One of my favorite quick recipes for green asparagus, stir-fried with garlic and olive oil. A squeeze of fresh lemon juice brightens the asparagus up at the end.

2 tablespoons olive oil
1 clove garlic, minced
1 pound asparagus, trimmed and cut into 1 1/2-inch diagonal pieces
salt
1 squeeze lemon juice, or to taste

Steps:

  • Heat olive oil in a large skillet over medium heat; cook and stir garlic until fragrant, about 30 seconds. Add asparagus and stir-fry until soft but still firm, 5 to 7 minutes. Season with salt and lemon juice.

1 lb turkey breast, cut into strips
1 lb asparagus, cut into 1 inch pieces
2 carrots, quartered and cut into 1 inch pieces
4 scallions, cut into 1 inch pieces
4 ounces fresh mushrooms, sliced
2 cloves garlic, minced
1/2 teaspoon ground ginger
2/3 cup water
2 tablespoons soy sauce, low sodium
4 teaspoons cornstarch
8 ounces water chestnuts, sliced
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Lightly coat wok or large skillet with cooking spray.
  • Over medium high heat, cook turkey for 5 minutes, or until no longer pink.
  • Remove turkey from pan, and then add asparagus, carrots, onions, mushrooms, garlic, and ginger.
  • Cook vegetables for 5 minutes, or until crisp-tender.
  • In bowl, combine water, cornstarch and soy sauce, then add to skillet.
  • Add water chestnuts, cook sauce until thickened, and then return turkey to skillet to heat through.
  • Check for seasoning, adding salt and/or pepper to taste.
  • Serve over steamed rice.

2 teaspoons cornstarch
1/4 cup chicken broth
1 tablespoon lemon juice
1 teaspoon soy sauce
1 pound turkey breast tenderloins, cut into 1/2-inch strips
1 garlic clove, minced
2 tablespoons canola oil, divided
1 pound fresh asparagus, trimmed and cut into 1-1/2-inch pieces
1 jar (2 ounces) sliced pimientos, drained

Steps:

  • In a small bowl, combine the cornstarch, broth, lemon juice and soy sauce until smooth; set aside. In a large skillet or wok, stir-fry turkey and garlic in 1 tablespoon oil until meat is no longer pink; remove and keep warm., Stir-fry asparagus in remaining oil until crisp-tender. Add pimientos. Stir broth mixture and add to the pan; cook and stir for 1 minute or until thickened. Return turkey to the pan; heat through.

1 pound fresh asparagus, cut into 1-inch pieces
4 ounces fresh mushrooms, sliced

2 tablespoons reduced-sodium soy sauce

3-1/2 cups hot cooked white or brown rice

  • In a large skillet or wok, heat oil over medium-high heat. Add turkey; stir-fry until no longer pink, about 5 minutes. Remove and keep warm., Add the next 6 ingredients to pan; stir-fry until vegetables are crisp-tender, about 5 minutes. Combine water, soy sauce and cornstarch; add to skillet with water chestnuts. 1 pound boneless skinless chicken breasts (about 2 breasts)
2 cloves garlic, minced
1 (2-inch) piece peeled fresh ginger, cut into thin matchsticks
1 tablespoon soy sauce
1 tablespoon sugar
1 tablespoon cornstarch plus 1 teaspoon
1 1/4 teaspoons kosher salt
1 tablespoon dry sherry
3/4 cup chicken broth, low-sodium canned, or homemade or water
2 tablespoons vegetable oil
2 bunches medium asparagus (about 2 pounds), woody stems trimmed, sliced into 1-inch pieces
1 bunch scallions (white and green parts), thinly sliced
Serving suggestion: Brown or white rice

Steps:

  • Freeze the chicken breasts for 20 to 30 minutes and then thinly slice the chicken against the grain into strips. Toss the strips with about half the garlic and ginger, the soy sauce, sugar, 1 teaspoon of the cornstarch, 1 teaspoon of the salt, and the sherry in a bowl. Marinate at room temperature for 15 minutes. Mix the remaining cornstarch with the broth.
  • Heat 1 tablespoon of the oil a large nonstick skillet over high heat. Add the asparagus, scallions, remaining garlic, ginger, 1/4 cup of water, and season with 1/4 teaspoon salt. Stir-fry until the asparagus is bright green but still crisp, about 3 minutes. Transfer to a bowl.
  • Heat the same skillet until very hot, then add remaining 1 tablespoon oil. Add the chicken and stir-fry until it loses its raw color and gets a little brown, about 3 minutes. Return the asparagus to the pan and toss to heat through. Stir in the reserved cornstarch mixture and bring to a full boil to thicken. Mound the stir-fry on a serving platter or divide among 4 plates; serve with rice.

1 clove garlic, minced
1/8 teaspoon crushed red pepper flakes
2 tablespoons water
2 tablespoons reduced sodium soy sauce (San-J makes a wheat-free tamari soy sauce)
1/2 teaspoon sugar
1/2 teaspoon salt

Steps:

  • In a skillet or wok, stir-fry asparagus in oil until crisp-tender.
  • Remove and keep warm.
  • In the same skillet, stir-fry red pepper, walnuts, ginger, garlic, and pepper flakes for 2 minutes or until red pepper is crisp-tender.
  • Stir in water, soy sauce, sugar, and salt; heat through.
  • Add asparagus; stir to coat.

1 1/2 pounds pencil-thin asparagus (or substitute small or medium asparagus, split lengthwise)
1 tablespoon vegetable oil
Salt and pepper
3 garlic cloves, minced
1 tablespoon grated ginger
1 serrano or other fresh hot chile, finely chopped
A large handful of basil, mint and cilantro leaves

Steps:

  • Snap off and discard the tough bottoms of each asparagus spear. Cut the asparagus into 2-inch lengths
  • In a wok or cast-iron skillet, heat the oil until nearly smoking. Add the asparagus, season generously with salt and pepper and stir well, making sure the asparagus is coated and glistening with oil. Continue to stir-fry over high heat for about 1 minute, until the asparagus looks bright green and barely cooked. Add the garlic, ginger and chile and stir-fry for 30 seconds more.
  • Transfer to a serving platter and scatter leaves on top. Serve immediately.
