  • Peel eggplant and slice into 1/4 inch slices.

  • Add cheese to breadcrumbs.
  • Dip eggplant slices into cornstarch and shake off excess.
  • Dip into egg.
  • Press breadcrumb onto slices.
  • Fry till golden.
  • Salt to taste.

1 eggplant, sliced medium thin (leave skin on)
2 eggs
2 cups Italian breadcrumbs
1/4 cup parmesan cheese
1/4 cup dried parsley
1 tablespoon garlic powder
salt and pepper, to taste
2 cups vegetable oil

Steps:

  • Preheat oil in pan on medium till a splash of water sizzles on it.
  • Put everything in a giant freezer ziploc bag EXCEPT the eggplant, oil and eggs.
  • Skake it up well.
  • Lightly beat eggs in a bowl.
  • Dip eggplant slices in egg and add to bag about 3-4 at a time.
  • Shake them up good.
  • Place battered slices in hot oil.
  • flip after 2 minutes.
  • Remove when browned on both sides, about 4 minutes total.
  • Continue until all slices are done.
  • I always make this with pasta, garlic bread and my stuffed mushrooms (recipe posted).

  • Peel 2 small eggplants and cut into 1/4-inch-thick rounds. Put 1 cup flour in a shallow bowl, beat 4 eggs in another bowl and put 1 cup breadcrumbs in another. Coat the eggplant in flour, then egg (let any excess drip off), then breadcrumbs. Heat 1/4 inch of vegetable oil in a large skillet over medium-high heat. Fry the eggplant in batches until golden brown, 2 to 3 minutes per side (add more oil if necessary). Drain on a rack and sprinkle with salt.

  • Combine first 2 ingredients, stir well.

1 large egg
1/2 teaspoon coarse salt plus additional for sprinkling the eggplant
N/A coarse salt
1 cup fresh bread crumbs
1 small eggplant (about 1/4 pound), cut crosswise into 1/4-inch-thick slices
vegetable oil for deep-frying
lemon wedges if desired

Steps:

  • Put the cornstarch, the egg beaten with 1/2 teaspoon of the salt, and the bread crumbs in separate small dishes. Dredge each eggplant slice in the cornstarch, coating it thoroughly and shaking off the excess, coat it with the egg mixture, and dredge it in the bread crumbs, pressing on the crumbs to make them adhere. Transfer the eggplant as it is coated to paper towels and let it dry slightly. In a deep heavy skillet fry the eggplant slices in batches in 1/2 inch of 375°F. oil for 1 minute on each side, or until they are golden brown, and transfer them with tongs to paper towels to drain. Tastes like enchiladas! Yummy and healthier than regular enchiladas. Adapted from Sunset. *This has become my most popular recipe posted here. I've made it slightly different ways over the years. I sprinkle the oiled eggplant with garlic salt now. It's also great with a can of diced tomatoes and 1tbsp of tomato paste, extra cumin, garlic, dried onions, salt and cilantro. I also use reduced-fat cheese now. If you would like it spicier add some jalapenos. I love to eat it along an undressed salad of romaine, purple cabbage and grape tomatoes and eat bites of the salad and eggplant together with sour cream. Many people think it needs to be heartier so feel free to add beans, ground beef or chicken but I really don't think it needs it. It's also great served with rice.

1 1/2-2 lbs eggplants, unpeeled and cut into 1/2 inch slices (I use the American ones)
15 ounces tomato sauce
4 ounces diced mild green chilies
1/2 cup green onion, sliced
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
2 1/4 ounces sliced black olives, drained
6 ounces fat-free cheddar cheese, shredded (about 1 1/2 cups)

Steps:

  • Preheat oven to 450.
  • Spray baking sheet with oil and place eggplant slices on it in a single layer. Spray the tops of the eggplant with oil. Bake until soft when pressed about 15-25 minutes.
  • Meanwhile , in a small pot, combine tomato sauce, chiles, onions, cumin, garlic powder and olives. Bring to a simmer, then simmer, uncovered, over medium-low heat for 10 minutes.
  • Turn oven down to 350 when eggplant is done.
  • Arrange half the eggplant slices in a single layer over the bottom of a shallow 1 1/2 quart baking dish. Spoon half the sauce over eggplant and sprinkle with half the cheese. Repeat layers ending with cheese.
  • Bake at 350 until heated through and bubbly (about 30 minutes).
  • Top with sour cream if desired.

1 cup dry breadcrumbs
1/4 teaspoon salt
1 (6 ounce) package sliced mozzarella cheese
2 eggs, beaten
1/2 cup vegetable oil
1 loaf French bread (16-ounce)
lettuce
1 tomatoes, sliced

Steps:

  • Peel eggplant, and cut lengthwise into eight 1/4-inch slices.
  • Sprinkle both sides of slices with salt; allow to sit 30 minutes.
  • Rinse eggplant slices and pat both sides dry.
  • Combine breadcrumbs and 1/4 teaspoons salt.
  • Place slice of cheese between 2 slices of eggplant, trimming cheese to fit.
  • Dip eggplant-cheese sandwich in egg, and dredge in breadcrumb mixture.
  • Fry in hot oil until golden brown, cooking a few slices at a time.
  • Cut French bread into 5 to 6-inch portions (to fit length of eggplant).
  • Split in half lengthwise; toast.

Eggplant is one of my favorite vegetables, but I haven't found all that many recipes where it is allowed to take center stage; it is usually buried under so many other ingredients and flavors. This recipe is also a nice way to use up left-over pesto. Preparation time is mainly standing time for the eggplant as it drains its bitter juices.

2 teaspoons salt
4 tablespoons pesto sauce
4 ounces grated mozzarella cheese (about 1 cup)

  • Pre-heat oven at 375°F, and oil a shallow baking pan.
  • Cut the eggplant crosswise into 12 1/3 inch thick slices, discarding the ends.
  • Arrange in one layer on paper towels.
  • Sprinkle both sides of slices evenly with salt and cover with another layer of paper towels.
  • Let eggplant stand 30 minutes.
  • Rinse salt off, and pat dry with paper toweling.

1 cup buttermilk
3/4 cup self rising flour
1/2 cup self-rising cornmeal

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Brush eggplant slices with olive oil on both sides, and place them on a baking sheet. Sprinkle garlic powder over the top. Bake for 10 minutes.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the onion, garlic, tomatoes and spinach. Cook and stir for a few minutes until fragrant, and the tomatoes have released their juices. In a medium bowl, mix together 1/2 cup of ricotta cheese, 1/2 cup of mozzarella cheese, and 1/2 cup of Parmesan cheese. Set aside.
  • Place the eggplant slices in a greased 9x13 inch baking dish. Top with the spinach mixture. Spoon the cheese mixture over the spinach, and spread into a thin layer. Pour the spaghetti sauce over the cheese layer. Sprinkle the remaining mozzarella and Parmesan cheese over the top. Sprinkle with Italian seasoning.
  • Bake for 30 minutes in the preheated oven, or until heated through and the eggplant is easily pierced with a fork.

2 tablespoons coarse salt
1 pound buffalo mozzarella, drained and sliced crosswise into 8 equal pieces
8 fresh basil leaves
3/4 cup all-purpose flour
2 large eggs, lightly beaten
2 1/2 cups fresh breadcrumbs
4 cups vegetable oil
Tomato Sauce, warmed

Steps:

  • Place eggplant rounds in an even layer on a baking sheet. Sprinkle with salt and let stand 10 minutes. Rinse under cold running water and pat dry with paper towels.
  • Place 1 piece of mozzarella on half of the eggplant, followed by 1 piece of basil; sandwich with remaining eggplant.
  • Heat oil in a deep saucepan until it reaches 325 degrees on a deep-fry thermometer. Place flour, eggs, and breadcrumbs each in separate shallow dishes. Coat each eggplant sandwich evenly with flour, shaking off any excess. Then dip in eggs, followed by breadcrumbs to coat.

  • Roast the eggplant: Preheat the oven to 400°F (200°C). Line a large baking sheet with foil.
  • Cut the eggplants in half lengthwise and place on the prepared baking sheet cut-side up. Drizzle with the olive oil and season with the salt and pepper.
  • Roast the eggplant for 30-40 minutes, until tender.
  • Meanwhile, make the farro risotto: Heat the olive oil in a medium saucepan over medium heat. Add the onion and sauté until translucent, about 8 minutes.   • Remove the eggplant from the oven and turn the broiler on high. Scoop out ¼ cup of flesh from each half and discard.
  • Fill the eggplant halves with the farro risotto, dividing evenly. Sprinkle with the Parmesan cheese, then lay 2-3 slices of fresh mozzarella cheese on top. Drizzle with a bit of olive oil and sprinkle with salt and pepper.
  • Broil the eggplant for 7-10 minutes, until the mozzarella is golden brown. Garnish with the parsley and serve warm.
