Ninja Foodi Cheesy Broccoli and Rice Bake is ready in just a few short minutes, plus easy to make gluten-free. It's a great comfort meal for the Ninja Foodi!

Number Of Ingredients 10

4 Boneless (Skinless Chicken Thighs (Cut into chunks))
1/4 Cup White Onion (Diced)
1/2 Tsp Garlic Salt
2 Cups Broccoli Florets
1 1/2 Cups Quick Cooking Uncooked White Rice (Minute Rice)
1 1/2 Cups Water
1 10 oz Can Cream of Chicken Soup or Gluten-Free Cream of Chicken Soup
1 Tbsp Sour Cream
1 Cup Shredded Sharp Cheddar Cheese
Olive Oil Cooking Spray

Steps:

  • Spray the pot of the Ninja Foodi with the olive oil cooking spray.
  • Turn saute function to high.
  • Add the cut chicken and onion, plus garlic salt.
  • Cook the chicken until well done, at least 165 degrees internal temperature. This takes about 10 minutes.
  • Once the chicken is cooked, spray the multi-purpose pan with olive oil spray.
  • Place the chicken on the bottom of the pan.
  • Top with the broccoli florets.
  • Evenly top with the rice.
  • Pour the water over the rice.
  • Combine the cream of chicken and sour cream, pour it evenly over the rice.
  • Place the pan on top of the wire rack that comes with the Foodi in the low position, so it sits low in the pot. The handles should be up on the side to make it easy for you to pull it out of the Foodi.
  • Using the lid that is attached to the Foodi, shut the lid and cook on the bake/roast function for 10 minutes at 350 degrees.
  • Carefully open the lid.
  • Carefully stir up the ingredients to be sure the rice is fully submerged under the water and soup. Just a light stirring of the ingredients will do.
  • Shut the lid and cook on the bake/roast function for an additional 5 minutes at 350 degrees.
  • Top with cheese.
  • Cook for 5 minutes at 350*F.
  • Open the lid, use the mitts to remove the dish from the Foodi.
  • Let cool for 5 minutes and serve.

1 tablespoon canola oil
2 - 14.5 ounce cans of chicken broth
1 cup of long grain white rice
¼ teaspoon salt
¼ teaspoon pepper
2 boneless skinless breasts cut into 1 inch cubes
2 ½ cups of broccoli cut- you can use fresh or frozen
2 ½ cups shredded cheddar cheese

Steps:

  • Coat Ninja Foodi insert with 1 tablespoon canola oil
  • Add chicken broth
  • Add long grain white rice
  • Add salt and pepper
  • Add chicken
  • Add broccoli
  • Place pressure cooker lid on Ninja Foodi and set to high. Cook for 10 minutes with valve set to "seal."
  • When timer ends, move valve to "vent" and quick release all pressure.
  • Open Ninja Foodi
  • Add cheese and stir

1 cup chicken broth or water
1 bunch broccoli, cut into florets (about 4-1/2 cups)
4-1/2 teaspoons cornstarch
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
1-3/4 cups half-and-half
4 ounces cream cheese, softened
1 tablespoon butter
1 cup shredded cheddar cheese
TOPPING:
1/2 cup crushed Ritz crackers
2 tablespoons shredded Parmesan cheese
2 tablespoons butter, melted

Steps:

  • Place wire rack with handles and chicken broth into inner pot of a large multi-cooker. Add broccoli to mesh basket; place on rack. Cover with glass lid. Press steam function; select vegetables setting. Press timer; set to 7 minutes. Start. , Drain and set broccoli aside. In a small bowl, whisk cornstarch, garlic powder, salt and pepper. Gradually whisk in half-and-half until smooth; add to inner pot. Press saute function; select vegetables setting. Set to medium cook time (10 minutes). Bring to a gentle boil, stirring constantly. Cook and stir for 1 minute or until thickened. Stir in cream cheese and butter until melted. Stir in cooked broccoli. Press cancel. , Transfer to a 1-1/2-qt. round baking dish. Sprinkle with cheddar cheese. In a small bowl, mix topping ingredients; sprinkle over cheese. Place baking dish on wire rack with handles; lower into inner pot. Cover with air frying lid. Press air fryer function; select custom setting. Press timer; set to 4 minutes. Start. Cook until topping is lightly browned..
