This dip is an absolute hit everytime I make it! My husband and all of our friends devour it and it's always the first to go! It has a nickname of "white trash dip". I make it in a round 4 quart crock pot, but the recipe can be halved or doubled for smaller or larger crock pots.

4 (8 ounce) packages Philadelphia Cream Cheese
2 (16 ounce) packages jimmy dean original breakfast sausage
1 (10 ounce) can original Rotel tomatoes & chilies
1 (10 ounce) can hot Rotel tomatoes & chilies
tortilla chips

Steps:

  • Brown both packages of sausage in a skillet over medium heat.
  • Drain the sausage in a colander.
  • Cube the cream cheese into a crock pot.
  • Add the sausage to the cream cheese in the crock pot.
  • Add both cans of rotel (with the juice) to the crock pot.
  • Heat the mixture in the crock pot on high heat for approximately 1 hour, stirring occasionally until the dip is well mixed.
  • Reduce heat to warm/low and serve with tortilla chips.

drizzle olive oil
1 lb. ground pork sausage roll
1 lb. spicy ground pork sausage roll
1/2 tsp garlic powder
1/2 tsp minced dried onion
16 oz cream cheese, cubed
20 oz Ro-tel diced tomatoes and green chiles ((undrained))
1 tsp hot sauce
salt and pepper, to taste
2 cups shredded cheddar cheese, divided
minced fresh chives, for garnish

Steps:

  • Add a small drizzle of olive oil in a large skillet, and heat over MED-HIGH heat. Add both sausages and cook, breaking up meat with a wooden spoon as you cook, until sausage is browned, about 6-8 minutes.
  • Drain cooked sausage, then add to crockpot insert. Top with garlic powder, dried onion, cubed cream cheese, Ro-tel, hot sauce, pinch of salt and pepper, and 1 cup of the cheddar cheese.
  • Stir well, then cover and cook on LOW for 3-4 hours, or HIGH for 1.5-2 hours. Remove cover and sprinkle with remaining 1 cup of cheddar cheese, then cover again and cook another 10-15 minutes, until cheese is melted.
  • Sprinkle with minced chives and serve hot.

Steps:

  • Brown the sausage on the stove, and drain on paper towels. Unwrap the cream cheese, and put it into your crockpot. Chop up the sausage and add on top. Drain the Rotel, and add it. Cover and cook on low for about 90 minutes, or on high for 45. Stir well and eat with tortilla chips.

1 lb breakfast sausage, cooked (Owens regular)
1/2 large onion, chopped
2 lbs Velveeta cheese
10 3/4 ounces cream of mushroom soup
10 ounces Rotel Tomatoes, with bell peppers

Steps:

  • Brown hamburger meat with chopped onion.
  • Brown breakfast sausage.
  • Place hamburger and sausage in crock pot.
  • Place rest of ingredients in crock pot.
  • Turn on high until cheese is melted.
  • Turn back to low and serve.
  • Be sure to stir occasionally.
  • I estimated the cook time two hours.

2 pounds breakfast sausage (see note)
32 ounces cream cheese
20 ounces Rotel tomatoes (do not drain)
Juice of 1-2 limes (optional)

Steps:

  • Spray a slow-cooker with nonstick spray and set the temperature to LOW.
  • Add the tomatoes, their juices, cream cheese and lime juice (if using) to the slow-cooker. Mix well and place the lid on top.
  • In a large skillet, set over medium heat, cook the sausage until browned. Drain the sausage and add it to the cheese/tomato mixture; mix well and replace the lid.
  • Cook on high until the cheese has melted, stirring every 15 minutes; about 1 hour. Once the cream cheese has melted, set the slow-cooker to warm and stir about every 30 minutes.
  • Serve with Tostitos, your favorite crackers and/or your favorite sliced vegetables. Enjoy!
