My family loves pasta salads, but usually they have too much mayonnaise or oily dressing. Using hummus gives this dish a great taste and texture, while also increasing its nutritional profile. - In a large bowl, combine the first eight ingredients. In a small bowl, whisk together dressing ingredients; pour over salad and toss to coat. Serve immediately.

PASTA SALAD WITH CHICKEN AND SPINACH RECIPE
Steps:
- Gather the ingredients.
- Cook the pasta in boiling salted water following the package directions; drain and rinse well. Set aside to cool.
- Meanwhile, chop the spinach leaves coarsely and diced the red bell pepper half.
- Toss the cooled and drained pasta with the spinach, red bell pepper, tomato halves, onion, garlic, and chicken.
- Combine 1 cup of the mayonnaise with wine vinegar, lemon juice, mustard, pepper, and basil.
- Toss the dressing mixture with the pasta mixture. Add more mayonnaise, if needed. Taste and add salt, as needed. Refrigerate for at least 2 hours before serving time for best flavor.

- Bring a pot of salted water to a boil. Add the pasta and cook as the label directs, then drain.
- Meanwhile, melt the butter in a large saucepan over medium heat. Add the shallot and thyme and cook until softened. Whisk in the flour and cook, whisking, for 2 minutes, then whisk in the broth and milk. Season with 1/2 teaspoon salt and a few grinds of pepper. Cook, whisking, until thickened, about 5 minutes.
- Stir in the chicken, spinach and pasta and cook to heat through. Stir in the gruyère and season with salt and pepper. Divide among 4 bowls and top with toasted breadcrumbs.

- Heat oven to 375°F.
- Spray cookie sheet with cooking spray.
- Cook spinach in microwave as directed.
- Drain spinach in strainer; cool 5 minutes then carefully squeeze out all the water (very important).
- Heat oil over medium heat in skillet.
- Add onion and garlic; cook 2 to 3 minutes, stirring occasionally, until crisp-tender.
- Remove from heat and stir in spinach, bacon, chicken, cheese and mayonnaise.
- Unroll dough on work surface.
- Spread spinach mixture on rectangle to within 1/2 inch of edges.
- Starting at long side of rectangle, roll up; seal long edge.
- With serrated knife, cut into 20 slices.
- Place cut side down on cookie sheet.
- Beat water into egg mixture and brush the tops.
- Bake 10 to 15 minutes or until golden brown.
- Remove from cookie sheet.
- Serve warm.

- in large nonstick skillet, heat oil over med-high heat, brown chicken and transfer to a bowl.
- drain off any fat from pan, add onion (not green onion) garlic and black pepper, fry over medium heat until onion is soft, about 5 minutes, sprinkle with flour, cook stirring for 1 minute.
- return chicken along with juices from chicken to pan.
- add evaporated milk, cook stirring and without boiling, until thick enough to coat back of spoon, about 5 minutes. adjust seasoning if needed.
- meanwhile, in pot of boiling salted water cook penne until tender but firm, about 12 minutes, add spinach, drain and return to pot, add chicken mixture, red pepper, basil, lemon juice and green onions: toss to combine.
- serve while hot. if desired spinkle indivdual servings with hot pepper flakes.

- Cook pasta according to packet directions.
- Add olive oil to frying pan and heat over medium-high heat.

An easy dish for the busy cook. Combines tender cubes of chicken with spinach and creamy gouda cheese! One of my husband's most requested dishes.

Steps:
- Thaw spinach and preheat oven to 375°F.
- Chop chicken into cubes of about 1 square inch ( or 2.5 cm squared).
- Cook chicken in skillet with tbsp of vegetable oil until mostly cooked through. Do not cook through completely or chicken will get dry.
- Cut gouda into strips and melt it in 1/4 cup of fat free milk. (I usually do this in the microwave by cooking and stirring every few minutes).
- While cheese is melting, mix together the chicken and spinach in a casserole dish so that spinach is dispersed evenly throughout. If you have more chicken than spinach, add a bit more spinach keeping in mind it will shrink as it gets cooked!
- As soon as cheese is melted pour immediately over the chicken and spinach. Do not mix again! The cheese will melt through the layers as it cooks.
- Melt the butter and add to it the breadcrumbs.
- Using your fingers or a fork, crumble together the breadcrumb and butter mixture and sprinkle evenly over the top of the dish.
- Sprinkle remaining 2 tbsp of breadcrumbs and chili powder evenly over dish.
- Bake covered for about 35-40 minutes.

- Dice the chicken breasts into little pieces. Season the chicken breasts with the Mrs. Dash seasoning, salt, and pepper. Let the chicken marinate for at least 2 hours (preferably overnight).
- Heat a few tablespoons of olive oil in pan. Once oil is hot add the chicken to the pan. Brown the chicken.
- Cook pasta according to the box instructions provided for the pasta. While the pasta is cooking, place a medium to large saucepan on low heat. Add butter to this pan. Once the butter has melted, add the Velveeta cheese to the saucepan. Cook this cheese sauce on low heat stirring frequently. While the cheese is melting, add the milk to the cheese sauce 1/3 cup at a time until desired consistency.
- After pasta has cooked, drain the pasta. Once the cheese has melted, mix the pasta, cheese sauce, chicken, garlic powder, and spinach together in the large pot. Continue to add milk to the pasta to get the desired consistency of the cheese sauce. Salt and pepper to taste.
