DOT'S CHEESE BACON PUFFS
I am posting this recipe in memory of my dear friend, Dot, who died in 2008. Dot was a wonderful lady and matriarch of a large and fascinating family. She was also an avid and excellent cook. It didn't matter when you arrived at Dot's home, there was always some freshly made goodie for you to sample. These puffs were just one of her offerings. The yield is a guess, as I forgot to write down what she said. Love you, Dot, and miss you!

CHEESY BACON PUFF
This recipe is made with ingredients that most of us have on hand, and it only takes 10 minutes to prepare. It's based on an old family recipe where the same amount of just 4 ingredients were all measured in a small tumbler, so it's ideal for children to make as there's no weighing involved. It's amazing how this recipe balloons up like a souffle without all the hard work of whipping egg whites. Simple and foolproof and tasty too!!

Steps:
- Put a baking sheet in the oven and preheat to 200*C (425*F).
- Butter a round, shallow, ovenproof dish, about 8 inches in diameter.
- In a large bowl beat the flour, milk, egs, bacon, mustard powder and about two thirds of the cheese with a generous pinch of salt and a good grinding of pepper, until everything's combined into a runny batter.
- Tip the batter into the prepared oven dish, lay the tomato slices on top (don't worry if they sink, they're supposed to) and scatter over the remaining cheese.
- Set the dish on the hot baking sheet and bake for 35 to 45 minutes until it has puffed up and is crispy and golden brown.
- Leave it to cool for a minute or two, but not too long or it will deflate.
- Serve the puff cut into wedges with a crunchy salad on the side.

Steps:
- Heat the grill to high. Lay the bacon on a baking tray in a single layer and grill for 8-10 mins until starting to crisp at the edges. Leave to cool. Heat the oven to 180C/160C fan/gas 4.
- Meanwhile, unroll the pastry sheet and cut into six squares. Pile a small mound of the cheese in the centre of each square, reserving some of the cheese for scattering over later. Trim the woodier ends of the asparagus spears so each one is about 10cm long. Place four spears diagonally across each mound of cheese. Chop the bacon into small pieces and sprinkle over.
- Working with one pastry square at a time, fold the two corners not covered by the asparagus into the centre and pinch the ends together gently to seal. Repeat with the remaining squares, then scatter over the reserved cheese. Can now be frozen for up to three months.
- Transfer the puffs to a baking tray lined with baking parchment and bake for 20-25 mins (or 35 mins from frozen), or until golden brown. Leave to cool on the tray for a few minutes before serving.

Steps:
- Heat 1 tbsp of the olive oil in a frying pan and fry the bacon for 3-4 mins until it begins to crisp. Tip onto a plate lined with kitchen paper. Add the remaining olive oil to the pan with the butter and allow to melt before adding the leeks and thyme. Season and cook for 3-4 mins until softened. Place in a bowl with the crisp bacon and cheese, and allow to cool.
- Whisk the egg in a small bowl with 1 tsp water, to make an egg wash. Cut one-third off the pastry and, on a lightly-fl oured surface, roll out to make a 15cm x 30cm rectangle, and place on a baking sheet. This will form the base of the tart. Pile the leek mixture in the middle of the base, leaving a 2cm surround. Roll the remaining pastry into a larger rectangle which will cover the leek mixture easily. Brush the edges of the pastry base with egg wash, then carefully lay over the larger rectangle and smooth the surface to get rid of any trapped air. Cut away excess pastry to form a tidy edge and glaze with egg wash. With the back of a fork, press to seal the edges. Chill for 30 mins.
- Heat oven to 200C/fan 180C/gas 6. Brush the top of the pastry with more egg wash and season the top before baking. Cook for 10 mins, then reduce the heat to 180C/fan 160C/gas 4 and cook for 25-30 mins until puffed up and golden brown. Serve either hot or at room temperature.
- To make ahead, freeze at end of stage 2 for up to a month, or refrigerate for up to a day.
