1 (12-ounce) can quartered artichokes
4 ounces lemon juice
4 ounces extra-virgin olive oil
1 tablespoon freshly ground black pepper
1 tablespoon kosher salt
1/2 cup chopped fresh parsley leaves
1-ounce whole coriander seeds
Dash hot sauce
1 loaf baguette, sliced 1/2-inch thick, brushed with a mixture of olive oil, garlic, salt, black pepper, rosemary, and thyme
1 loaf baguette, sliced 1/2-inch thick, brushed with a mixture of olive oil, garlic, salt, black pepper, rosemary, and thyme
Garlic Aioli, recipe follows
Quartered, marinated artichoke hearts, for garnish
1 roasted red pepper, peeled, seeded, and sliced
1-ounce fresh basil leaves, very thinly sliced
2 eggs*
1 tablespoon Thai chili-garlic sauce (recommended: Sriracha)
1/2 lemon, juiced
1 tablespoon minced garlic
1 cup extra-virgin olive oil
Kosher salt

Steps:

  • In a large bowl, combine the artichokes, lemon juice, olive oil, pepper, salt, parsley, coriander seeds, and hot sauce; mix well. Refrigerate and marinate overnight.
  • Preheat the oven broiler and spread the bread slices onto a baking sheet. Broil the bread slices until they are toasted. Spread the sliced bread generously with Garlic Aioli, top with a marinated artichoke, a strip of red pepper, and then sprinkle with basil. Serve immediately.
  • In a blender or food processor, combine the eggs, chili-garlic sauce, lemon juice, and garlic. Pulse until well mixed, and then slowly pour in the olive oil and continue processing until the mixture is thick and creamy. Season, to taste, with salt.

1 clove garlic, finely grated
2 oz. Parmesan, grated (about 3/4 cup)
1 oz. Gruyère, coarsely grated (about 1/2 cup)
2 tbsp. sour cream
1 tsp. finely grated lemon zest plus 1 tablespoon lemon juice
Kosher salt
Pepper
2 tbsp. panko
1/4 c. flat-leaf parsley, chopped
1 (5-ounce) package baby arugula
2 tbsp. olive oil

Steps:

  • Heat broiler. Broil bread slices until crisp, 1 to 2 minutes per side. Transfer to a baking sheet and reduce oven temperature to 425°F.
  • In a medium bowl, combine artichokes, garlic, Parmesan, Gruyère, sour cream, lemon zest, and 1/4 teaspoon each salt and pepper. Spoon on toasts and sprinkle with panko. Bake until golden brown and cheese is melted, 8 to 10 minutes. Sprinkle with chopped parsley, if desired.
  • Meanwhile, in a bowl, toss arugula with oil, lemon juice, and pinch each salt and pepper. Serve with toasts.

1 can (4 ounces) chopped green chilies
2 garlic cloves, minced
2 cups shredded cheddar cheese, divided

Steps:

  • Cut bread in half lengthwise; carefully hollow out top and bottom of loaf, leaving 1/2-in. shells. 1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped

4 egg whites
1/4 teaspoon paprika

Steps:

3 cups artichoke hearts, coarsely chopped
1 cup mayonnaise
1 cup grated Parmesan
1 tablespoon chopped fresh parsley
Salt and freshly ground black pepper
1/4 cup breadcrumbs
1 baguette, cut into 1/2-inch slices

Steps:

  • Preheat the oven to 375 degrees F.
  • Combine the artichoke hearts, mayonnaise, Parmesan, parsley, a small pinch of salt and lots of pepper in a mixing bowl. Fold it all together to combine, then transfer to a small baking dish or oven-safe serving bowl. Top with the breadcrumbs and cover with aluminum foil.
  • Bake until golden and bubbly, 30 minutes.
  • Meanwhile, arrange the baguette slices on a baking sheet and toast in the oven for 3 or 4 minutes.
