4 cups frozen shredded hash brown potatoes, thawed
1/2 cup finely chopped onion
8 bacon strips, cooked and crumbled
1 cup shredded cheddar cheese
1 large egg
1 can (12 ounces) evaporated milk
1/2 teaspoon seasoned salt

Steps:

  • In a greased 8-in. square baking dish, layer half of the potatoes, onion, bacon and cheese. Repeat layers., In a small bowl, whisk the egg, milk and seasoned salt; pour over potato mixture. Cover and bake at 350° for 30 minutes. Uncover; bake 5-10 minutes longer or until a knife inserted in the center comes out clean.

5 medium russet potatoes (peeled and sliced into chunks or rounds)
salt
10 slices bacon (chopped, divided)
4 medium onions (thinly-sliced)
1-2 tablespoons fresh garlic (minced, addmore or less to taste)
pepper
seasoned salt
2 cups shredded cheese (divided, add more or less to taste)
3 tablespoons unsalted butter (melted)
1/2 cup chicken broth
cooking spray or butter, for greasing

Steps:

  • Preheat oven to 400 degrees. Prepare the baking dish with cooking spray or butter. Set aside.
  • Pull out all of the ingredients.
  • Wash and peel potatoes, then slice or chop.
  • Next, boil potatoes in salted water, until they start to become tender; usually not more than 10 minutes. Do not overcook them or they will become mushy! Depending on the size, timing is difficult to predict. When cooked, drain.
  • In the meantime, using a large skillet, fry the bacon pieces until crisp over medium heat. Use as much or as little bacon as you want. Drain on paper towel, crumble and set aside.
  • Keep a few tablespoons of the bacon fat in the skillet and add sliced onions. Stir onions, over medium heat, until onions become very tender and start to brown.
  • Add garlic, combine with onions and remove from heat.
  • Cover the bottom of the pan with potato slices or chunks. Sprinkle with seasoned salt and pepper.
  • Scatter onions all over top of potatoes, then the bacon.
  • Add cheese. Then repeat the process.
  • More potatoes.
  • Onions.
  • Bacon.
  • More cheese.
  • Totally cover the top with remaining potatoes. Try to cover up any holes with potato.
  • Drizzle with melted butter, remaining bacon and some seasoned salt and pepper to taste.
  • Pour chicken broth over top of casserole and cover with cheese.
  • Cover with foil and bake for 30 minutes.
  • Uncover and bake until cheese has completely melted and the top is golden brown; about another 15 minutes.
  • Allow to rest for at least 5 minutes before serving, if not 10. Serve with sour cream if desired. Enjoy!

1/2 cup melted butter (1 stick)
salt and pepper
1 & 1/2 cups shredded Monterey Jack cheese (packed )

1 & 1/2 cups black forest ham* (cut into bite-size pieces)
8 large eggs
1 & 1/3 cups evaporated milk OR cream
1 teaspoon seasoned salt (I like Lawry's)

1/2 teaspoon pepper
1/4 teaspoon dry mustard powder (optional)

Steps:

  • Preheat your oven to 400 degrees F.
  • Spray a 9x13 inch pan with nonstick spray, or grease with butter.
  • Dump the bag of frozen hashbrowns into the pan. (There is no need to thaw first.)
  • Melt a stick of butter in a small bowl, and pour evenly over the potatoes. Sprinkle the potatoes with salt and pepper. Use a spoon to gently toss it all together, then spread it out so that it's even.
  • Bake at 400 degrees for 25-30 minutes, until the potatoes are tender and lightly browned on top. You can even nab a forkful to make sure they are done if you like.
  • Remove the casserole and reduce the oven temperature to 350.
  • Layer 1 and 1/2 cups each Monterey Jack and Cheddar cheese over the top of the potatoes (make sure you pack in your cheese! Don't skimp now!) Add the ham. You can either leave it layered or use a spoon to gently toss the cheese and potatoes and ham together. Either way is fine. (I like to toss for a more even distribution.)
  • In a large bowl or stand mixer, whisk together 8 eggs, 1 and 1/3 cups evaporated milk OR cream, 1 teaspoon seasoned salt, 1/2 teaspoon kosher salt (use less if all you have is table salt!), 1/2 teaspoon pepper, 1/4 teaspoon dry mustard, and 1/4 teaspoon onion powder. Beat well.
  • Pour the egg mixture evenly over the top of the casserole, making sure everything gets wet.
  • Bake at 350 degrees for about 40 minutes. It is done when bubbly. The edges should be starting to brown and the center should not wiggle when you shake the pan.
  • If the center of the casserole looks very wobbly but the top is starting to brown too much, cover with foil for the last few minutes of baking.

2 large potatoes (cubed in 1/2 inch pieces)
2 slices thick cut bacon (sliced)
1 1/2 cups yellow onion (diced)
1 tablespoon butter
2 tablespoons butter
2 tablespoons all purpose flour

1/4 cup heavy cream
3 oz. cream cheese ( or sour cream)

Steps:

  • Place the diced potato into a small pot. Pour in enough cold water to cover potatoes. Cover with lid and bring to boil. Reduce to simmer for 5 minutes or until they barely are fork-tender. Drain and set aside. Wipeout pot with a paper towel and set aside.
  • While potatoes simmer, render out bacon slices and brown. Remove to a paper towel and pour off excess grease. Saute onions in 1 tablespoon butter in the same pan until tender, 5-7 minutes. Remove from heat.
  • Place small pot you cooked potatoes in over medium heat. Melt in 2 tablespoons butter. Sprinkle in flour and whisk to create a paste. Cook 1 minute. Whisk in milk. Increase heat to medium-high and continue whisking until sauce thickens. Reduce heat and stir in cream, cream cheese, salt, pepper, nutmeg, and 1/2 cup grated cheese. Stir until cheeses melt and sauce is smooth.
  • Pour cooked potatoes, bacon, onions and sauce into a large bowl. Stir to coat. Pour entire contents of bowl into greased baking dish. Top with remaining 1/2 cup of cheese. Bake at 375 degrees for 20-30 minutes covered with foil. Place under broiler to brown the top if desired. Serve hot.

¼ cup butter

⅓ cup chopped onion
1 cup cottage cheese
1 ½ cups chopped green onion

Steps:

  • Preheat your oven to 350.
