1 cup KRAFT Finely Shredded Sharp Cheddar Cheese
3 slices OSCAR MAYER Bacon, cooked, chopped
1/2 cup chopped fresh chives
2 eggs
1/4 tsp. cracked black pepper
1 cup KRAFT Lite Ranch Dressing

Steps:

  • Heat oven to 400°F
  • Combine cauliflower, cheese, bacon and chives in large bowl.
  • Whisk eggs and pepper until blended. Add to cauliflower mixture; mix lightly.
  • Spoon into 24 mini muffin pan cups sprayed with cooking spray; gently press down tops with back of spoon.
  • Bake 20 to 25 min. or until golden brown. Cool 5 min. before removing from pan.
  • Serve with dressing.

2 cups cauliflower florets
1 cup mature cheddar cheese (shredded)
1 egg
1/4 tsp oregano
1/4 tsp onion powder
1/4 tsp garlic powder
pinch salt and pepper

Steps:

  • Preheat the oven to 375F (190C). Grease mini muffin tins with oil.
  • Steam cauliflower florets on a saucepan using a steaming basket. This should take around 8-10 minutes.
  • Pulse the cauliflower in a food processor until it becomes like rice. When removing, squeeze to drain it. Squeeze out as much water as you can.
  • Now, add cauliflower to a bowl, add in cheddar cheese, egg, oregano, onion, garlic, and salt with pepper.
  • Mix until combined.
  • Scoop out some into each muffin tin and flatten the mixture out. We want to create nice flat bites.
  • Bake for 12-15 minutes until golden brown. Make sure the middle of the bites has hardened up too.
  • Let them cool down before serving. Have them with your favorite sauce!

1 1/2 lb Cauliflower ((riced, measured after ricing, about 1 head))
1/4 cup Avocado oil ((or any oil; divided))
1 large Egg
1 1/2 cup Mozzarella cheese
2 cloves Garlic ((minced, optional))
3/4 tsp Sea salt

Steps:

  • Stir fry cauliflower rice in 2 tbsp (30 mL) oil in a large saute pan or wok over medium-high heat, until soft and lightly browned, with no moisture left in the pan.
  • Meanwhile, whisk the egg in a large bowl. Mix in the mozzarella, garlic, and sea salt.
  • When the cauliflower rice is done, stir it into the bowl right away while it's hot. It will melt the cheese in the bowl and make the mixture sticky.
  • Use a small cookie scoop to pick up balls of the "dough". Form small tater tot sized patties and flatten slightly. (Make sure they are not too thick so that they'll cook through.)
  • Wipe the pan lightly with a paper towel to get rid of any cauliflower rice pieces.
  • Heat the remaining 2 tbsp (30 mL) avocado oil in the pan over medium heat. Add the tater tots in a single layer, trying not to have them touch, and fry for about 2 minutes, until golden on the bottom. Flip and repeat until golden on the other side. Transfer to paper towels to drain.
  • Repeat with all tater tots. (You may need to add more oil between batches.)

These protein-packed cauliflower bites are cheesy and packed with the same flavors you'll find on a classic slice --garlic, onion, Italian seasoning and some red chile flakes, for heat. We add a touch of jarred marinara sauce to the mix and also serve more sauce warm on the side. Just make sure the one you use is keto-approved and has no added sugar.

1 small head cauliflower (about 1 1/2 pounds), green leaves and core removed, cut into medium florets (about 4 cups)
1/4 cup fresh flat-leaf parsley leaves
1 large egg plus 1 large egg yolk
1/4 to 1/2 teaspoon red chile flakes
1 1/4 teaspoons Italian seasoning
1 1/4 teaspoons onion powder
1 1/4 teaspoons garlic powder
Kosher salt
3/4 cup almond flour (about 3 ounces)
2 tablespoons keto-approved marinara sauce, plus additional for serving
1/4 cup plus 1 tablespoon finely grated Parmesan (about 1 1/4 ounces)
1 cup finely shredded Italian cheese blend (about 3 1/2 ounces)
Nonstick extra-virgin olive oil spray

Steps:

  • Put the cauliflower and 1/4 cup water into a medium heat-safe glass bowl. Wet a paper towel and lay over the cauliflower. Microwave until fork-tender, 6 to 8 minutes, depending on your microwave. Carefully remove the paper towel, transfer the cauliflower to a food processor (leaving any water behind in the bowl) and cool for 10 minutes. Clean out the glass bowl and set aside.
  • Meanwhile, position a rack in the center of the oven and preheat to 400 degrees F. Line a baking sheet with parchment and set aside. Stir together 1 tablespoon of the Parmesan and 3 tablespoons of the Italian cheese blend in a small bowl, then set aside.
  • Add the parsley to the food processor and pulse until the cauliflower is finely chopped and similar to the texture of rice. Transfer to a large clean kitchen towel and wring out any excess water.
  • Transfer the cauliflower mixture to the reserved bowl along with the whole egg, egg yolk, red chile flakes, Italian seasoning, onion powder, garlic powder, 3/4 teaspoon salt, almond flour, marinara sauce and the remaining 1/4 cup Parmesan and 3/4 cup plus 1 tablespoon Italian cheese blend. Use your hands to mix everything together until well combined.
  • Scoop heaping tablespoons of the mixture onto the prepared baking sheet, spacing them evenly apart, for about 28 total. Lightly wet your hands, then roll each mound into a round ball, re-wetting your hands as needed. This helps keep your hands from becoming sticky and makes rolling the mix much easier to do. Spray the balls with the cooking spray and sprinkle the tops with the reserved cheese mixture, pressing the cheese gently onto the tops to help it adhere.
  • Bake in the oven until light golden brown and cooked through, about 25 minutes, rotating the baking sheet once halfway through the cooking time.
  • Transfer to a platter and serve with additional warm marinara sauce alongside, for dipping.

1 head large cauliflower, or 2 small cauliflowers
1 ½ cups flour
2 eggs
2 cups seasoned bread crumbs
½ cup parmesan cheese
½ cup cheddar cheese
olive oil, for baking

Steps:

  • Wrap cauliflower in a clean dish towel, then turn it upside down and bang it against the surface of your counter until you feel the cauliflower crack (be sure to rotate to break it up on all sides).
  • Pull florets off of stem and break apart the bigger florets into smaller pieces.
  • Microwave florets for 4 minutes.
  • Preheat oven to 425°F (220˚C).
  • In one small bowl, pour flour; in another, whisk two eggs; and in a medium bowl, combine your bread crumbs, Parmesan cheese, and cheddar cheese.
  • Coat each piece in flour, followed by the eggs and finally the bread crumb mixture.
  • Spray a baking sheet and place all cauliflower bites in it, then drizzle olive oil over them or spray with cooking spray.
  • Bake in the oven for 30 minutes or until golden brown.
  • Serve with marinara, ranch, or sour cream.

Steps:

  • Preheat oven to 425 degrees °F.
  • Toss cauliflower florets with melted butter in a large bowl. Check for pieces that are not coated with butter and toss again or use a silicone pastry brush to fill in those spots.
  • Combine Parmesan cheese, paprika and pepper and sprinkle over the butter-coated cauliflower florets that are still in the large bowl.
