Cheesy Chicken Bites, chicken coated in Cheez-It Grooves, baked (not fried), and topped with even more intense cheese flavor with Cheez-It Crunch'D. Perfect for appetizers during your basketball festivities

1 1/2 lbs boneless (skinless chicken breast)
2 cups Cheez-It Grooves (original flavor)
2 eggs
1 Tbs cream (milk, or half and half)
1 cup Cheez-It Crunch'D
Salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees
  • Spray a baking sheet with non-stick spray
  • Cut chicken into bite sized pieces and season with salt and pepper
  • Crack eggs into a bowl and whisk cream, milk, or half and half into it with a fork
  • In a food processor, crush up the Cheez-It Grooves until they are fine, but not to powder
  • Dip chicken in egg mixture then crushed Cheez-It Groves, until well coated
  • Place on baking sheet with some space between each piece
  • Bake for 10-12 minutes
  • Remove from oven, use a toothpick to skewer a Cheez-It Crunch'D and then put into each chicken bite!

2 (8 ounce) cans Pillsbury Refrigerated Crescent Dinner Rolls (8 rolls each)
6 slices fully cooked bacon
1 (6 ounce) package refrigerated cooked chicken breast strips, cubed
1 (9 ounce) box frozen spinach, thawed, squeezed to drain and thoroughly chopped
1 (13 3/4 ounce) can quartered artichoke hearts, drained, coarsely chopped
2 medium garlic cloves, finely chopped
1/2 cup mayonnaise or 1/2 cup salad dressing
1/4 cup sour cream
1/2 cup shredded asiago cheese (2 oz)
1/4 cup grated parmesan cheese

Steps:

  • Heat oven to 375°F
  • Separate dough from both cans into 8 rectangles; press perforations to seal.
  • Cut each rectangle into 6 (2-inch) squares.
  • Press 1 square in bottom and up side of each of 48 ungreased mini muffin cups.
  • Heat bacon as directed on package; crumble.
  • In large bowl, mix bacon and remaining ingredients.
  • Place 1 tablespoon chicken filling in each cup.
  • Bake 12 to 20 minutes or until edges are golden brown.
  • Immediately remove from pans to serving platter. Serve warm.

These are a great last minute appetizers or a snacks for kids. Also good on top of a salad (my favorite)

Number Of Ingredients 6

1 lb chicken breast
2 cups cheese flavored crackers
1/2 cup grated parmesan cheese
2 teaspoons chili powder
1/4 teaspoon cayenne (optional)
2 beaten eggs

Steps:

  • Heat oven to 350.
  • Cut chicken breasts into bite size chunks.
  • Crush crackers until they are roughly the consistency of breadcrumbs.
  • Stir in cheese, chili powder and cayenne pepper.
  • Roll chicken pieces in beaten egg and then in cracker crumbs.
  • Place on a cookie sheet lines with parchment paper.
  • Bake for 10-15 minutes or until chicken is cooked through.
  • Serve with honey mustard or ranch.
  • Enjoy :).

Ridiculously addictive appetizers. I brought them to a party and everyone attacked them like starving piranha on a cow. I included them in a tin of cookies for my hubby's co-workers and one of them ate all of them before anyone else could try them. She also demanded the recipe. From the cookbook "Fix, Freeze, Feast" by Katie Neville and Lindsey Tkacsik. Make them ahead of time, keep in your freezer and bake what you need. I plan to have these on hand all the time.

Number Of Ingredients 7

2 lbs sharp cheddar cheese, shredded
2 cups unsalted butter, softened
5 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 (8 ounce) jar small pimento-stuffed green olives, well drained (optional)
raw pecan halves (optional)

Steps:

  • Combine cheese, butter, flour, salt, and cayenne in a large bowl: knead into a dough.
  • Roll dough into 1 inch balls and place on an un-greased baking sheet.
  • If using olives, form each ball around 1 olive.
  • If using pecans, press 1 pecan half onto each ball.
  • Can bake them right now (see instructions below) or freeze for later.
  • Place in trays in freezer for 30 minutes.
  • Remove from freezer and place in freezer bags or container.
  • Seal and freeze.
  • Can bake them straight from freezer.
  • Preheat oven to 425°F.
  • Place cheese balls 3 inches apart on an un-greased baking sheet.
  • Bake 15-17 minutes if frozen, 13-15 minutes if thawed.

2 cooked small boneless skinless chicken breast halves (1/2 lb.), cut into 32 thin slices
1/2 cup BULL'S-EYE Original Barbecue Sauce
32 woven wheat crackers
2 green onions, sliced

Steps:

  • Heat oven to 350ºF.
  • Cut cheese into 8 slices; cut each slice crosswise in half. Combine chicken and sauce.
  • Place crackers in single layer on baking sheet; top with chicken and cheese.
  • Bake 4 to 5 min. or until cheese is melted. Top with onions.
