- In a large saucepan, cook the sausage, onion and celery over medium heat until meat is no longer pink; drain. , Stir in the water, potatoes and bouillon. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Add corn; simmer 10 minutes longer or until potatoes are tender. , Meanwhile, in a small saucepan, melt butter; stir in flour and pepper until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir into the sausage mixture.

- Place the potatoes, carrot and onion in a 2.5 quart lightly greased casserole dish. Add the oil, house seasoning and Italian seasoning. Toss to coat well then dot the potatoes with the butter. Lay the sausages across the top. Cover with tinfoil and place in a 425° oven for 30 minutes. Remove and uncover, return to the oven for 20 minutes. Remove and top with the cheese and place back in the oven for 10 minutes.

- In a large stockpot, brown sausage and break up into pieces. Remove sausage from pot, drain fat & set aside.
- In the same pot, melt the butter and oil together. Add the onion, celery, carrots & garlic and saute until onions are translucent but not browned.
- Stir in the potatoes, dried herbs, chicken stock and sausage. Bring to a simmer and cook until potatoes are tender.
- Turn heat to low and add Velveeta & milk, stirring constantly until the cheese is melted.
- Bring soup to a boil and then add cornstarch/water mixture. Remove from heat & stir in sour cream.

- Drain, add onion and cook until soft.

- In large saucepan, melt margarine over medium high heat. Add celery and onion; cook and stir until tender, about 5 minutes.

One of my goals in life is to make as many delicious things from potatoes as possible...They're so CHEAP! I absolutely could not believe how good this was. I'm a beginning cook, so it was a little intimidating how attentive I had to be to the chowder-making process, but that's just the way chowders are--and this was SO worth it. I've cooked it for everyone I know, so they think I'm some kind of fancy kitchen goddess. It's simply lovely to make on a chilly night (isn't it pleasant to huddle near delicious-smelling steam rising off of yummy food when it's cold out there?), and I like to serve it with beer bread. - Combine water, potatoes, celery and carrot in medium saucepan. Bring to boil. Reduce heat and simmer uncovered until veggies are tender (about 10 minutes).

- Gather the ingredients.
