1/2 pound ground beef
1 tablespoon chopped onion
1/2 teaspoon salt
1/8 teaspoon pepper
1 tube (12 ounces) refrigerated buttermilk biscuits
5 slices process American cheese

Steps:

  • Preheat oven to 400°. In a large skillet, cook beef, onion, salt and pepper over medium heat until meat is no longer pink; drain and cool. , Place 2 biscuits overlapping on a floured surface; roll out into a 5-in. oval. Place about 1/4 cup of meat mixture on 1 side. Fold a cheese slice to fit over meat mixture. Fold dough over filling; press edges with a fork to seal. Repeat with remaining biscuits, meat mixture and cheese. , Place on a greased baking sheet. Prick tops with a fork. Bake 10 minutes or until golden brown.

1/2 cup thin onion slices
1/2 cup chopped green peppers
16 slices OSCAR MAYER Deli Fresh Slow Roasted Roast Beef, chopped
1/4 cup KRAFT Original Barbecue Sauce
4 kaiser rolls, split
4 KRAFT Big Slice Colby Jack Cheese Slices

Steps:

  • Heat oil in large skillet on medium-high heat. Add vegetables; cook 6 to 8 min. or until crisp-tender, stirring occasionally. Remove from skillet; set aside.
  • Add meat and barbecue sauce to skillet; cook on medium heat 2 to 3 min. or until heated through, stirring frequently.
  • Spoon meat mixture onto bottom halves of rolls; top with cheese and vegetables. Microwave on HIGH 30 sec. or until cheese is melted. Cover sandwiches with top halves of rolls to serve.

2 to 3 sheets of puff pastry
1/2 pound Mozzarella cheese
1/2 pound Cheddar cheese
1 pound broccoli spears
1 pound thinly sliced boiled ham
1 pound thinly sliced roast beef
2 cups tomato sauce
1/2 pound pepperoni
2 eggs
2 tablespoons water

Steps:

  • Preheat the oven to 350 degrees F. Cut the puff pastry into desired shapes, (making sure you have two pieces that are alike to build the sandwich) Using a box grater, grate each cheese. Slice the broccoli into thin slices. Place what ever type of filling you wish in the center of one piece of puff pastry, like ham and cheese, or tomato sauce, pepperoni and cheese or broccoli and cheese (fill each pocket with a good amount of the filling). Place the other piece of puff pastry on top of the filling. Using your hands, lightly press the pastry around the filling. Using a fork, press the ends of the pastry together. This will seal the pockets tightly. In a mixing bowl, whisk the eggs and water together. Place the pockets on parchment-lined baking sheet. Using a pastry brush, lightly brush each pocket. Bake until golden brown, about 12 to 15 minutes. Serve warm.

Ground beef, cheese and tangy BBQ sauce create a quick, easy and cost-effective family meal that everyone is sure to enjoy. This dish is a great make-ahead meal, and makes a great lunch the next day!

3 cups of uncooked pasta
1 lb lean ground beef
1 onion, chopped
1 cup barbecue sauce
1 cup mozzarella cheese, shredded
2 cups cheddar cheese, shredded
Chopped parsley, for garnish, if desired.

Steps:

  • Heat oven to 350F. Cook pasta according to package directions. Drain and return to pot.
  • In a skillet, cook beef and onion over medium-high heat for 10 minutes, stirring occasionally.
  • Add beef mixture, barbecue sauce, mozzarella cheese and 1 cup of cheddar cheese to the pasta and stir to combine. Spoon into a 9x13 casserole dish. Sprinkle with remaining 1 cup of cheddar cheese.
  • Bake uncovered for 30 minutes or until hot in the centre. Sprinkle with chopped parsley, if desired.

Tasty little pockets of cheesy taco flavored ground meat. Perfect for appetizers, after school snacks or anytime you get a hunger pang or craving. Prepare them all at once or freeze them and bake later! This makes 32 small pockets, 1-2 per serving, unless you are feeding teenagers! OAMC directions are included here for you. Created for RSC 9. Good luck to all participating Chefs!------ If you want them spicier please increase the chili powder or add some cayenne or red pepper.

2 (17 1/3 ounce) packages puff pastry sheets, 2 sheets per package
1 egg
1/2 tablespoon water
1 1/2 lbs ground beef
1/2 cup green pepper, chopped
1/2 cup white onion, chopped
1 garlic clove, minced
1 medium tomatoes, seeded and chopped
1/2 cup catsup
1/4 cup fresh cilantro or 1/4 cup parsley, chopped
1 teaspoon ground cumin
2 teaspoons chili powder
1 teaspoon oregano
1 teaspoon cinnamon
1 1/2 cups monterey jack pepper cheese, shredded for a spicier result or 1 1/2 cups colby cheese, shredded, any similar cheese will work

Steps:

  • Remove pastry from freezer and allow to thaw at room temperature for about 30- 40 minutes or until they are easy to handle.
  • Meanwhile, add the beef, onion and green pepper to a large skillet and cook until beef is browned and vegetables begin to soften. Stir occasionally to break meat up and prevent scorching.
  • Add garlic and cook for one more minute, stirring constantly.
  • Drain all the grease from the pan and return to the heat.
  • Add tomato, catsup, cilantro or parsley, cumin, chili powder, oregano and cinnamon. Reduce heat to low and allow to simmer for about 10 minutes. You want a pretty dry mixture so your filling stays put in the pastry.
  • Remove from the heat. Stir in the cheese and set aside until cool enough to handle.
  • Work with one pastry sheet at a time, keeping the others covered so they do not dry out.
  • On a lightly floured surface roll out a pastry sheet to a rectangle about 16 x 12 inches and then cut into 8 even pieces.
  • Put a heaping teaspoonful of meat mixture in the center of the pastry. (I always seem to over fill them no matter how carefully I measure so you may want to start with less than you think you should use and add a little more if needed. Voice of experience! ).
  • Mix the egg and water together and brush pastry edges with it.
  • Grab one corner of a pastry and fold over to form a triangle. Press edges with a fork to seal and brush the tops with more egg mixture.
  • Repeat until all ingredients are used.
  • Place the pastries on a sprayed or greased baking sheet. You could also use parchment paper or a silicone liner.
  • Bake at 375 degrees for about 15-17 minutes or until golden brown.
  • OAMC-To Freeze and Bake Later: Place pockets on parchment paper or wax paper and freeze until firm. They can then be transferred to a zip top bag and stored in the freezer. Remove desired amount from freezer when ready to use and bake as directed, increasing time to 17-20 minutes or until golden brown.
  • Great served with sour cream, catsup or your favorite dip.

2 teaspoons olive oil
12 ounces sirloin steaks, medium dice
1 cup red pepper, medium dice
8 fresh basil leaves, chopped
3 slices havarti cheese
1 (13 7/8 ounce) can Pillsbury refrigerated classic pizza crust

Steps:

  • Preheat oven to 400°F.
  • In a frying pan, heat oil. When it's hot add steak and red peppers and cook until the steak is done to how you like it. Remove pan from heat and stir in basil.
  • Cut pizza dough into 3 equal pieces. Let sit at room temperature for a few minutes so it's easier to work with. Roll out each piece and stretch the dough until it is round and about 6" wide. Patch up any holes and place dough circles on a cookie sheet.
  • Place 1/3 of the steak and pepper mixture on one half of each dough round, keeping 1/2" of the border uncovered. Cover each with 1 piece of cheese. Fold the dough over and press down on the edges gently with a fork to seal.

  • Spread one side of both pieces of bread with mayonnaise – just enough to coat the surface or each with a thin layer. Lay one slice of bread in the hot skillet, mayonnaise side down. Add half the cheese, then the BQ Beef, then the remaining cheese. Top with the second slice of bread, mayonnaise side up. Turn the heat down to medium-low.
  • When the cheese looks about halfway melted, use a spatula to flip the sandwich over in the pan. Use the spatula to press the sandwich down slightly. Let cook for a couple of minutes, then peak underneath. If the bread is getting too brown, flip the sandwich back over. Continue flipping back and forth every 30 seconds or so to let the cheese melt fully without burning the outside of the bread.
