Steps:
- Preheat oven to 350 degrees F. Prepare a 13 x 9-inch baking dish by spraying generously with nonstick cooking spray.
- In a mixing bowl, mix together Cheez Whiz, mushroom soup and melted butter. Mix together until a smooth cheese sauce forms.
- Add dry rice, onion (or dried minced onion can be used), and frozen broccoli to the cheese sauce. Stir until completely incorporated.
- Pour into prepared dish.
- Bake for 45 to 60 minutes or until cooked completely through.

- Preheat the oven to 350 F degrees.
- In a large skillet, melt the butter. Add the onion and garlic and cook, stirring with a wooden spoon, until softened, 3 to 4 minutes. Sprinkle over the flour, dry mustard and cayenne and stir to mix it in well. Continue to cook for 1 minute.
- Next, add the milk, stirring constantly; cook until thickened, about 2 minutes. Add the cream cheese and Parmesan, stirring until totally combined. Stir in the pepper, salt and paprika. Add the processed cheese, stirring until completely melted. Next, add 1 1/2 cups of the Cheddar and stir until melted. Then, fold in the broccoli and pimentos.
- In a large baking dish, create a base with half of the rice. Top with half of the broccoli cheese sauce. Repeat with the remaining rice, then the remaining sauce. Sprinkle the rest of the Cheddar evenly over the top of the casserole. Bake until bubbly, about 30 minutes.
CHEESY BROCCOLI MUSHROOM RICE CASSEROLE

- Preheat oven to 350F and start heating the water in a medium saucepan for the broccoli.
- Add the broccoli to the medium saucepan with water. Cook for only 2-3 minutes. Drain and set aside.
- Preheat large skillet at medium high heat. Add olive oil. Add chopped onions, garlic and mushrooms and cook them for 4-5 minutes until softened.
- Next add heavy cream, chicken stock, 1 cup cheese, salt, garlic powder and black pepper to the skillet. Bring the mixture to a simmering point allowing the sauce to thicken a bit, just about 2 minutes.
- Add cooked rice and broccoli to the skillet with the sauce and mix well.
- Transfer the mixture from the skillet onto a baking casserole. Sprinkle with the remaining cheddar cheese on top. Bake for 20 minutes.

- Cook the broccoli for about 2 minutes in boiling water, just until crisp-tender. Drain and set aside.
- Preheat oven to 350°F. Grease an 8-inch square baking dish; set aside.
- In a large skillet or Dutch oven, melt butter over medium-high heat. Add onion and celery; cook, stirring occasionally, until the onion is translucent, about 5 minutes. Add garlic; cook until fragrant, about 30 seconds.
- Reduce the heat to a very low flame. Stir in soup, paprika, dry mustard, nutmeg, 1 cup of the cheese and milk. Cook, stirring constantly, until the cheese melts, about 2 minutes. Remove from heat.
- Add cooked rice and broccoli; stir to combine. Taste and season with salt and pepper, if necessary.
- Transfer mixture to the prepared baking dish. Top with crushed crackers and remaining ½ cup of cheese.
- Bake for about 20 minutes, or until hot and bubbly.

- Preheat oven to 425 degrees F.
- Butter casserole dish. In a large pot, melt 3 tablespoons butter and flour over medium heat until golden in color to make a quick roux. The roux should resemble the color of peanut butter. Add mushrooms, onion, garlic, garlic powder, cayenne pepper, heavy cream and chicken stock. Add broccoli, 1 cup of the cheese and rice. Season with salt and pepper, to taste. Pour into buttered dish and top with remaining shredded Cheddar. Bake until cheese is melted and golden, about 20 minutes.

This is a very good and creamy Brocolli and Cheese Rice Casserole. It originally called for Cream of Chicken soup, but my girlfriend is a vegetarian, so I have substituted it for Cream of Mushroom and found that it does not loose much flavor.

- Preheat oven to 350°F.
- In a skillet melt the butter.
- Sauté onion and garlic, until onions are tender. Set aside to cool.
- Steam the frozen broccoli until thawed, then drain well. Let cool.
- Cook wild rice according to directions. (Use any type of rice desired; wild rice is exceptionally good in this recipe).
- It is important to allow the warm ingredients to cool before mixing everything together so the cheese doesn't melt too soon.
- When sufficiently cool, reserve 1/2 cup of the cheese and mix remaining ingredients together. Put in a oven-proof baking dish or casserole dish (or 2 if needed).
- Spread reserved 1/2 cup of cheese on top. Cover with foil.
- Bake for 20 minutes, remove foil; bake an additional 5 to 15 minutes, or until cheese on top is hot and bubbly.

- Saute onions and celery in butter until soft. Add chicken, salt, and pepper. Saute a minute or so to marry flavors.
- In a large bowl, combine soups, milk, rice, broccoli, onion/chicken mixture. Fold in 2 cups cheese.

- Cook broccoli and rice according to package directions. Preheat oven to 350 degrees F (175 degrees C).

My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
