I wanted to make a different sort of meatloaf for dinner last night, and this is what I came up with. This meatloaf is moist and cheesy and oh-so-delicious! Tastes pretty darn good cold, too. :) I often make a double batch and freeze one in a disposable meatloaf pan to give to bachelor friends.

1 egg
1 cup seasoned dry bread crumb
1 teaspoon minced garlic
1/2 cup of your favorite pasta sauce, homemade or in the jar
1 cup chopped onion
1/4 cup chopped fresh basil
3/4 lb lean ground beef
1/2 lb hot Italian sausage
1 cup cubed mozzarella cheese, in about 1/4 inch pieces
additional pasta sauce, for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, stir together the egg, breadcrumbs (I whir herbed dry stuffing mix in my food processor to make these), garlic, and 1/2 cup pasta sauce until well-mixed.
  • Add remaining ingredients (except the garnish), and mix together well (I do the whole thing in my sturdy KitchenAid mixer, which works quite well).
  • Put into a large loaf pan, top/garnish with additional pasta sauce (I like a*lot* of sauce and so use about a half-cup, but three or four tablespoons would do, too), and bake at 350 degrees F for 1 hour.
  • Serve with rice, spaghetti, or scalloped potatoes.

A family favorite meatloaf recipe, that's easy to make and tastes absolutely delicious!

1.50 pounds ground beef, bison, turkey or chicken*
1 large egg, whisked
20 saltine crackers, crushed
1/3 cup ketchup
1 (8 ounce) can tomato sauce, divided
2 tablespoons parmesan cheese
1 cup lite mozzarella cheese, divided**
1 teaspoon salt
1 teaspoon Italian seasoning
½ teaspoon dried basil + fresh chopped basil or parsley as garnish if desired
1/8 teaspoon pepper
½ teaspoon sugar

Steps:

  • Preheat oven to 350ºF. and prepare 9x5 loaf pan by lining it with foil and spraying the foil with nonstick cooking spray.
  • In a large mixing bowl, combine all ingredients, except 1/2 of the tomato sauce and the mozzarella.
  • After ingredients are combined, transfer the meatloaf mixture to a flat surface, covered with parchment or wax paper. Shape the meatloaf into an oval or square and sprinkle most of the mozzarella over the middle of the meatloaf. Save about 1/4 cup of the mozzarella for the topping. Next, roll the meatloaf up and place it in the loaf pan. Use your fingers or the back of a spoon to press the meatloaf down so that it is all even at the top. Pour the reserved 1/2 of tomato sauce over the top and spread out evenly.
  • Bake for 1 hour. Once cooked, remove from oven and sprinkle additional mozzarella cheese over the top. Bake for about 10-15 minutes more.
  • Allow meatloaf to cool for about 10 minutes and then cut loaf into 8 even slices. Enjoy with a side salad or another favorite side dish!

3 lb lean ground beef (i.e. 90/10 OR 2 lbs with 1 lb Italian sausage)
1 medium sweet onion (finely diced)
1 medium green bell pepper (seeded and finely diced)
1 cup Panko breadcrumbs
1/2 cup grated Parmesan cheese
1/2 cup pasta sauce (plus additional warmed for serving)
2 Tbsp chopped fresh basil or Italian parsley
2 Tbsp Worcestershire sauce
2 tsp dry Italian seasoning
2 tsp steak seasoning (i.e.Montreal or Chicago)
1 1/2 tsp salt (may adjust to taste)
4 cloves garlic (minced)
3 large eggs (lightly beaten)
1 8 oz block mozzarella cheese, sliced into 20 equal slices
8-10 slices mozzarella or provolone cheese

Steps:

  • Preheat the oven to 350°F. Liberally spray a bundt pan with cooking spray. Have nearby a foil lined sheet pan.
  • In a medium-size mixing bowl mix together the ground beef, onion, green pepper, bread crumbs, Parmesan, pasta sauce, parsley, Worcestershire, Italian seasoning, steak seasoning, garlic and salt. Add eggs.
  • Using your hands mix until fully combined and the ingredients are evenly distributed. Divided in half.
  • Press 1/2 of meatloaf mixture in pan. Arrange the mozzarella cheese over the meatloaf then top with the remaining meatloaf mixture. Press evenly.
  • Bake for 45 minutes. Remove from oven. Drain liquid from bundt pan. (Use oven mitts the pan will be hot.) Center foil lined sheet pan on top, then flip to Invert meatloaf onto the pan. Arrange cheese slices overlapping on top.
  • Increase oven temperature to 375°F. Return to oven baking for an additional 15 minutes or until cooked through and cheese has melted. Rest on pan for 10 minutes then transfer to a platter or cake stand.
  • Serve slices with additional warm pasta sauce on the side.

1 pound ground pork
1 (1 ounce) envelope dry onion soup mix
2 eggs, beaten
1 ½ cups dry bread crumbs
ground black pepper to taste
¾ cup water
2 cups shredded mozzarella cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture.
  • Bake in preheated oven for 60 minutes. Let cool 10 to 15 minutes before serving.

Easy, freezes well (raw), and can be tripled. If you sub in ground turkey, that is good too. While I was still working I would put meatloaf in oven (frozen) with baker potatoes (wrapped in foil) and baked carrots in the morning before I left the house, and set up my delay bake cycle on my oven and come home to a nice meal. If you do have leftovers, you can cube the leftovers up and add to spaghetti sauce or make yourself a sandwich.

1 cup breadcrumbs
6 ounces tomato juice
1/4 cup onion, chopped
1 egg
4 olives, sliced
1/8 teaspoon pepper

Steps:

  • Mix first nine ingredients.
  • Put half of meat mixture into loaf pan.
  • Top with shredded mozzarella.

  • Bake at 350°F oven for 1 hour and 15 minutes.
  • If you freeze it (raw), double wrap in foil.
  • To make in crockpot (which I have not done yet)--put 3 heavy duty foil strips, each measuring 18 X 3 inches in a crisscross so they resemble spokes of a wheel in crock pot. Place meatloaf in the center of the strips. Pull the foil strips up and over the meatloaf. Cover. Use the foil as handles to lift out. Estimating time at 8 hours on LOW or 4 hours on HIGH. Also, read that you can cut up two potatoes, into finger size pieces and put that underneath the meatloaf in crock pot. Ummm.

1 1/2 lbs lean ground beef
2 cups soft french breadcrumbs
1/2 cup shredded parmesan cheese (2 ounces)
1/4 cup chopped fresh basil or 1 1/2 teaspoons dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
4 garlic cloves, minced
1 (8 ounce) can pizza sauce or 1 (8 ounce) can spaghetti sauce
1 1/2 cups shredded provolone cheese (or 6 ounces sliced)
1 (7 1/4 ounce) jar roasted red peppers, drained, chopped
1/4 cup chopped black olives

Steps:

  • Heat oven to 375º. Line 15x10x1-inch pan with foil; spray foil with cooking spray.
  • In large bowl, beat eggs. Stir in ground beef, crumbs, parmesan, basil, salt, pepper, garlic and 1/2 CUP PIZZA SAUCE until well combined.
  • On large sheet of foil, shape beef into 12x10 inch rectangle.
  • Top evenly with provolone, roasted peppers and olives to within 1/2 inch of edges.
  • Starting with one 10-inch side, roll up; press seam to seal. Place seam side down in pan.
  • Bake 40 minutes.
  • Remove from oven; spoon remaining pizza sauce over loaf.
  • Return to oven, bake 15-20 minutes longer or until loaf is thoroughly cooked in center and thermometer reads 160º. This may take longer, so please use the thermometer!
  • Let stand 10 minutes before slicing.
  • Serve with additional heated sauce, if desired.

2 lbs ground chuck or 2 lbs ground turkey (I use turkey to make it less fatty because of the cheese.)
1 envelope dry onion soup mix (I prefer Lipton Beefy Onion Soup mix)
3/4 cup oats
2 eggs
3/4 cup water
1/3 cup ketchup (I prefer Heinz)
2 cups shredded cheese (I used low-fat extra-sharp cheddar and mozz.combined)

Steps:

  • Preheat 350 degrees.
  • Combine meat, soup mix, oats, eggs, water, and ketchup with large mixer on low.
  • Slowly add cheese until well-blended.
  • Shape into loaf.
  • Bake for 45 minutes.
  • Add ketchup and sprinkle more cheese on top of loaf, if desired.
  • Cook 10 more minutes.
  • Let set 10 minutes before slicing.

  • 9. put half of the ketchup on the bottom of the pant you are cooking meatloaf in (I prefer a 9x13 baking dish).
  • 10. spread it around.
  • 11. form the meatloaf shape in your hands and put on top of ketchup and form the loaf more so its a even oblong shape.
  • 12. put remaining ketchup over the top of it.
  • 13. add whatever seasonings you like over the top (I like to crush a cracker over the top and put garlic salt and a little Parmesan cheese).
  • 14. Bake for 1 hour.
