15minutes. Until onion is soft and chicken has been THOROUGHLY browned.
- Remove from frying pan and place into a large baking tray, leaving juices in the frying pan.
- Melt another tablespoon of butter and the teaspoon of minced garlic in amongst the juices and add mushrooms. Cook for 5minutes, stirring constantly, and then add brocolli and cauliflower. Stir constantly and cook for another 5minutes. Then place in the baking tray. Juices and all.
- Preheat oven to 180 degrees Celcius.
- Mix together the flour, salt, and pepper. Melt the remainder of the butter and mix the flour mixture until well combined and smooth. Slowly top off with the chicken broth and mix well until smooth. Add the sour cream and tomato sauce. Mix well. Pour over what's in the baking tray.
- Cover and bake for 45minutes, uncover and sprinkle with the grated cheese and bake uncovered for 10-15minutes or until cheese has browned.

Steps:
- Preheat oven to 375; F and lightly grease a 9×13-inch baking dish with butter or non-stick spray.
- Heat butter and olive oil in a large pan or skillet and saute mushrooms and shallots until softened and tender. 3-5 minutes.
- Add minced garlic, thyme and sage, season with salt and pepper, and cook for another 1 minute, or until fragrant.
- Pour in white wine and cook for another 3 minutes, or until liquid has mostly evaporated.
- Remove from heat and set aside.
- Arrange 1 layer of potato slices on the bottom, then add a layer of sauteed mushrooms.
- Repeat with remaining vegetable layers.
- In a small bowl, whisk the chicken stock into the cream of mushroom soup, then pour mixture over the mushrooms and potatoes, tapping the baking dish against the counter to make sure the liquid gets in between the vegetables.
- Sprinkle the cheeses over the top, cover with aluminum foil and place baking dish in oven.
- Bake for 40 minutes, then uncover and bake for another 20 minutes.
- Remove from oven and let cool 5 minutes before serving.

- In a large skillet over med-high heat, melt butter.
- Add onions, garlic, cabbage, mushrooms, salt and pepper and cover; stirring occasionally until cabbage is wilted.

- Grease a 13 x 9-inch baking dish.
- In a bowl mix together 1-1/2 cups shredded cheddar with 3/4 cup shredded mozzarella cheese then sprinkle evenly into the bottom of the baking dish.
- In a large skillet melt butter oven medium heat; add in sliced mushrooms and cook until they release there moisture (about 10 minutes).
- Add in green onions and red bell pepper; saute for 3 minutes.
- Spoon the mushroom mixture over the cheese, then sprinkle the chopped ham over the mushroom mixture.
- In a bowl whisk together flour, eggs, 1/2 and 1/2, salt, pepper and cayenne (if using) until thoroughly blended; pour evenly over the ham.
- Cover and refrigerate for 8-24 hours.
- Remove from fridge 30 minutes before baking.
- Set oven to 350°F.
- Bake for 35-40 minutes.
- Top with 1 cup cheddar cheese (or to taste) and return to oven for 2-3 minutes or until the cheese melts.
