2 cups sour cream
4 oz diced fire roasted green chiles
3 cups cooked rice
8 oz Pepper Jack cheese (shredded)
2 oz cheddar cheese (shredded)
garnish with cilantro, parsley or jalapenos (optional)

Steps:

  • Preheat oven to 350F.
  • Lightly spray an 8-in square casserole dish with cooking spray,
  • Combine sour cream and diced green chiles in a small bowl. Set aside.
  • Spoon 1 cup of rice into the bottom of the casserole dish.
  • Spread one-third of the sour cream mixture on top of the rice.
  • Top with one-third of the shredded pepper jack cheese.
  • Repeat layers two more times.
  • Cover with aluminum foil and bake for 20 minutes. Uncover and bake for an additional 10 minutes.
  • Serve immediately.

3 c rice (measure 3 c after it has been cooked, you're adding precooked rice to this)
4 oz green chiles (canned, diced)
2 c cheddar cheese
16 oz sour cream

Steps:

  • Preheat the oven to 350 degrees
  • Combine all ingredients in a large bowl. Spread the mixture into a 2-quart casserole dish.
  • Bake at 350 degrees for 35-40 minutes until the cheese begins to brown around the edges. Cool slightly before serving.
  • If you want to add a layer of cheese on the very top, add another 1/2-3/4 cup 10 minutes before cook time ends so it can melt and brown.

1 large onion, chopped
2 tablespoons butter
4 cups hot cooked long grain rice
2 cups sour cream
1 cup 4% cottage cheese
1/2 teaspoon salt

2 cans (4 ounces each) chopped green chiles, drained
2 cups shredded cheddar cheese

Steps:

  • In a large skillet, cook onion in butter until tender. Remove from the heat. Stir in the rice, sour cream, cottage cheese, salt and pepper. Spoon half of the mixture into a greased 11x7-in. baking dish. Layer with half of the chiles and cheese. 1 (6 ounce) package dry instant long grain and wild rice mix
1 (8 ounce) container sour cream
1 (4 ounce) can chopped green chiles, drained
1 (16 ounce) package shredded Cheddar cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking dish.
  • Prepare the instant long grain and wild rice mix according to package directions.
  • Spread 1/2 the cooked rice mix over the bottom of the prepared baking dish. In a bowl, mix the sour cream and green chiles. Spread 1/2 the sour cream mixture over rice, and top with 1/2 the cheese. Repeat the layers.

1 large boneless skinless chicken breast ((or 2 thin cut breasts))
2 cups cooked white rice
1 cup sour cream
5.52 ounces cream of celery soup ((half of a can))
1/3 cup canned mild hatch green chiles (chopped)
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups Colby-jack cheese (shredded)
Salt and pepper (to taste)
Fresh parsley or green onion (chopped, for garnish)

Steps:

  • Preheat your oven to 350 degrees F. Spray a 9-inch x 9-inch baking dish with non-stick cooking spray. Set aside.
  • If using 1 large breast, cut it in half to create two thin chicken breast pieces. Butterfly the chicken and then finish cutting all the way through.
  • Place a large skillet over medium heat. Cook chicken for 3 to 4 minutes per side, until no longer pink and cooked through.
  • Remove the chicken to a cutting board and finely chop or shred the chicken.
  • In a large bowl, stir together the cooked rice, sour cream, soup, and green chiles. Add the chicken, salt, and pepper and mix to combine.

3 green onions, sliced thin
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano

2 cups cooked shredded chicken breasts
2 cups cooked brown rice
8 ounce can diced green chiles
14 ounce can fire roasted tomatoes, drained
1/2 cup frozen corn, defrosted
3/4 cup green enchilada sauce
1/2 cup plain non fat Greek yogurt
3/4 cup shredded cheddar cheese, divided

Steps:

  • Preheat oven to 350° F. In a large oven safe skillet, heat the olive oil over medium heat. Add in the green onions and spices and sauté for a couple minutes.
  • Add the shredded chicken, rice, green chiles, fire roasted tomatoes, corn, and green enchilada sauce and 1/4 cup of the cheese. Stir everything together until it's combined. Season with salt and pepper as needed.
  • Once the cheese is melted and everything is heated through, remove the skillet from the heat and quickly stir in the Greek yogurt. Top with the remaining cheese and then bake for about 15 minutes or until the cheese is melted and the casserole is hot.
  • Serve the casserole as is or top it with diced tomatoes and chopped cilantro.

Steps:

  • Place water and salt in a 2-quart pan and bring to a boil over high heat.

2 tablespoons olive oil
1/4 large white onion, minced
1 cup long-grain white rice
2 cups water
2 ears fresh corn, kernels removed or 2 cups frozen corn, thawed
1 teaspoon kosher salt
Freshly ground black pepper
2 poblano chiles, charred, peeled, stemmed, seeded, and chopped * see Cook's Note
1/4 cup Mexican crema or sour cream
1/2 cup grated Monterey Jack cheese

Steps:

  • Heat the oil in a medium-size heavy skillet over medium-high heat. Add the onion, and saute for until translucent, about 5 minutes. Add the rice and cook until the rice is opaque, about 10 minutes. Stir in the water and the corn kernels, then season the water with salt and pepper, to taste. Bring the mixture to a boil. Reduce the heat to medium-low, cover, and simmer until the rice is tender, about for 15 minutes.
  • Preheat a broiler. Using a fork, fluff the rice and stir in the chopped poblanos. Transfer the rice to a 7 by 10-inch flameproof baking dish. Drizzle with the creama or sour cream and sprinkle the cheese over the top. Broil until the top is browned in spots and the cheese has melted, about 5 to 8 minutes.
  • Remove from the oven and serve.
  • *Cooks Note: To char the chiles (or any fresh chile): Put the chiles over a gas flame or underneath the broiler and cook until they are blackened on all sides. Enclose them in a plastic bag and let stand for 10 minutes to steam, which will make them easier to peel. Peel, stem, and seed the chiles. Once peeled, the chiles may be chopped, sliced or stuffed.

2 tbs olive oil
1 small onion, minced
1 yellow bell pepper chopped
1/2 cup milk
1 egg
1/2 cup sour cream
2 4 oz cans diced green chiles, drained well
10 oz diced, pre-cooked chicken
Pinch cayenne pepper
1 tablespoon cumin
Plenty of salt and pepper
2 cups shredded cheese (I used a combo of white cheddar and pepper jack, but Monterey Jack is really good too.)
4 cups cooked rice

Steps:

  • Preheat oven to 350 degrees F. rub olive oil on the sides and bottom of a large casserole dish.
  • In a large pan over medium-high heat, saute onions and bell peppers with olive oil until they begin to brown. Set aside.
  • Combine the rice, chicken, 1 1/2 cup of the cheese, green chilies, sour cream, cumin, cayenne, salt, pepper and onion mixture to the casserole dish and combine well. (Give the mixture a taste to make sure you have enough salt, pepper and cayenne.)
  • In a separate bowl, whisk together milk and egg. Add milk and egg to the rice mixture
  • Top the casserole with remaining shredded cheese and bake for 30 to 35 minutes.
