QUINOA WITH ROASTED BUTTERNUT SQUASH

One (2-pound) butternut squash, peeled, seeded, and cut into 3/4-inch chunks (about 3 cups)
5 tablespoons extra-virgin olive oil
2 teaspoons fresh thyme leaves, roughly chopped
Kosher salt and freshly ground black pepper
¼ cup shelled pistachios
1½ cups quinoa
4 cups vegetable broth or water
¼ cup dried cranberries
1 tablespoon white wine vinegar
3 ounces baby spinach

Steps:

  • Position an oven rack in the center of the oven and preheat to 400°F. Line a rimmed baking sheet with foil and set aside.
  • Place the squash in a medium bowl and add 3 tablespoons of the oil, the thyme and 2 teaspoons of salt and season with pepper to taste. Mix until the squash is well coated. Transfer to the prepared baking sheet and spread squash out into a single layer. Roast until a paring knife slides into the squash with no resistance, about 30 minutes, stirring about halfway through the cooking time. Put the pistachios on a small baking sheet and toast until fragrant, about 5 minutes.
  • Meanwhile, rinse the quinoa in cold water in a fine-mesh strainer. Bring the broth or water to a boil and stir in the quinoa. Simmer, uncovered, until a small white spiral becomes visible in each grain, about 9 minutes. Drain the quinoa and transfer it to a medium bowl. Add the remaining 2 tablespoons olive oil, the pistachios, cranberries, vinegar, 1/2 teaspoon salt and pepper to taste.
  • Place the spinach in a large mixing bowl and toss with the hot squash until slightly wilted. Add the quinoa mixture and toss again. Serve warm or at room temperature.

2 cloves garlic, thinly sliced
1 cup quinoa, rinsed
1 cup low-sodium chicken broth
1/2 cup grape tomatoes, halved
Kosher salt and freshly ground pepper
3/4 cup shredded extra-sharp cheddar cheese
(about 3 ounces), plus more for topping
1/4 cup chopped fresh parsley
1 small head broccoli, cut into florets
1 14-ounce package turkey kielbasa

Steps:

  • Preheat the oven to 400 degrees F. Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add the garlic and cook, stirring, until softened, about 1 minute. Add 1 cup water, the quinoa, chicken broth, tomatoes, 1/4 teaspoon salt and a few grinds of pepper; bring to a simmer, stirring. Reduce the heat to medium low, cover and cook until the quinoa is tender and the liquid is mostly absorbed, 12 to 15 minutes. Remove from the heat and stir in the cheese and parsley. Cover to keep warm.
  • Meanwhile, toss the broccoli with the remaining 1 tablespoon olive oil on a baking sheet; season with salt and pepper. Add the kielbasa to the baking sheet. Roast until the broccoli starts browning and the kielbasa is hot throughout, 15 to 18 minutes. Let cool slightly, then slice the kielbasa. Serve the quinoa topped with the kielbasa, broccoli and more cheese.

This is a delicious, savory vegetarian recipe with butternut squash and cheese. The original recipe called for Gruyere but I used sharp cheddar instead. I think both would work quite well. This was my first time using quinoa in a recipe, and I'm really hooked. The little quinoa spirals are filled with protein, fiber, vitamins and minerals, making it a valuable addition to a vegetarian diet.

1 1/2 lbs butternut squash, peeled and diced
1 cup quinoa (organic)
2 cups water
1 teaspoon salt
2 tablespoons olive oil, divided
4 garlic cloves, minced
2 tablespoons shallots
2 eggs, lightly beaten
1 cup sharp cheddar cheese or 1 cup gruyere cheese, shredded
1/2 cup whole wheat breadcrumbs
salt and pepper

Steps:

  • Preheat oven to 400.
  • Spray a 2-quart dish with nonstick cooking spray.
  • Peel and cube the butternut squash, then put in a microwave safe bowl.
  • Microwave on high for 3-5 minutes until squash is soft and tender.
  • Wash the quinoa in a fine sieve thoroughly (about 5 minutes) until water runs clear. This is very important, as quinoa has a bitter protective coating that can linger even after processing.
  • Transfer squash and quinoa to a large pot. Add water and salt to pot and bring to a boil, then reduce heat to low and allow to simmer for 15 minutes or until liquid is absorbed and the quinoa blooms into little spirals.
  • Remove from heat and let rest.
  • Meanwhile, heat 1 tablespoons olive oil over medium heat in a small frying pan.
  • Add shallots and cook 3 minutes.
  • Add garlic and cook a minute or two longer, being careful not to let garlic burn.
  • Pour over quinoa and squash mixture, mixing thoroughly.
  • Add eggs, 3/4 cup of the cheese, and salt and pepper to taste.
  • Transfer to prepared baking dish.
  • Sprinkle remaining cheese and bread crumbs over gratin.
  • Drizzle remaining 1 tablespoons of olive oil on top and bake for 35-45 minutes or until top is golden brown.

2 TB olive oil
1/2 c white quinoa, cooked in chicken broth
1/2 c red quinoa, cooked in chicken broth
1/4 c butter
3/4 c onions, chopped
3/4 c carrots, chopped
3/4 c celery, chopped
2 cans condensed cream of chicken soup
1 8 oz. container light sour cream
1/2 c dry white wine or chicken broth
1/4 c fresh basil, snipped; or 2 tsp dried basil, crushed
1 1/2 c finely shredded Parmesan cheese (6 oz)

Steps:

  • Preheat oven to 425F. In a large bowl combine squash and oil; toss to coat. Spread squash in a baking pan and roast for 20 minutes or until squash is tender and light brown, stirring twice. Remove from oven. Reduce oven heat to 350F. Prepare quinoa. In a large skillet heat butter until melted. Add onions, celery, and carrots; cook until tender, stirring occasionally. Stir in soup, sour cream, wine, and basil. Stir in roasted squash, cooked quinoa, and 3/4 c of cheese. Transfer mixture to an ungreased 3 qt. baking dish. Sprinkle with remaining cheese. Bake, uncovered, for 50 min.

1/2 lb bacon
1/4 cup chopped onion
3/4 cup breadcrumbs
1 cup shredded cheddar cheese
paprika
salt and pepper

Steps:

  • Boil the squash 10 minutes until softened.
  • When cooled enough to handle, remove the stems and cut in half lengthwise.
  • Remove the pulp.
  • Cook the bacon until crisp.
  • Saute the onion in 2T bacon drippings.
  • Add crumbled bacon, breadcrumbs and squash pulp.
  • Fill the squash shells.
  • Top each shell with cheese.
  • Broil until melted.
  • Sprinkle with paprika.

6 medium summer squash, thinly sliced
1 large vidalia onion, thinly sliced
1 tablespoon butter
1/2 cup grated fresh parmesan cheese
1 cup shredded sharp cheddar cheese
1/2 cup sour cream
salt & freshly ground black pepper
1 sleeve cracker, crushed medium to fine (recommended Ritz)

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease a 2-quart casserole dish.
  • Heat the oil in a large skillet over medium heat. Saute the squash, onion, and butter until soft. Drain in colander to get rid of extra moisture.

1/2 cup quinoa
1 cup water
5 large broccoli florets
1 small onion, diced (I like sweet red onion)
1/4 cup breadcrumbs
1/4 cup shredded cheese (cheddar, parmesan, whatever you like)
1 large egg
salt
pepper
olive oil

Steps:

  • First, cook your quinoa according to the directions on the package. I cooked mine by combining 1/2 cup of quinoa with 1 cup of boiling water, then letting it come to a boil, and simmering, covered for about 15 minutes. Once the quinoa has absorbed all the water (this shouldn't take longer than 15 minutes), put it on a plate and let it cool completely.
  • Next, saute your diced onion until it's soft and translucent. Set aside and let cool completely. Cook your broccoli until it has softened a little bit, then let it cool as well. Once the broccoli has cooled completely, dice it into small pieces.
  • Now that you have everything ready, in a large bowl, mix all the ingredients together, leaving the egg until the end. Mix well so you have a smooth, wet mixture that will allow you to make patties that will stick together.
  • Heat some olive oil in a pan, and make your patties. I made each using 1/4 cup of the mixture. Just make a ball out of the mixture, and squash it down a little bit. Cook each patty for about 7 - 8 minutes on each side on medium heat. You want the patty to develop a crust, but not to burn, so watch them carefully. Let cool for a couple of minutes before eating.
  • Enjoy!

1 cup quinoa
1 1/2 cups water
1 cup mixed vegetables
1 teaspoon margarine

Steps:

  • Bake acorn squashes in a 350 degree preheated oven face down in a baking dish filled with about an inch of water for 30 minutes.
  • While squash is baking, add quinoa and water to a saucepan and simmer for 15 minutes.
  • After 15 minutes, remove quinoa from heat and fluff with a fork.
  • Put veggies in a microwave safe dish, sprinkle with water, and cook for 1 minute.
  • Mix veggies, margarine/butter, chili powder and quinoa.

2 small zucchini
1 small yellow squash
1 small onion
1 cup uncooked quinoa
1 tablespoon butter (or you may substitute some canola oil)
1/2 teaspoon chicken bouillon
1 1/2 cups water
1/4 teaspoon freshly cracked pepper (or to taste)
1/4 teaspoon salt (or to taste)

Steps:

  • Dice onion. Peel zucchini. Quarter the zucchini and squash lengthwise, then slice at approx 1 inch intervals to obtain somewhat large chunks. The sizes for the zucchini and squash should be big enough to survive some heat without getting flimsy. We also want them to physically be the star of our dish. The onion has a supporting role in flavor, and should be small enough to blend into the background.
  • Dissolve the chicken bullion into the 1 1/2 cup of water.
  • In a large pan over medium to high heat, begin to sautee the onion, zucchini, and squash using the butter (or oil). When the zucchini and squash just begin to soften, add freshly cracked pepper and salt. Continue cooking for one minute.
  • Add the water/bullion. Add the quinoa. Mix uniformly. Cover pan with a lid. Let the liquid just come to boil, then reduce heat to low. Cook for about 15 minutes, covered and unstirred. Expect all the moisture to be absorbed by the quinoa when it is done. (Quinoa will cook like rice; one cup dry plus two cups wet yields 3 cups.). The squash and zucchini should still be sturdy, but cooked. Otherwise it was sauteed too long at the beginning.
  • Garnish with fresh parsley. Serve with freshly cut tomatoes, or cucumbers. I like to serve this dish with recipezaar recipe # 15580, Grilled Moroccan Chicken, as shown in the photo.
