CHEESY ROASTED GARLIC BREAD

Cheesy Roasted Garlic Bread image

Provided by Food Network Kitchen

Time 1h25m

Yield 6 servings

Number Of Ingredients 7

1 head garlic
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 sprigs fresh thyme plus 1/2 teaspoon finely chopped leaves
1/2 large baguette (about a 12-inch piece), split lengthwise
2 tablespoons grated Parmesan
2 tablespoons coarsely chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F. Cut off the top third of the head of garlic, exposing the tops of the garlic cloves. Put the garlic on a piece of heavy-duty aluminum foil and drizzle with 1 tablespoon of the oil. Sprinkle with 1/4 teaspoon each salt and pepper and add the thyme sprigs. Wrap tightly with foil and roast until the cloves are golden brown and very soft, about 45 minutes.
  • Unwrap the garlic and let stand until cool enough to handle. Pour any garlic-flavored oil from the foil pouch into a small bowl; squeeze the roasted cloves into the same bowl, discarding the papery shells. Add the remaining 1 tablespoon oil, the chopped thyme and an additional 1/4 teaspoon each salt and pepper and mash with a fork until smooth.
  • Lay the bottom half of the bread on a piece of aluminum foil that is long enough to wrap the bread. Spread on half of the roasted garlic mixture and top with half of the Parmesan. Repeat with the remaining bread, garlic mixture and Parmesan. Press the halves together so the fillings are on the inside and wrap with the foil.
  • Bake until the bread is toasted and the cheese is melted, about 15 minutes. Separate the halves, sprinkle with chopped parsley and cut into 6 pieces.

THE BEST GARLIC BREAD

The Best Garlic Bread image

We went very classic with this garlic bread recipe-lots of butter and lots of garlic loaded onto warm, soft and pillowy French bread. You could make a light meal by rounding it out with a crisp green salad. Or serve it our favorite way-alongside your favorite red-sauce pasta.

Provided by Food Network Kitchen

Categories     side-dish

Time 30m

Yield 8 servings

Number Of Ingredients 6

1 1/2 sticks (12 tablespoons) unsalted butter
4 cloves garlic, finely chopped
1 large soft Italian or French loaf
1/4 cup grated Parmesan
Kosher salt
2 tablespoons flat-leaf parsley leaves, finely chopped

Steps:

  • Arrange a rack in the center of oven and preheat to 450 degrees F.
  • Melt the butter in a small skillet over medium heat. Add the garlic and cook, stirring occasionally, until the butter is golden and the garlic is very fragrant, about 3 minutes.
  • Slice the bread in half lengthwise. Liberally brush the crust with the garlic butter. Turn the bread cut-side up. Slice each loaf crosswise at 2-inch intervals without cutting all the way through, making "pull-apart" garlic bread. Liberally brush the cut sides of the bread with more garlic butter, spreading any remaining garlic evenly over top. You should use all the garlic butter. Carefully transfer the bread to a rimmed baking sheet.
  • Sprinkle the loaves with the Parmesan and a pinch of salt and bake until the edges of the bread are a deep golden brown, 10 to 15 minutes. Top with the parsley. Serve warm.

KOREAN CREAM CHEESE GARLIC BREAD

Korean Cream Cheese Garlic Bread image

The name of this bread, yook jjok maneul ppang, translates to six-sided garlic bread, and that's what you get--homemade bread sliced into 6 wedges, then filled with sweet cream cheese and dunked in a garlic butter custard. The unique combination of garlicky and sweet baked into fluffy loaves originated from a bakery in Gangneung, Korea and became famous after a video of the bread went viral. This recipe yields plenty of garlic butter custard in which to submerge each loaf for a satisfying, tasty experience at home.

Provided by Food Network Kitchen

Time 4h20m

Yield 4 garlic breads

Number Of Ingredients 21

1 cup milk, at room temperature
3 tablespoons granulated sugar
One 1/4-ounce package active dry yeast (about 2 1/4 teaspoons)
6 tablespoons unsalted butter, at room temperature
1 teaspoon kosher salt
3 1/2 cups all-purpose flour, plus more for dusting (see Cook's Note)
1 large egg, lightly beaten
Nonstick cooking spray, for the bowl and parchment
1 tablespoon milk
1 large egg
12 ounces cream cheese, at room temperature
1/4 cup granulated sugar
3 sticks (1 1/2 cups) unsalted butter, melted
1 cup heavy cream, at room temperature
1/3 cup minced garlic (15 to 20 cloves)
1/3 cup packed fresh parsley leaves, chopped
3 tablespoons granulated sugar
1 tablespoon honey
1 tablespoon garlic powder
1 teaspoon kosher salt
2 large eggs, at room temperature and lightly beaten

Steps:

  • For the bread: Warm 1/4 cup of the milk in a small saucepan over medium-low heat to between 100 and 115 degrees F. Pour the warm milk into the bowl of a stand mixer fitted with a hook attachment. Add the sugar and yeast and let stand until foamy, about 5 minutes.
  • Add the butter, salt, 1/2 cup milk and half of the flour to the bowl. Mix on medium-high speed just to incorporate. Add the egg and mix until fully incorporated. Add the remaining 1/4 cup milk and remaining flour. Knead with the hook on medium-high speed until the dough is smooth and pulls away from the sides, about 5 minutes (the dough will still be sticky).
  • Lightly spray a large bowl with cooking spray, scrape the dough into the bowl and turn to coat it with the spray. Cover with plastic wrap and let stand in a slightly warm place until doubled in size, about 2 hours.
  • Line a baking sheet with parchment and lightly coat with cooking spray. Turn the dough out onto a lightly floured surface. Cut the dough into 4 equal pieces with a bench scraper or chef's knife. Roll each piece of dough into a ball and arrange on the prepared baking sheet, leaving plenty of space between each. Loosely cover with plastic wrap and let stand again until puffy and doubled in size, about 45 minutes.
  • Position an oven rack in the middle of the oven and preheat to 375 degrees F.
  • For the egg wash: Lightly whisk the milk and egg in a small bowl. Brush the rounds with the egg wash. Bake, rotating the baking sheet halfway through, until golden brown, about 24 minutes. Transfer the breads to a rack to cool completely. Reserve the baking sheet with parchment, as it will be used again. Leave the oven on.
  • Once cooled, use a sharp serrated knife to cut each bread into 6 equal wedges partly through, leaving at least 1/4 inch intact on the bottom of each.
  • For the cream cheese filling: Meanwhile, beat the cream cheese in the bowl of a stand mixer fitted with a whisk attachment, scraping down the sides as necessary, until smooth, about 2 minutes. Add the sugar, gradually increase the mixer speed to medium high and beat until the sugar is incorporated and the filling is creamy and smooth, about 2 minutes.
  • Transfer the filling to a large piping bag. Pipe the filling in between the wedges of each bread, working from the outside to the center while holding and separating each wedge with your fingers. Be careful not to break the wedges. Save some filling for the end; set aside.
  • For the garlic butter custard: Whisk together the butter, heavy cream, garlic, parsley, sugar, honey, garlic powder, salt and eggs in a large bowl to combine.
  • Dip the breads one at a time in the garlic butter custard, cut-side down. Separate the wedges while holding each bread down in the custard to coat the inside and outside of each wedge. With two hands, carefully flip each bread upside down and submerge entirely in the custard. Arrange the breads back on the reserved parchment-lined baking sheet. After all of them have been dipped completely in the custard, repeat once more to double dip. Make sure there's plenty of minced garlic and parsley on the breads. (There will be custard leftover at the end.)
  • Bake until deep golden brown, glossy and crispy on the outside, 13 to 15 minutes (the garlic will start smelling fragrant and the custard drippings will start crisping/browning around the edges). Let cool for 10 minutes, then pipe some of the remaining cream cheese filling in the center of each bread. (The breads will open up slightly as you pipe in the center.) Serve immediately.

CHEESY PULL-APART GARLIC BREAD

Cheesy Pull-Apart Garlic Bread image

Studded with melty cheese and herbs, this garlic bread couldn't be easier! I like to buy a crusty round loaf of bread right from the bakery section of my grocery store. Be careful not to cut all the way through the loaf-you don't want the cheese to ooze out the bottom and stick to the pan.

Provided by Kardea Brown

Categories     side-dish

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 7

1 small round loaf sourdough bread (7 ounces)
4 tablespoons unsalted butter
1/3 cup chopped fresh parsley, plus for more garnish
1 teaspoon onion powder
Pinch kosher salt
5 cloves garlic, minced
4 ounces mozzarella, cut into 1/2-inch cubes

Steps:

  • Preheat the oven to 350 degrees F.
  • Score the bread with 2-inch-deep cuts with a serrated knife into a 1-inch diamond pattern without slicing all the way through. Place on a parchment paper-lined baking sheet.
  • Melt the butter in a small saucepan over medium heat. Stir in the parsley, onion powder, salt and garlic. Brush the butter mixture all over the bread and into the cut diamonds using a pastry brush. Insert the cheese cubes in the crevices of the bread.
  • Cover the bread with aluminum foil and bake for 30 minutes. Uncover and bake until the cheese is melted and bubbly, 8 to 10 more minutes. Sprinkle with more fresh parsley. Serve hot!
